Bifana Showdown: Porto vs Lisbon BIFANA!! Portuguese Pork Sandwich

    Portuguese Pork Sandwich / Befana Recipe | Porto vs Lisbon version
    Servings: 4
    Time: 1 hour 20 minutes
    Special equipment: None
    THE FRIED EDITION:
    400g pork cutlets
    2 cups white wine
    4 bay leaves
    Whole garlic
    Sweet paprika
    White pepper
    1 tbsp salt.
    50 ml olive oil
    Two tbsp salted butter
    Two tbsp ghee or lard
    4 tbsp sweet mustard
    4 bread roll, preferably Papo Seco (Portuguese bread roll)
    HOW IT IS COOKING:
    1) Cut off the fat from your pork cutlet if it has a thick layer of fat.
    2) Then cut the cutlets into thin slices of ½ a centimeter / ⅓ of an inch.
    3) In a large bowl ad white wine paprika and sea salt.
    4) Take a whole garlic and divide it into two. Cut it so the gloves are divided in the middle.
    5) Add the pork cutlets and massage the marinade into the meat for a couple of minutes.
    6) Let the meat sit in the marinade for 1 hour. If you have the time you can even marinade the pork in the morning and let it sit all day in the fridge as that makes the meat even more tender.
    7) Now to the frying. Make sure to save the marinade from the pork as we need it for the sauce.
    8) Bring a pan up to medium heat. Add in the butter, ghee and olive oil. Now fry the cutlets in the pan. It has to appear as if you are actually steaming or boiling the pork in the fat.
    When the pork is almost done add half of the mustard (2 tbsp) and a bit of the marinade to the pan.
    9) Divide the bread roll and add some of the sauce from the pan on both sides before adding the cutlets.
    10) Now eat this delicious Bifana with some additional mustard to your own taste and a cold beer.
    THE BOILED EDITION:
    400g pork cutlets
    50 ml olive oil
    1 tbsp ghee or lard
    1 tbsp butter
    1 large onion
    4 bay leaves
    4 cloves garlic
    1l beer (Pilsner)
    250 ml tomato sauce
    50 ml water
    1 teaspoon cinnamon
    1 tbsp sweet paprika
    1 tbsp white pepper
    1 tbsp salt.
    Piri piri
    4 bread roll, preferably Papo Seco (Portuguese bread roll)
    1) Start with making sure that your pork cutlets are very thinly sliced. The best way is to use a super sharp knife and cut the meat horizontally on a cutting board.
    2) Peel onion and cut it into thin slices.
    3) Peel garlic cloves and smash them.
    4) In a large pot with olive oil, ghee and butter, once it's melted together add onion and fry until the onion is soft.
    5) Then add garlic and tomato sauce and stir until it starts boiling up a bit and then add the beer.
    6) Stir in the spices and bay leaves and bring it up to a simmer.
    7) Now put the pork in the pot one slice after another and stir it around.
    8) Let it simmer for 30 minutes under a lid that only covers half of the pot.
    9) Taste the dish and make sure that it has the salt and peber balance.
    10) Open the bread rolls and add the pork. Remember to add extra sauce and if you wish, also some spicy piri piri.
    11) Enjoy with a cold beer!

      Hey Amelia and Joen, a quick tip from one of your viewers. I think you should rethink the titles a bit, the main subject of this video comes at the end ("Bifana"). Maybe be more clear what the theme of the video his, and then what you will do in it. For example: "Bifana Cooking Showdown: Porto vs Lisbon". I was reading the title and only the last word made me really know what it was about, and it should be the main keyword for people looking for it :)

    Even though I'm on keto (Joen), I can attest to the fact that it was absolutely amazing although I only had one bite of each. My favorite was the Lisbon bifana! The sauce was unbelievable!

      When you mention Keto diet I always remember Bruce Lee...in early years of his career he was Kato in Green Hornet show...so to lose weight it’s an inspiration to remember Bruce Lee...the guy was amazing he worked his body like a machine...it’s like 70% power of will and 30% hard exercise...nutrition is also very important but only to fuel the body for exercise, without that you don’t see results, it’s a waste of time!

