    I'd much rather can that burger up than see it go bad due to power failure. If you get hungry enough, you will get over the texture issues real fast.

    We figured out how to fit 3 more shelving units in our bedroom pantry!!! 👏🏻👏🏻 it means dismantling the piece of mom’s furniture I am keeping for my daughter, putting it on the top shelf of one unit, taking small bookshelves out that aren’t efficient, then moving in one unit at a time like it fits in a jigsaw puzzle! So excited. 😅

    We invested in a propane powered freezer. It has been worth the money. There are a couple of things that needs attention. First, monitor the level of the propane. Second, they are not frost free. We keep it full of food for most of the year. In the fall, we defrost it. It’s a great option if you live off grid.

    Great advice! We moved out here about 20 years ago, both neighbors have huge hay farm's. One morning I grabbed a food box out if my cabinet and 5 mice jumped out. I screamed, threw the box. That evening i was the proud owner of glass storage jars and all kinds of goodies, along with a bunch of mouse traps. They are sneaky little suckers.

      If the mouse traps are the old fashion one, hot glue a piece of dog kibble. When the mouse tries to snag it they have to pull it and the bar will do its thing. 90% success

    Personal experience; I’ve had a freeze dryer about 4 years. I have found that I’ve had more food spoilage with freeze drying than any other preservation method. if you have ANY moisture in the product at all, microscopic even, it will spoil, and I’ve extended time for hours to be sure it’s dried. I’ve also had tons of problems with it after 2 years & have spent hours on the phone & sending it back for repair. I wanted to share this for anyone who is considering buying one, but is hesitant because of the money. I’d spend 1/2 that money on commercially freeze dried food. . I dehydrate all citrus fruits, because those are the main things that spoil after freeze drying. I also prefer dehydrated apples as well. We garden, bee keep, raise chickens & family of hunters, I try only to grocery shop for off season fruits & veggies & meat on sale. Love your channel and your content…canning is the best IMHO. Thanks!

    I am so aware of the possibility of critters. I vacuum seal and still put in buckets. Oxygen absorbers in mylar bags and still put in buckets. Cereal is repackaged by one of the previous methods as well as crackers, beans, rice, oats, sugar, flour and cornmeal. We actually gave up a small bedroom for a pantry. Blackout curtains. Ceiling fan for temp control. etc.

    When you go to a yard sale or in a state sale, ask if they have Canning jars, you would be surprise.D how many people run back in the house to grab them to sell them

      I have definitely noticed it getting harder to find jars where I am when it's not canning season. I found a bunch at a thrift store once and hardly find them anymore. I did use my store rewards on a box of them and I thought that was a good investment!

    I have recently started canning after watching your videos. I have been as you have advised working the canned items into my meal plan so my family gets adjusted to the differences in texture and color creating a menu I know they enjoy. If I have no other options to purchase food I am sure my pork and ugly chicken will be enjoyed. I have saved some of the fat from my pork butt to add to my loin to help with the dryness but its all good to me. Suttons Daze has been a God send!

    We use metal 55 gallon barrels with locking lids to store our rice, pasta, wheat berries, dried beans, and dry soup mixes. No more squirrel or mice issues 🎉
    When storing home canned foods, do NOT stack jars on top of each other without something solid in-between. Otherwise, the weight can cause the seal on the bottom jar to be broken & then it can reseal itself (after bacteria has entered the jar)

    The texture and dryness change is a thing, however it does not change the usefulness of doing so. You're usually cooking/heating items twice by canning. This will obviously "overcook" meat. IMO it's ok to have "overcooked" canned goods. And if you use them in proper dishes you will barely notice a difference. We are currently working on Lentil dishes to determine what we like. Last night we did tacos with white rice and pico and let me tell you... Everyone should give that a try. Figure out your "likes" now before you're forced to figure it out in a bad scenario.

    Leisa is why the majority of my dry goods are in jars, with some in Mylar & 5 gl buckets. (I haven’t gotten a few small bags of baking soda put up.) Her story of a friend who lost much to a rat invasion was highly motivating!!

    Put my dehydrated veggies in a gamma sealed bucket but didn’t pay close enough attention to the gamma screw lid and the plastic nubs so bugs devoured some of them even though they were vac sealed inside the bucket. Bugs can and DO chew through plastic to get to your precious foods so pay attention to those lids folks.

    I keep my pantry shelves in my garage but I do keep all the food shelves covered up in the dark and I’m checking the shelves weekly and I’ve fans to circulate the air…my rotation and inventory. When the garage gets warm all my canned foods are on lower shelf’s as you know heat rises. I cover all jars with a light old pillow case and I have a timer/date set up on my iPhone to check all my jars monthly so in four years I’ve had two failed jars. Pretty good outcome 👍🏼☮️ it’s taken my over 4 years to make a difference in our home, and my family is in aww as they tell me “wow mom you don’t need to go to the store only for meat and dairy/eggs” 👍🏼
    I’m busy now daily to get cases f meat done before it’s so high it’ll be insane for meat. I also keep my food storage temp no higher than 67 degrees so fans to circulate air helps lots 👍🏼

      Some dried goods just had to be stored in the shop, too little space indoors, but it's all in Mylar w/ O2 absorbers and in sealed buckets. All the canned goods and home-canned things are stable indoors at 60-80*, dark. Two chest freezers, full. Mice are a real threat in the shop so I'm pretty over-the-top careful about that food.

