Pineapple Upside Down Cake Singles

    Pineapple Upside Down Cake is one of the pleasures of life! That said, there are any number of variations on this classic cake. There is some debate about when this cake was created, but it seems to have appeared in printed recipes as early as the mid-1920's when pineapple was considered fairly exotic in most American households!
    In making the cake this time, the idea was to create individual cakes that would be the perfect dessert serving. This was accomplished by using a large muffin tin - well, two actually - as the recipe makes 10 single pineapple upside down cakes. And they are as delicious as they are beautiful!
    1 box of pineapple cake mix (I used Duncan Hines)
    1 tsp. baking powder
    1 tsp. baking soda
    3 large eggs, room temperature
    1 can pineapple slices (20oz) packed in pineapple juice (juice reserved)
    1 cup pineapple juice and water (contents of can plus enough water to make 1 cup)
    1/3 cup vegetable oil
    1 stick of unsalted butter, melted
    1/2 cup brown sugar (loosely packed - you won't need all of it)
    19 maraschino cherries
    You will need two large muffin tins (each one containing six wells)
    Preheat oven to 350 degrees.
    Melt butter in small sauce pan and set aside.
    Open can of pineapple slices and drain juice into measuring cup. Add enough water to make 1 cup of liquid.
    Remove the pineapple slices from the can. Chances are good that they will be a little too big to fit in the bottom of the muffin tin wells, so using kitchen shears or a paring knife, cut out a piece of the ring (between 1/4 and 1/2 inch) so that the ring becomes the right size for the wells when reconnected.
    Place cake mix in large mixing bowl and add pineapple juice/water mixture, baking powder, baking soda, eggs and vegetable oil. Mix until smooth - two minutes or so with an electric mixer. Set aside.
    Place about a tablespoon of butter in 10 of muffin tin wells. With a brush (or clean fingers work fine, also!) smear the melted butter around the inside walls of the well. Sprinkle two loose teaspoons of brown sugar on top of the butter and gently pat down. Place a resized pineapple ring on top of the brown sugar and place a cherry in the middle of the ring.
    Once all the wells are prepared with butter, brown sugar, pineapple rings and cherries, fill them with cake batter until cake batter reaches about 3/4 of the way. You must leave room for the cake batter to rise, which it will when it bakes.
    Place in oven and bake for 18-22 minutes, or until tops are golden brown and they spring back when gently touched. Transfer muffin tins to cooling rack and allow the cakes to cool in the pans for 5 minutes.
    Using the dull side of a small, thin knife (like a paring knife) gently go around the edges of the cakes to make sure they aren't stuck to the pan. Invert pans on to cooling rack AND LEAVE THEM THERE for about 2 minutes. Gently give a tap to each one of the wells. This will help anything that might be stuck to fall into place. Slowly life the muffin tins straight up.
    Allow cakes to cool completely on cooling rack. Enjoy!

    These cakes are delicious! I baked them using your recipe, and they are so tasty! Mine didn't turn out quite as pretty, used too much batter. My dad said they are better than his mother's recipe. They are such a nice dessert for Christmas! Thank you, Kevin for sharing!

    I just made this recipe but used my home canned peaches. Used the light syrup from the peaches in the cake, plus a bit of lemon juice (a tablespoon to add some zip) and topped with the peaches and a few raspberries (ala Melba)- delicious!

    Ok! These were wonderful!!! A big hit at church potluck today! I watched your video as I was making them yesterday. Supply chain issues in my grocery store meant NO sliced ring pineapple. So I did a combination of crushed pineapple and pineapple rid bits! They were delicious! Thank you!

The idea of using these muffin tins for cakes and other things has been around for a long time, but it's something that I wanted to try and I'm glad I finally did.     These look like something I'd buy at a fancy bakery!! Thanks!! You gave us all a great idea for Easter dessert. One time my friend was making a pineapple upside down cake when she realized she didn't have maraschino cherries. She used dried prunes. It was good but not as pretty.

    I need to get myself some oversized muffin tins so I can try this out. A similar shortcut version I remember from my Boy Scout days assembles a similar combination of ingredients on a square of aluminum foil, except it uses an old fashioned (cake) donut in place of using raw cake batter. Wrapped tightly and sat for a few minutes on the coals (usually after steak and potato "foil dinners") they always came out delicious!

