    You forgot to say more about the cheese.
    1) It turns see through as it matures
    2) It has extremely low fat, almost all protein
    3) Germans stole it and kept producing it, until the EU law forced them to change the name. (Olmitze twargle)

      I don't think the Germans actually changed the name to homage its origin. I live in Germany and I see 'tvaruzky' here under the name of Harzkäse. Harz is a region in Germany, known for its mountains and ski resorts.

    Další z parádních videií. 😀👍 Nejvíc mě pobavila legenda o vzniku a výrobě tvarůžků. Až zas pojedu přes Loštice kde je vyrábí, musím se stavit v místním muzeu a ukázat jim tohle video, aby věděli jak to doopravdy bylo. 😉

    I grew up eating prdelačka (soup made out of pigs blood), mozeček (fried pigs brain with fried onions and eggs served on bread, tlačenka (boiled pigs internal organ meat which is diced, mixed with soup made out of boiled pigs skins and stuffed into pigs intestine), jitrnice and jelita (same as tlačenka but minced instead of diced and mixed with pigs blood and boiled oats), dršťková (soup made out of cows stomach linings), roadkill hare svíčková with dumplings (served with slice of lemon, whipped cream and cranberries to make it more classy I guess so we could pretend we weren´t eating a carcass my father found in middle of the road), fried rabbit liver with onions on pigs lard, pickled romadůr cheese, olomoucké tvarůžky and so on...., so I would say that Czech cusine is somewhat "different" at least from my point of view. 😅

    Jen, wonderful how you describe this cheese. Luckily the Moravians are not the only folks who love this kind of cheese. In Germany it is called "Harzer Roller" and in Hassia you will find "Handkäs" which is basically the same thing. However (and I can tell that this exists in Czech Republic too from one of the comments below) Handkäs is much liked after it had been given a good swim in Apple Cider and is combined with oil and onion cubes = "Handkäs mit Musik". You eat it by buttering a slice of sourdough rye bread, then you part a piece of the cheese, rest it on the slice of bread, add some onions and take a good bite. Yum.
    If you want to work out your smell sensations a bit more and find out how they hold up in the ranks of smelliness compared to the Moravians, you can go and visit Alsace, particularly the city of Munster. They make Munster cheese. Stinky yet wonderful. And if you want to experience the big stink, you go to a restaurant and order tarte flambee (Flammekueche) with Munster cheese. Don't try this at home, your flat will be cheese infested for a while. But this tastes sooo great 😀

    Great work as always Jen and Team. Olomouc Tvaruzky is like the paradox of cheese for me. Smelly as hell, but actually pleasant when consumed. Even had it on pizza before and it was really good. Thanks for sharing the insights and history and now Olomouc is definitely on my radar. Keep up the awesome work.

    tvarůžky are very good nutritional food. they have so much protein and almost zero fat or carbs. and they are delicious as well

    One correction. Olomouc was never the center of Great Moravia. Great Moravia existed only till 10th century and its center was near Uherské Hradiště called Velehrad. When Olomouc was center of Moravia, Moravia had +- same borders like today.

    This is a great episode. I don't personally love tvarůžky that much but sometimes I get a craving for them and then I have to snack outside.
    My wife is not too happy with anything thoroughly fermented.😅

    Great video as usual. It's true that the tvarůžky stinks, but I like it. It is a gread for diet. It contains almost no fat and sugar, but a lot of protein.

    Jen, you say Czechs aren't adventurous, but many Americans certainly aren't either. Just look at the lines of American tourists outside of McDonalds in Prague.
    Ironically, you mention tlacenka as if it's alien, but traditional butcher shops in the US sell it. Even Boar's Head has head cheese as part of their brand.
    If you'd said Czechs can't handle hot and spicy, I'd certainly agree with you there!
    Go to U Bansethu and order their deep fried tvaruzky. It gets rid of the odor and goes great with their beer.

