BANH BOT LOC - VIETNAMESE CLEAR/TAPIOCA DUMPLINGS

  • Ever country has it own unique and tasty dumplings. Whether it's savory or sweet, for example Japan has gyoza, Poland has perogies, Italy has ravioli, well in Vietnam we have banh bot loc. It's tapioca or clear dumplings that are fill with pork, shrimps and are eating with the irresistible fish sauce dipping. I love making this dumplings 'cause every time I make it, my 11 years daughter always love to help out.
    INGREDIENTS
    FOR THE FILLING
    MARINATE THE PORK
    440g pork belly, cut into small pieces
    2 tablespoon garlic, chopped
    1 tablespoon fish sauce
    1 teaspoon sugar
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    MARINATE THE SHRIMPS
    400g shrimps, peel, deveined and cut into small pieces
    2 tablespoon garlic, chopped
    1 tablespoon fish sauce
    1 teaspoon sugar
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    TO COOK THE FILLING
    2 teaspoon vegetable oil
    2 tablespoon garlic, chopped
    FOR THE ANNATTO OIL
    1 teaspoon annatoo seeds
    2 teaspoon oil
    FOR THE DOUGH
    400g tapioca starch
    1 teaspoon salt
    1 cup boiling water
    FOR THE GREEN ONION OIL
    6-8 green onion
    1/2 teaspoon salt
    3 tablespoons vegetable oil

    Tks for the great vid, M-Mui I have a question. When making the filling for this dish, I am wandering why you fry it and not just keep it raw and steam the whole dumpling when you decide to prepare it? Is it optional would it taste better if so?