    My mom made hers in a cast iron skillet and put a scant sprinkle of cinnamon over the brown sugar and butter which added another dimension of flavor.

      Hi Angie!! I hope all is well with you!! If you like pineapple, you will like these cakes. If you can't find pineapple cake mix you can use a yellow cake mix, just be sure to use the pineapple juice in place of the water - that will give the cake itself some pineapple flavor. Thanks!

    Hi, guys. Your recipe choices always interest me. So. thanks for another one.
    This happens to be my absolute favorite cake. Coincidentally, I made this last week in my 10” cast iron skillet. I make it from scratch, folding in whipped egg whites at the end, but I tell you what, your recipe is very appealing. I’m going to use a mix next time.
    Just as an aside, when they downsized cake mixes years ago, The Cake Mix Doctor recommended adding 7 level tablespoons of flour to the mix. I always do so, because the mixes are too skimpy now. The extra flour makes up the difference.

      Hi Norma! I'll bet that cast iron cake was wonderful - something wonderful about the way the topping and cake bakes in that heavy iron! Thanks so much for the tip about adding flour to the cake mixes. When they downsized from 18oz I wasn't sure what they were taking out, but I could see the difference in the cakes. I'll give this a try next time I use a mix. Thanks so much!

    My grandmother had a push button Kelvinator refrigerator… These look delicious.. I watched a lady make them yesterday and I bought the stuff to make them this coming weekend.     Wow my dad used to make the big cake version of this for dessert on Sunday afternoon dinners in Winter.
    Since getting diabetes, I have to make a keto version of this but with almond and coconut flour it will be good. I can get pineapple flavoring plus monkfruit caramel style brown sugar substitute. Bake with stevia or monkfruit sugar substitute. With unsweetened pineapple and a tiny cherry for looks, it will be a great alternative for us keto and diabetic dessert lovers. It CAN BE DONE!

    I am so happy you made these! I recently made these with the residents at work. We used regular size muffin tins and they came out too ooey gooey at the bottom. We put too much butter and brown sugar at the bottom. We used our new tabletop Oster oven (convection). I didn't make a conversion from regular oven to convection. Anyway, after watching this, I want to try it again with larger muffin tins. Any suggestions for making the conversion for baking? I read to reduce the temp by 25 degrees. Any suggestions are welcome! :)

      Hi Going Slightly Mad! Actually, I have never used a convection oven before, so I don't have any advice about how to convert for baking. I would guess a lower temperature and/or shorter baking time, but I'm sure there are some directions online somewhere. Hope your next batch come out well - thanks!!

    yummmmm!!!!!! as im not a big pine apple lover , i was thinking maybe apple slices ,dont know if you can get them canned, or maybe peaches? i bet blue berry would also be good ,or the frzn wielders fruit mix maybe? thanks for letting me know about the pine apple mix ;];] great job!!!

    Hi, I would like your opinion on if I added a little crushed pineapple in the carmel mixture or adding crushed pineapple to the batter, will it make the cake sink?

      Hi Jennifer - if you use just a little in the topping it shouldn't sink the cake, but I don't know if I would add it to the batter. It might add too much moisture. Thanks!

    I wanted to know if you have ever thought about making a water pie or water pie with Sprite. My grandmother was very good making a water pies. She said you made them during World War II and they started during the Depression then they started out a Sprite later on when it was available. I think that could be something really interesting for you to make. Suggestion and I think Ralph would like a lot your friend in Paris Illinois Mike and miss Patty Cakes

      Hi Beryl! I will have to research water pie - it's something I've never heard of, but I'm sure there are recipes in some of my old cookbooks. If I can find a good recipe for it, I'll give it a try! Hope all is well in Paris!

      @@cavalcadeoffood if you can't find the recipe I can get it for you. I still got it my great-grandmother taught me how to make it. It is excellent. It is really cheap and it was great to make during war times when sugar was rationed and during the Depression. In fact I made one just lately what the help of my friends who could see when everything in the store was so short. It was so delicious I had to make four more for my neighbors

    Could you tell me how do you make those delicious cakes without the Duncan Hines cake mix? The Duncan Hines cake mix is like cheating some and I making my cakes or anything else from scratch. Like the time I made brownies in my 1925 Everhot stove and they came out fine. So when you can give the recipe that would be nice.