    You should definitelly try cook them.. Yes. Prepare butter, onion, red paprika, tvaruzky and black beer. Fry gently onion on butter (glass like), then put tvaruzky there, sprinkle with paprika and salt if needed, add black beer, sink them half. Boil slowly till lava consistency. Eat this tohether w' fresh czech bread. The taste is absolutelly fantastic, but ...
    DO IT OUTSIDE !!!
    Violation of this rule usually means window curtain change at least (learned hard way)

    Some people can´t even smell Olomoucké syrečký (Olomouc Cheese), but then there are also some people, like me, who are able occasionaly even eat them alone, without bread and butter and salt as people use to eat them ..

    I don't like them either, but they are sometimes very helpful. Here is a story from my childhood. I was allowed to visit my emigrated relatives in Germany as a privileged person during totality. The train ride was very long and not very comfortable. The trip from Prague to Münster took about 18 hours, with a two-hour stop at the border, where we had to present all the papers, and another 2 to 3 hours waiting in Nuremberg for the connecting train. And since it was almost impossible to get a continuous reservation at that time, it was always very helpful to have a packet of Olomoucké tvarůžky with you and then unpack them with relish. Seats became available very quickly. I think Germans don't like them.

    Hi Jen, thanks for the great video! That's amazing that you managed to visit this festival! My family is from Prague, but I study in Olomouc, and your video makes me miss Olomouc so much (I'm currently on a study exchange abroad). Just want to point something out, the traditional place where tvarůžky are made is actually Loštice, a small town not far from Olomouc. From what I've heard, tvarůžky became known as "Olomoucké" thanks to the markets in Olomouc where they were sold. You can even find tvarůžkové muzeum in Loštice, or "tvarůžková cukrárna". Their ice cream is... well... very special. If you ever find yourself heading to Olomouc again, you can take a look there, it's on the way from Prague.

    Hi Jen, thanks a lot for another wonderful video! 👍 Just a little piece of info for you as a person who lives in Prague. Many people in Prague wouldn't understand what you are looking for if you mentioned "tvargle". Also, just a few people call the smelly pieces of cheese by their official name "Olomoucké tvarůžky" when they eat them. We typically call them SYREČKY. 🙂 A slice of a dark bread and butter, pieces of SYREČKY on top, and a glass of beer with it makes a wonderful dinner! 👍

    I assume you can buy "tlacenka" in Austria and Germany too. And maybe even in France. France has many strange foods, like snails or hot beef bones... You can buy food similar to "tlacenka" even in america, it is called "head cheese", I never tried that but Mr. Google knows about it... ;-)

    PS: If you would go to Olomouc for the second time I would recommend you to travel by train. The trip Prague-Olomouc is 2x faster and 2x more comfortable on board of train compared to the car😉 Especially when you chose dining car of Pendolino (SuperCity) express.

    Fun fact: you actually don't need a receipt to get a refund! By law merchants have to accept returns even without a receipt as long as you have actually bought your goods there. And while a receipt makes it clear cut you can use any other proof (like card statement) or even just a "pinky promise" (on paper) stating that you did truly buy the product there. Which they might not be willing to accept, but it is supposed to suffice.
    Not sure about returning goods that spoil easily; that's exempt I think unless there was something obviously wrong with it? Not sure. But most shops would likely allow you the return just to get you off their backs, lol.

    I first tasted tvaruzky over 30 years ago, when it had a stronger smell, and I loved it. Back in the USA we had Limburger cheese, made in Wisconson.

    Hi Jen, the Old Quibbler at your service once again! ;) There is a reason why Můstek metro entry smells bad - for about 8 centuries, Můstek was the gateway to the city (you still can see the bridge exposed in the entrance lobby of the metro) and a moat ran across it - that's why the adjacent street is called Příkopy (it's literally Prague's Wall Street). The moat was regularly used as a sewer, so there was "human gold" deposited in layers over several centuries - then when they dug the entrance to the subway through it, the "smell" started to be released. They tried to do something about it, but nothing worked - the smell is part of Prague's history, it is hundreds of years old and has every right to stink with us! :D
    By the way, the Swedish thing is a good point too. The deadliest catastrophe in Swedish history was the plague epidemic in 1350 - 250-500.000 dead (nobody knows for sure). The deadliest disaster in the history of the Czechlands was - the Swedes! Although they were not alone (the Austrians and Saxons also contributed), during the 30-years war it was the Swedes who occupied our territory for two decades, and it was mostly them who reduced Czech population from about 4 million to just over 1 million and practically depopulated Silesia and also Moravia north from Brno and all Bohemia east from Frýdlant. To get USA to a similar percentage today, U.S. would have to lose at least 200 million people and would have to depopulate from Montana to Maine and from North Dakota to Georgia...

