I like washing greens in a big bowl of water a handful or two at a time. Throw the greens in, agitate them, and let things settle for a moment. This way the dirt and sand easily fall away and sink to the bottom of the bowl. I find it more thorough and less cumbersome than trying to handle a mass of greens in a colander.

  • @lisasteinbacher6511

I made this recipe Friday night for Saturday, and it was wonderful! So flavorful, I used frozen spinach that I let defrost and used the boiled tofu method that I added to the sauce a few minutes before serving. I skipped on the coconut milk because we liked the flavor as it was, and surprisingly it was pretty creamy even without it. I didn't have any fresh cilantro but am sure that would have made it even tastier. Last week after trying her red lentil curry I thought it would be hard to find a recipe that topped that, and although very different in flavor, this recipe might be even better in my opinion. I hope to try adding mint to this recipe sometime to hopefully mimic one of our local Indian restaurants take. Excellent recipe🏅!!!

A video on peppers and how to use them, which ones to use when would be great. I think there are many people who are unfamiliar with peppers and so if you have some experience with them it might be a unique and popular video for all us newbie vegans who are attempting to make dishes for the first time using peppers, whether it be Indian, Asian, Mexican, foods, etc.

I use a grow rack I built in my kitchen to grow microgreens and also med-sized mustard greens (the latter mostly for stirfry but occasionally for/in sarson saag paneer or palak paneer). I always blend some mustard greens into the spinach for dishes like that ... I find it adds some pleasing vibrancy, lightness and brightness, and compliments the mustard oil notes better (if youre making it punjabi style).
The creamed cashews as a thickener and enrichment are a nice touch that I use too ... butter alone can make things seem oily.

I saw this recipe on the blog previously but it didn't appeal to me because it looked very pesto-esque and I am not a pesto person, but after watching this video today I decided to make it tonight. I cannot describe how far it exceeded my expectations. I've made around 6 of the main course recipes off your website and every time I'm blown away by how insanely good they are. They aren't "quick and simple" but they are all technically easy, and the outcome never ceases to impress me. Really appreciate your content and I think I'm going to go buy your cookbook right now ❤️

I really enjoy your recipes because you are using spices that I actually have at home. Most other Indian food recipes I tried have so many spices that you only need very little quantities of and I don't feel like buying all of that for the few times that I cook an Indian dish at home. I tried your lentil curry today and it was a success! I will try this palak paneer next. Excited how it'll turn out!

The first time I made palak paneer, I actually had to use tofu because I couldn't find paneer and didn't know how to make my own, so it was accidentally vegan! I also coated my tofu in turmeric and lightly fried it in vegetable oil. Came out so good 👍🏽

I love this recipe so much, i've made it 3 times in the last week. And my wife and two kids (6 and 8) also love it--it's hard to make something Indian that all 4 of us like equally for some reason--too spicy, too gingery, whatever...i go with the boiled tofu option, and i don't use any oil--doesn't need it. Really looking forward to cooking more of your recipes.

  • @augustaseptemberova5664

I'm new to your channel, so I don't know, if you've already tried this: you can make vegan paneer:
Heat 1 L of cheap soy milk to a boil (cheap = the one that builds sediment on the floor of the container), then add a tsp of salt and curdle it with the juice of one lemon. Turn off the heat. Let curdle until the water has room temperature. Then filter the curd with a cheese cloth or kitchen towel. Shape/press it into paneer, and fold in spices+herbs or dried fruit+nuts as you see fit. Leave the paneer in the fridge for at least one night to solidify the shape/texture.
With this, you're basically making a tofu, which due to the salt and the excess of lemon acid gets a very paneer-like taste and texture.
The curd also makes a great base for cream cheeses of all sorts, if you blend it with a nut butter or some oil to get a creamy texture. Then you can add garlic, herbs (dill, chives, parsley) to your heart's content - it's delicious on bagels with hearty add-ons. The curd with only nut-butter (and no spices) makes a great cream cheese for cheese cakes.
