Oaxacan food is such a tapestry of flavors. I went to a restaurant in Austin, TX and I wind up getting two tlayudas. And the coloradito mole is great on everything savory. The plantains make the sauce! *And I'm hungry!*

How do you compare it to San Diego Mexican food... If you've ever tried. San Diego mex you get great flavor and dirt cheapo unless you seek to waste your cash on over priced places.
And expensive places theirs taste like el crapo.

You're probably the kind of person that pats their pizza down with a napkin...SMH, I enjoy the fat but not all fats are equal in nutritional value. But yes you're right there are several studies that point out the benefits of cholesterol in fats for hormone production.

Most Mexican food is cooked with normal cooking vegetable oil nowadays, which may be more unhealthy than the "Manteca de puerco" that people used back in the day.
And the fact that most Mexican foods use a lot of vegetables and beans makes it incredibly healthy, the meat is a luxury so not everyone eats them often.
Sorry, I wasn't trying to be rude, and I mean we could debate about nutrition until we're both blue in the face but I lived in San Diego & frequented TJ for a ton of years and the food trucks & even local foods (friends moms who cooked traditional) just don't prepare thier food totally healthy. They make the food taste delicious with all that salt and frijoles and Asada and grease, but again not healthy. But you're right back in the old days when we we're relient on grocerey stores to get our cooking oils the food was probably a lot healthy and non processed.
I just checked their prices and a single tlayuda costs $14 bucks!😁
in Oaxaca you can get 10 tlayudas for that and some horchatas too😀

cesina is almost always beef in mexico...i've only met one person that thinks cesina is pork...cesina is salt cured beef
stephanie reeves in Oaxaca they call the pork cesina and steak tasajo but in most of Mexico like Puebla it's the other way around, kinda confusing if you ever visit
In some parts of Oaxaca Cecina is spicy pork and the salt cured beef is called Tasajo

Everytime we go to L.A we go to This place its funny because my We Are Oaxacan And My Mom makes jokes of how she can basically make everything there lol. Btw The Sweet Mole With Cheese spreaded on top and the nachos was the best appetizer Ever !!!!!

You guys should go to Hija De Sanchez in Copenhagen. They make really good tacos.
Everyone should try a tlayuda at least once. Oooo also try Oaxacan ice cream!! Don't forget about the horchata with the nieve de tuna. Guelaguetza is okay, you're only ever going to find the best Oaxacan food in Oaxaca. In LA I prefer Monte Alban though, I liked them better than Guelaguetza.

Oxacan food is the best. My mother is Oaxacan, more specifically La Costa Chica. However, oaxacan cesina is so bad compared to cesina from Morelos where my dad is from.

Actually, they specialize in 5 of the 7, with a sixth (estofado) that's not in that list of 7; there are many more beyond the 7. The two they don't do are chilchilo and manchamanteles. Couldn't say why they don't do these though.
Only had Molé once and it was terrible, however could of been crappy molé. However It looks very tastey for sure.