    Actually it's made in Loštice, like ~30km from Olomouc (on way to/from Prague via D11), they have museum there and company store (there are three others in Ostrava, Olomouc & Brno, so just at Moravia :) ) with wide range of goods which you can't get at usual supermarket :)

    Na videu byli vidět pečené makrele, okoštovali jste? V Čechách jsou na poutích a slavnostech vidět nejčastěji klobásy ,ale na Moravě zvláště na Hané to jsou grilované makrely , doporučuji ochutnat.😀

    I didn't know Tvarůžky yet, maybe due to the fact, my wife hates it... But it seems like what we call in Germany (officially) Handkäse = hand cheese, depending on the region also Stinkekäse = stinky cheese. But in my opinion, at least the German version is still quite mild, compared to many other cheeses after the "best before date" (It's only relevant for sale, but often even on the label is written, what the cheese will be as the best before date as a reference.) Maybe you're lucky and can get it in a Kaufland to taste. As I know from cocunut oil in a Prague Kaufland, they don't have it around normally, but can be ordered by the information over the central warehouse and Kaufland is a German chain and in the German branches they definitely have several of it.
    Me and my daughter will definitely look for / buy Tvarůžky, when we're in ČR next week! Even my wife / her mother will hate us for that... 🙈 By the way, she's from Brno and wasn't most of her life "that far away" from Olomouc.. 🙈

      Put them in an airtight container both for travel and for storage. Trust me.
      Also, they are softer and tastier closer to the best before date.

    I love syrečky! The best is to put there in a jar, and let them ripened for a few days. When they a ripened and not cold right from the fridge they taste the best!!! Trust me! I love both of you, thanks for your videos, I love them 😂

      And for super adventurous put them in jar with chopped onions and cover it with beer (you may want to stir the beer first to remove as much bubbles as possible, but that is up to you.). Then add layer of oil (or lard) and store in dark and cold place for a week.
      Oh, and open it outside, often this is quite strong.

    Já sice tvarůžky nejím (hlavně proto, že mi jejich chuť zkrátka nikdy nesedla), ale v porovnání s některými třeba francouzskými sýry tvarůžky voní jako jasmín :-))) Údajně jsou velice zdravé a mají nízký obsah tuku. P.S.: Tlačenka je super, obzvláště krvavá varianta (a jelítka, mňam ... a PRDELAČKA rulez

    Great video! Hákarl is Icelandic, not Greenlandic by the way. It is made of greenland shark and it stinks strongly of amonia because (those) sharks don't pee. All the amonia is stored in their meat and it is, therefore, poisonous fresh. To make it safe to eat, it must be fermented et voilà you have hákarl. As a Czech, I was brave enough to eat the shark but NOT tvarůžky :D

    Olomoucké tvarůžky is greatest diet food. I recommend that to everyone. Very low fat content and extremely high protein is from nutrition point of view one of the best foods you can find.

    BTW, the stinky cheese has, of course, nothing common with the farmer's feet, but it's smelly because it's done "pod mazem" (to understand the chemistry of this procedure is the first task for you, to find out the right and proper translation of it, the second one 😆). The same way is used for Romadur, for example, and in Germany for dozens of local cheeses, from which e.g. the Limburger is similar to Romadur and the cheeses like tvarůžky they call e.g. Handkäse. In south Germany and Austria is a spread made partly of the stinky cheeses - Obatzter - quite popular. But the Czech cheeses are in this regard better. Nevertheless tvarůžky again - ask your friends what is the other meaning of "kunda" (hardcore delicacy) and how to prepare deep fried tvarůžky (yum yum).

      Kdysi dávno, před asi padesáti lety, jsem udělal smaženě tvarůžky a byl jsem potom proklínán aspoň tři týdny. V rozích ten smrad stále dřepěl a nedal se vyhnat. Být to v zimě, dřepěl by tam půl roku.

