I think another reason for the white color is due to her past with the jedi order. The color of the saber can be determined or related to a specific characteristic or quality of the maker or current wielder of a blade, like hatred and fear making a saber red or knowledge making a blade yellow. Ahsoka's abandonment of the jedi order or leaving behind the past of the clone wars and jedi altogether could've left her with a sense of independence to the jedi order and others could have made her new lightsabers white due to this never before seen sense of loneliness, independence, or free will.
I cried when Darth Vader found Ahsoka's light sabers because I got to see a little bit of Anakin's past in him
Ahsoka isn't the only user of a white lightsaber, in legends or Cannon. The Imperial Knights from the "Legacy" series of comics (Legends) aren't Jedi, but they are light-side force users, and they use synthetic white blades. In the new High Republic novels, at least one character, Master Jora Malli used a white lightsaber made from a crystal she purified from an ancient Sith weapon. Coincidentally, she was also a Togruta.
As far as the idea that the last season of Clone Wars, the novel Ahsoka, and Tales of the Jedi change each other's story, I prefer to think of it as showing that she falls into a pattern of hiding until she can't help but befriend the locals and reveal her powers to protect them, then moving on to the next hiding place. We see a lot that seems repetitive, but not a lot that directly contradicts.

@@karthikraavi7768 Star Wars is fictional, it's all "lies". Nobody has ever actually purified a Sith's lightsaber crystal. The Legacy comics are comics, which are usually seen as less important to canon than other sources, and they're legends on top of it. Jora Malli is from a recent novel in the current Canon, she's about as official as anything that isn't a show or movie.
I had a white lightsaber in Knights of the Old Republic 2. There was another Jedi who had white lightsaber crystals, but I can’t remember her name.
People seem to forget that during the clone wars Ahsoka travel to the world called Morai. The events that happened there led to her being able to change the crystals to emit the white light.
You do see one other with white I believe. When Anakin is trying to stop Barriss in the Clone Wars season 5 episode 20 at time mark 15:38

I've decided the colour is brought about by her pure heart, her empathy, never giving up until she rights a wrong etc... As opposed to the Jedi's blue which is for obedience to the order without questioning anything. The best Jedis are the ones who thought for themselves.
I think that old jedi from Clone Wars who was helping to Ahsoka to find her lightsaber had also white saber.

The movies would have been very nice with her on it. She has so far in my opinion surpassed the skywalkers as a main character. She is most of the time level headed and calm. I hope in the abeloth saga they would give her more exposure.

Now this directly means that Anakin knew very well that Ahsoka survived the crash of the Tribunal, as a matter of fact he sensed everything that happened to her and Rex when, as Vader, he held Ahsoka's light saber. Let me explain, you see, Ahsoka often used the force power 'psychometry', an ability passed to her from Anakin as part of his knowledge. Anakin also used this power often, as an example he knew Obi Wan had stopped by to talk to Padme on Coruscant. So, Vader became aware that Ahsoka and Rex survived, and what little remained of Anakin must have been proud.
I’m actually more interested in the hilt construction than the white kyber crystals. They are so unique

People say Ahsoka is an embodiment of light, but in my opinion, she represents the duality of man like Jekyll and Hyde. I have my own fanfiction going. Not finish yet.

there is one other jedi who was in the clone wars. in the episode where she lost her lightsaber the jedi who helped her had at least a very pale lightsaber.
Ahsoka needs to somehow be brought into the new movies I know they could day in cannon her species live a few hundred years but not along as yoda

She is part of the jedi order being trained to be a jedi knight... so could be said that she is just the lowest level of jedis... still fights with a saber to fight for peace in the galaxy using the light side of the force.

That being said, acknowledged rank is not the end all and be all, at this stage she may know more than a Jedi Knight or even a Master Jedi, but she does not hold the rank. Purple color saber is the mix of blue(bad stuff) and red, not so good but dare to resist the order and have the own way or style.
Black is meaning the tragedy and chaos, also burden the heavy history. Mandalorian mercenaries and assassinators leader hold this specific saber to be the symbol to lead the race and team.
White symbolize the balance, no matter the light side or dark side on the moment that the guy using. They have experienced the light side and the dark side.
Yellow/gold means the higher class above the Jedi and Sith. The duty is to protect the temple, judgement on the people or force users, and have the right to keep natural, also the evaluation duty.

I can summarize this in two seconds: it’s gonna be some bullshit philosophical reason that Disney made up to promote the groundwork philosophy that they want to share. They want to say that the color white is associated with XYZ philosophy and if your mind is focused on XYZ philosophy and you commune with your crystal then it’ll turn that color. It’s so cheap. Real Star Wars just has a bunch of crystals of different compositions, which may work for a Lightsaber by focusing the energy. And as a result of the different compositions, they might have different colors and effects. While a tuning, it may make the light saber slightly better for you. It doesn’t hurt someone else to use your weapon. People could choose to use whatever color of blade they wanted if they had the necessary materials. But Disney wants to add their own ideas, philosophies and superstitions in Star Wars to make it into something that it never was and never should be. Disney wants to promote their own religion and put their own religion into Star Wars, making Star Wars something completely different and no longer legitimate. People who don’t have a moral loyalty won’t care and will probably accuse me of not wanting new things. I was always happy for everything George Lucas did that was new, because it always was in the same. SPIRIT of Star Wars Disney is in a different spirit and it’s like their Star Wars has a completely different personality. It’s something different in the same way that Star Trek is different. And after we give so much pushback, they try to throw us just enough of a bone so we won’t criticize them anymore, but they’re still pursuing their goal to eliminate everything that came before and wipe it out because the Star Wars came before had a certain righteous and good philosophy. That’s completely different from what we’re getting now. And that’s the real issue. Original Star Wars had a different religious philosophy wouldn’t allow the kind of evil that is to enable and society. If people believe in the old Star Wars, they won’t go along with it. Disney took over Star Wars for propaganda reasons in the modern culture in the real world. If you really wanna know the most unique light saber, it was the Jedi exile with the Veridian blade. But hey, don’t let my knowledge infringe on your ignorance.

Why does she get to be different? Is she “special”? She is not. She is a want-to-be.
She was literally embodied with part of the light of the force from the sister, a God of the force, and trained by the chosen one. That makes her pretty special.