    Hi! We just came back from Portugal visiting Lisbon, Fatima, Cascais and Porto. We brought Portugal to Manila by preparing a Portuguese feast on Mother’s Day last Sunday.     Good video. Never seen a Danish cook doing and enjoy portuguese "street food". In Portugal there are many ways of doing bifanas and other food. Porto bifanas comes also in small and tiny slices of pork like kebab and very spice ..for drinking many beer´s. Like your new channel. Keep on

    Ok made fried version last night. I used pork tenderloin cut thin then pounded with a meat tenderizer and let marinade for 5-6 hrs. I fried up an onion then removed from pan and fried the meat. Meat once done was removed from pan then added the excess marinade to the pan and also added a small can of diced tomatoes w/green chiles and some hot sauce. Put all ingredients in the pan then made sandwiches using bulkie rolls with a dab of yellow mustard and dijon. IT WAS AWESOME!!! When I make again I will leave out the can of diced tomatoes didnt really add anything but terrific flavor with your marinade!!!

    As a 62 years old portuguese let me say that the best thing to serve with bifanas, Lisbon or Porto version, is a nice cold bear. The chip fries are a very recent adicion. They are not needed.

    There's a different way we do it in Lisbon, which is also with thin slices and boiled in the marinara, for example if you ever went to Beira Gare next to Rossio you see what I mean. They always have a huge pan with a constantly simmering molho. To me that's the best way because then the bifanas get really really tender.

      They are really half fried half boiled that sauce has so much oil it counts as both, the trick is that sauce gets better the more bifanas go in there because it will get all the juices of the meat

    I forgot to add the way I do it from sao miguel azores I marinate the meat night before olive oil piri piri paparika pepper pimenta ginger and garlic powder and just fry it the next day taste amazing in a papseco kaiser

    I make my bifanas in a marinade of lots of white wine, lots of garlic, piripiri-chillies chilipowder and laurelleafs. Let it rest voor half a day or a night. Then I grill them for a minute in lots of butter or porc fat. I add the marinade and let it boil a few minutes in the frigideira. Put it in a carcaça with some musterdsauce and some extra piripirisauce. Yummie! Btw the pinacle of bifanamaking is in Vendas Novas.

      Bifana de Vendas Novas is indeed equally amazing. I wouldn't call it better, just different though.

      It's more or less like this I think: You have frango assado and you have frango assado da Guia, you have pasteis de nata and you have pasteis de Belem. You have bifanas and you have bifanas de Vendas Novas. Not neceseraly better (oftenly it is, question of taste), but it's always the 'special version'.

      @@TheLexy131313 I get what you're saying, but in the case of Bifanas, they're just totally different recipes. Pastel de Belém and Pastel de Nata is still pretty much the same. Same with Frango da Guia. But a Bifana de Vendas novas is completely unique compared to others.

    My favourits are the fried ones, Lisbon style as you call them, cutted very thin, with smashed garlic in the marinade to release more flavour and fried in lard/pork fat. But there are good bifanas all over the country. Congrats for the vídeo 👍❤🇵🇹🇩🇰

    You need. To boil the Marinade for a at least 1 minute to kill the bacteria from pork and I suggest reduce the wine marinade in half to cook out the alcohol it's called a reduction sauce all your left is with flavour of the marinade

    Meu dues,I was born in Madeira and have been in Australia for the last 52 years and yet I didn’t see a galo de barceillos in your kitchen, I have one in mine, and yes the food at the stadiums here is also bad.

    Those stick crisps are a serious addiction problem. Pingo Doce own brand ones... I must have eaten 1000 packets when I lived in Lisbon for a year.

    I LOVE Portuguese food, but have never had a bifana I liked!! Totally me...Just not my thing!!!

      I actually haven’t been a fan of bifanas either. But the Porto one is definitely not like what I “expected” a bifana to be like. So maybe you’ll like that variety ❤️