    Coincidentally...
    As a non-lover of tvarůžky, who sometimes eats them, I say that Romadur (Belgian) smells much more. Plus, it has an over-salted taste.
    (When you were in Olomouc, I hope you also bought the tvarůžky directly from the producer there, they don't contain preservatives, so you can let them " age" like the original ones, that ones, thats are in video, dont "age" as well (minimaly)

    Actually tvarůžky aren't from Olomouc (even when it says it is), it's from Loštice in Šumperk region.

      A) Šumperk is in Olomoucký kraj, isn't it? B) Loštice are as far from Olomouc as from Šumperk (32 km), but it takes around 23 minutes from Loštice to Olomouc, whilst 28 minutes to Šumperk. Sooooo you were saying?

      @@moniqueriddle9339 Ale Kraj a okres je rozdíl. Nehledě na to, že by to tedy neměly být Olomoucké tvarůžky, ale Loštické. A na vzdálenosti od města nezáleží. Prostě název Olomoucké je zavádějící, protože to není ani z Olomouce, ani z Olomouckého regionu. Je to to samá, jako tvrdit, že Štramberské uši jsou z Ostravy.

    Jen, olomoucké tvarůžky mají být v lednici, a optimální je přenášet je (i skladovat) ve dvou igelitových pytlících. Výrazně to sníží pachový přenos na tašku, oblečení, nebo ruce. Jsou velmi chutné, doporučuji je jíst s houskami nakrájenými na polovic a namazanými máslem a zapíjet je buď mlékem, nebo pivem. Alternativou by byla topinka. Pro začátečníky - SAMOZŘEJMĚ, že se obalu dotýkáme co nejméně a jídlo konzumujeme s využitím talíře a příboru.

      Souhlasím skoro se vším kromě té housky, to mi přijde jako divná kombinace :o). Pro mě jedině chleba. Namazat máslem, na to na kolečka cibuli, tvarůžek, kdo má rád ostré tak kousky feferonky a jemně poprášit sladkou paprikou.

    Díky za pobavení! 🤣🤣 Já sám syrečky nemusím, ale bez větších problémů snesu, když je někdo konzumuje v mé blízkosti - "díky" chronické sinusitidě jsem skoro ztratil čich 😜Ale jedna kamarádka se mi svěřila že jí moc chutnají, ale než je vybalí tak si musí nasadit na nos kolíček na prádlo 😋

    Great work on your channel!!!Everyone's intestines are made for different stuff. I crave sea food, squid and kelp. My mother rolls her eyes. She eats pasta all the time, which would kill me as wheat intolerant. One thing about SYREČKY is, they are low fat! It is my diet food...

    It doesn’t smell that bad, it’s actually kinda pleasant. Fun fact: the *exact* same cheese is traditionally produced in German city of Darmstadt - even people from Olomouc usually don’t know this.

    My grandfather and my mom have always loved these so we had a tightly closed glass jar from the pickles with them in the fridge almost all the time 🤣 I must admit I never found enough courage to try and eat them myself though.

      The explanation of the Můstek odour is actually pretty natural. The Wenceslas square was a horse market in the medieval times. What you can smell at Můstek is actually the smell of centuries-old horse excrements. To me, it helps to know that it's not a leaking public WC. 🙂

    There are far stinkier cheeses out there than Olomoucké tvarůžky.
    Also try them fried. Just don't try to fry them at home.
    Also with Můstek and the smell. only the escalator on the lower end of Mustek station smells like vomit. ever since the 2002 floods. No idea why, but it seems persistent.
    Also how does one get to at food that seems off? Famines were pretty common, you know ;)

    By the way: Back in time, in Silesia (in German called Schlesien) the people were in fact, other than the Czechs, quite German, thus it had always been a completely different mentality than in Bohemia and Moravia. (What obviously and definitely lead to problems, back in the 1930's and 40's...)

    The Czech weapon of mass destruction 😀My granddad used to love them, I still remember the smell when I was a little boy and went to his place. Chinese stinky tofu comes close...I'm looking forward to trying surströmming and hákarl one day just for the fun of it and to be able to compare. Durian is also on the list.

      Durian smell is stronger than smell of tvaruzky. But both are delicious
