Understanding the Soulful Mexican Cooking of Oaxaca | Food Skills

  • Too often Mexican cuisine is reduced solely to tacos and burritos. The country is full of rich culinary traditions, and nowhere is that more apparent than Oaxaca. At Guelaguetza-the legendary Mexican restaurant in Los Angeles' Koreatown-Oaxacan tlayudas and mole take centerstage. Topped with meat, cheese, and salty, chicharrón-like asiento, tlayudas have a role in Oaxacan cuisine that far exceeds their reputation as "Mexican pizza." Mole-the rich, spice-and-pepper-packed sauce of the region-is used to to drench the tlayudas, as well as chicken, enchiladas, and any other foodstuff within arm's reach. Helmed by second-generation owner Bricia Lopez, Guelaguetza is a bucket-list destination for anyone looking to experience the culture of Oaxaca and L.A. at the same time.

    Oaxacan food is such a tapestry of flavors. I went to a restaurant in Austin, TX and I wind up getting two tlayudas. And the coloradito mole is great on everything savory. The plantains make the sauce! *And I'm hungry!*

      How do you compare it to San Diego Mexican food... If you've ever tried. San Diego mex you get great flavor and dirt cheapo unless you seek to waste your cash on over priced places.
      And expensive places theirs taste like el crapo.

      You genuinely believe what you just typed? Mexican food is way greasy, not that it's not delicious (it is some of the best food in the world) but healthy no way.

    • @AlexaAXAG

      Iron Mountain *Fat is not unhealthy in the way you think it is* sugar is.. reeeee
      Have you heard about napkins btw 🤔

    • @ironmountain7907
      @ironmountain7907 Před 6 lety

      You're probably the kind of person that pats their pizza down with a napkin...SMH, I enjoy the fat but not all fats are equal in nutritional value. But yes you're right there are several studies that point out the benefits of cholesterol in fats for hormone production.

    • @AlexaAXAG
      @AlexaAXAG Před 6 lety +2

      Iron Mountain no I'm not...
      You're the one that mentioned greasy foods so I made that joke, anyways.
      Most Mexican food is cooked with normal cooking vegetable oil nowadays, which may be more unhealthy than the "Manteca de puerco" that people used back in the day.
      And the fact that most Mexican foods use a lot of vegetables and beans makes it incredibly healthy, the meat is a luxury so not everyone eats them often.

    • @ironmountain7907
      @ironmountain7907 Před 6 lety

      Sorry, I wasn't trying to be rude, and I mean we could debate about nutrition until we're both blue in the face but I lived in San Diego & frequented TJ for a ton of years and the food trucks & even local foods (friends moms who cooked traditional) just don't prepare thier food totally healthy. They make the food taste delicious with all that salt and frijoles and Asada and grease, but again not healthy. But you're right back in the old days when we we're relient on grocerey stores to get our cooking oils the food was probably a lot healthy and non processed.
