Lilikoi Shortbread Cheesecake | Light, Smooth And Creamy

    Lilikoi or passion fruit grows on a vine and produces golf ball sized yellow fruit with a thick rind. Inside are hundreds of sacs containing juice and seeds. The bright yellow juice is sieved and used to make the luscious topping for this cheesecake. Many people outside of Hawaii have never heard of this fruit or tasted anything made with the juice. This is only one example of what you can do with lilikoi. It is truly delicious and mouthwatering.

    Omg I have to make this! My grandpa in Hawaii makes sure he had lilikoi juice every morning for the family! Can’t wait to make it! Believe me I smash the like button, nearly crack phone!😅

    I like mine on the tart side! I remember renting an AirBNB in Anaheim, California and there was a passion fruit tree full of fruits! I was in heaven!

      Try going on line with Target or Walmart and order guava nectar or Passion fruit juice and ship to store.The guava or Passion fruit nectar in can should work. Just need to thicken it.

    I TRIED THE GUAVA VERSION, USED THE MEADOW GOLD GUAVA NECTAR IN THE CARTON, DID NOT ADD NO ADDITIONAL SUGAR OR WATER FOR TOPPING, IT CAME OUT GREAT,WAS A HIT AT MY HOME,CANT WAIT TO TRY THE LILIKOI VERSION, THANKS FOR THIS RECIPE IT IS NOW A FAVORITE GO TO DESERT!

    Miss Lenora, your recipes are fantastic and I would love to try them all BUT I am trying to control high blood pressure and cholesterol intake. If it all possible while demonstrating your favorite recipes throwing out substitutes would be gratefully appreciated yours truly and if I was not married already 😉 one of your biggest fans.       Yes, I understand. Omit or lessen the salt. Duck and lamb are high in cholesterol. Anything that tastes good is usually bad for our health. My son and grandson work out a lot and they eat only the whites of eggs and sometimes only one yolk. it takes time to get adjusted. Use lemon, herbs and spices. Pork is high in cholesterol but you can substitute chicken without the skin or fish. Try to remove fat from meats. Eat only small portions just to taste and give away the rest. Don't leave leftovers in the fridge or kitchen or you will be tempted to eat it. Use smaller plates and only eat about 3 oz of meats and lots of veggies. It is difficult but it takes perseverance. Try to avoid carbs, especially rice, potatoes and bread. You can do it.

      @@HawaiisPickleLady I am finding I am eating a lot more fish nowadays. I make a batch of rice in my steam and separate it into portions then when I'm ready, I warm up rice throw-in capered hearing or sardines or both. The fish have a nice sweet taste that goes very well with rice. Not only that, but I am the type of person who could eat rice 7 days a week and never get tired of it. Once again, thank you for your recipes and your advice always looking forward to a new video.... friends forever, Jeff

    I second Leonora, lilikoi is the best in any form. Thank you for sharing your recipe. My kids (both now are adults) expects me to bring home lilikoi pie everytime i come to Hawaii. The sad part is sometimes it’s not available, is it seasonal? Mahalo❤️

      Probably best in summer. But hard to get unless you know someone with vines and it's so time consuming. If you go to the Mexican stores, they have all kinds of frozen fruit juices without seeds or sugar. 14 oz frozen bag is 3.89 and that's what I use. Try the pie and butter recipes of mine.

      Sorry, there is no substitute for Lilikoi. The flavor is tart and sweet. Try making the guava one . Kerns has guava juice in cans. Are there any Mexican stores. The ones here carry pure frozen pulp and it's good. That's how we got the juice..

    Looks wonderful! If I use fresh lilikoi juice, how much will I need? Will it still have to be diluted?
    I also tried making the guave cheese cake and used Meadow Gold Guava Nectar (comes in a carton). The consistency was perfect and the flavor was great.

    Can you make it in a ready made pie crust and what would the measurements be (standard size pie crust)- looks delicious

      Yes, you could do a ready made crust. Don't know how many pies you can make. Just experiment.

    Do you buy the Goya passion fruit pulp from an Asian grocery store or a Mexican grocery store? If you use the Hawaii's Own juice concentrate, do you make the juice first (the concentrate from the can plus 3 cans of water) and then measure out 2 cups of lilikoi juice? Then add the sugar and bring it to a boil and add the cornstarch mixture until thickened?

      The pulp came from a Mexican store. The juice concentrate is not pure concentrate so you have to experiment.

    The recipe says to bake crust at 425. In this video it is 325. The recipe says 1/4 c corn starch to 2 Tablespoons water, the video says 1/2 cup water. 🙂 Also, I'm using fresh lilikoi juice, strained from the fruit, do I use 2 cups of this to 2 cups of water? Thanks

      Sorry about the mix up. I used another recipe when typing and had to go back to Gigi's recipe. I've corrected it so look at the recipe. Only thing is the baking time for the crust is 425 degrees for 15 minutes. She says 1 cup of pure lilikoi juice to 3 cups of water. Hope this works for you. Aloha.

    Did not find passion fruit pulp from Goya yet here in hawaii I want to make the guava flavor, in your directions u you say to add 1/4 cup sugar to nectar from carton or frozen concentrate,the guava nectar here-meadow gold brand already has high fructose corn syrup and sugar added do i still need to add sugar for the topping?

      Sometimes they sell lilikoi in Chinatown, but kinda pricey. Try it and see how it is. Main thing is the cornstarch so you can lessen the sugar.
