300th Episode - One Bowl Applesauce Cake

    This is our 300th episode of Cavalcade of Food!! It's hard to believe, but 10 years and 300 episodes later here we are!
    It's been a wonderful journey and so much fun meeting our "food friends" from literally all over the world! Thank you for all the comments, suggestions, tips, support, and kindness you have shown over these many years! But most of all thank you for sharing so many wonderful memories that the recipes, appliances and housewares have sparked! That really makes it all so much fun!
    We wanted to make something that represents the spirit of Cavalcade of Food! Something that is easy to make without a lot of fuss, is old-fashioned and inspired from a vintage recipe, and tastes good! We felt this cake hit all those marks!
    One Bowl Applesauce Cake
    2 1/4 cups flour
    1 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1 tsp vanilla
    1 stick (1/2 cup) butter, softened (cut into small pieces)
    1 cup molasses
    1 egg
    1 cup applesauce
    3/4 cup raisin/currents or other dried fruit
    Preheat oven to 350 degrees
    In a large mixing bowl, combine flour, salt, baking soda and cinnamon. Add butter and cut into flour mixture using a pastry blender, two knives or your fingers.
    Add molasses, egg and applesauce. Beat well. Stir in dried fruit.
    Pour batter into a greased and floured 8"x8" baking pan. Bake for 50-60 minutes or until a toothpick inserted into the center of cake comes out clean.
    Cool on rack. Top cake with a dusting of powdered sugar, a cream cheese frosting, or a glaze made with a little lemon juice and powdered sugar.

Molasses in this cake is the deciding factor in my desire to try this. Today I made a fruit cocktail cake topped with choc chips from the 50's. . Don't they refer to this style of cake as a "lunch box cake"? Goes good with coffee. Thanks for the show and for always printing the recipe! Looking forward to many many more shows.

      @@cavalcadeoffood I made the cake today, used unsweetened applesauce, raisins, and added chopped walnuts. Very interesting how there is almost a slight bitterness in the background from the molasses. I actually enjoyed a couple spoons of applesauce with my slice of cake, which I thought was really good. Thanks for sharing 🙂

    Thank you so much for printing the recipe so I can write it down at leisure and watch your preparations unhurriedly. This is going in my oven as soon as I can buy something to replace the molasses. I HATE molasses!! :P

      Hi Heather!! Thank you for being such a longtime food friend!! This recipe yields a cake with a robust molasses flavor, so if you're not a fan you'll need to switch it out for something else. You could swap the 1 cup of molasses for either honey, maple syrup or corn syrup, or use 3/4 cup brown sugar instead. This will also sweeten the cake. Thanks!

    Congratulations on 300 episodes! The cake looks delicious. My dear Southern grandmother would have called it "Lassie Cake." Granny predated the dog Lassie, BTW, by about 40 years. She also called molasses cookies "Lassie Cakes" and she made them now and then. I have her Foley (I think) stainless measuring cup like the one you used here and her Foley square measuring spoons. That measuring cup is also great for cutting out biscuits. And it will last forever.

      Hi Jonathan! I've heard the term "Lassie Cakes" elsewhere, but I didn't know about the molasses connection. I've had a set of those measuring cups for many years and I can see how the one cup size would be a good biscuit cutter! I think I might have a set in coppertone also. Thanks so much!

    I found the measuring cup like the one you used for your molasses a couple weeks ago. I used it for some shortening in a recipe. Thank you for introducing me to that. It’s so nice to squeeze out messy ingredients like shortening and molasses.

    Happy 300! I remember your dear dad Walter from the "Bread and Butter Pickle" episodes, I think he was even behind the camera for a "Granola" episode that took place around Christmas. Very nice tribute.
    My only concern is that Maryann wasn't on hand for this milestone!
    I have been a subscriber for only three years, but I believe that I have seen all 300 episodes! Best of luck!!

    One question, can Apple butter be substituted for the apple sauce?

      Hi Sarah! We are glad to have you among our food friends!! We appreciate the love and send it out to you, too! Yes, I think you could try apple butter instead of applesauce. There is less water in apple butter, so you may need to add a couple tablespoons of water if the batter ends up too thick, but other than that I think it should work. Apple butter would also add a nice sweetness to the cake. Thanks!

    Congratulations Kevin and Ralph!! I love watching your videos. How happy your dad would be that you took his gift and turned it into Cavalcade. Didn't you make pickles with your dad on one of your early episodes? I wrote down this recipe and will be trying it this weekend. I keep molasses in my pantry for making my mom's American chop suey. Did you use sweetened applesauce?

    The cake looks tasty 😀. I recall a pudding desert cake Mom would make in South Dakota summertime- Pistachio Desert. It was a square or rectangular affair, with graham cracker crust, crushed pistachios and cool whip or maybe real cream topping. Mmm!

    I am very new to your channel, and my comment doesn't have to do with this video, but I thought you would have the best chance of seeing it here. On one of your exchange videos I heard you say that a lot of your Frigidaire range clocks are not working. There is a company in Iowa called: General Time Repairs (dot com) that is dedicated to repairing certain types of analog stove clock/timers & they were able to repair my Flair Custom Imperial's.