    You can also dehydrate and freeze dry grapefruit, lemons, limes, oranges, kiwi for vitamin c. As for vitamin b, meats usually cover that, but so do beans and legumes.

      Vitamin B and C are water soluble vitamins and will easily deplete. Oats are a great source of vitamin B

      I regularly dehydrate citrus. During the cold season I drop a slice in my teas and hot months, place in my sun tea jar right before refrigeration. Adds amazing flavor!😊

    In 2019 I purchased my presto pressure canner from Seattle 🇺🇸 it travelled half the wold to Austria🇦🇹 the shipping cost more then the canner😂. I happily say it was the best purchase next to my washing machine, dishwasher, sewing machines (i have a lot😂) i collect stickers "märkle" in the supermarket to get 20 % discount of my purchase and very often 25 and 30 % discount at special days. And btw u love the ugly chicken for chicken salad and chicken casserole❤🤣👌😋 😋

    Many people buy groceries weekly. I buy salad vegetables, eggs about once every 3 weeks. big grocery haul almost never (meats on sale)… when I have enough empty jars. I have a standard 18 cf refrigerator with a small top freezer.
    I had lots of cans best by late 2023, coming to the end of those, except canned chili. I also bought too much Mac & cheese, which I really don’t eat normally.
    My takeaway from this is to buy fewer identical items at one time, and focus on meats. While best by dates are not the end of the world, I’d rather stock the right stuff, so I can keep up.

    Hey Leisa, thought I'd pop in and thank you for that canning worksheet I downloaded from you. It's wonderful! I get migraines but life doesn't stop and that worksheet is fabulous for when my brain is short circuiting. I've made myself a notebook and I'm adding the recipes to go with whatever I'm canning. I forget what I was going to make a meal out of or variations on suchlike, and it's so handy to look up the date on the lid and find the rest of what I needed to add to make a tasty meal. Otherwise I get appetite fatigue because I'll just eat the same old thing. Oh, and I like to read the comments here because people have such great tips and I write those down as well. Thanks again.

    I got started durning the pandemic with a very gently used presto 16 qt canner for $100. Came with the tool and a ton of jars. I now have an electric canner, a 23 quart presto canner and another larger electric canner on the way.

    Bugs.
    Pantry Moths! They are really good at getting into places I don't think they can get into.
    So annoying.
    Mason Jars and plastic containers with a gasket seem to be keeping them out.
    To balance meat and vegetables for one, I can meat with vegetables. If the grid comes down, my fuel will be limited, so I want heat and eat meals.

    Yes, things can go bad in a heartbeat in your food pantry.
    My ex-husband got food poisoning and luckily it wasn’t that bad but things do go south.
    I had a couple of jars of Alfredo sauce from the grocery store that weren’t that old and went south .
    It was eww!
    I decided right then and there I could make my own Alfredo sauce .
    Ever since 2020 product doesn’t seem to be that good as it used to be .
    But believe me you. Yes, things can go south very quickly in your pantry.
    You can have no mice or bugs in your house for years and then all of a sudden have a mouse show up or bugs show up.
    It’s better to be safe than sorry when it comes to our food.
    We are the only ones that can take care of our food and the way we store it and the way we cook it. No one else is gonna do it for us nor do they care.

    My heart and soul rebels and weeps at food waste and spoilage. I went hungry, like you and many others, and I cannot let this happen, if it is within any power of mine, again. Too many people are hungry, especially seniors and the young will be without if SHTF happens. Inventory quarterly and open your eyes. Watch everyday =CLOSELY= . Use your sniffer, too! 👃👀

    If people wonder about the time you have been canning, all they need to look at are the 3 long lines of jar rims hooked onto your shelves! It takes a lot of canning to have that many rims - I know because I borrowed your idea and have a couple of shorter lines of rims hooked onto my shelves!

    Great pantry tips as always! Taking care of your pantry is no.1 - You also don't need every piece of equipment that is on the market. The focus should be on taking care of your items (whatever they may be) and focusing on what works for your family. I love watching Leisa ground flour and I enjoy her bread recipes, I have not bought the equipment to mill my own flour. Maybe down the road I will but for now I will make sure I store my flour(s) the right way. As far as anyone is concerned the recipes I steal from Leisa are my own, never tell your secrets 😜 Take Good Care 🥂

    May 11th, 1970, I was 6 years old when the tornado hit our town in Texas. It took the government three days to set up help for us. My grandmother had a big pantry, She liked to can food. And that pantry was full with her can food and other food products. All my uncles and aunt. 12 altogether with their children, including us, stayed with our grandparents, and they fed us for those 3 days out of that pantry. Remember it like it was yesterday.

    Excellent video, Leisa! You touched a huge amount of key points. When folks say to me they can't afford to do a pantry. I always ask.. EXACTLY how much do you think it costs to invest in a grocery store? I get this look so many times. 🤨🤨 But the fact is, YOU are investing in a grocery store, every single time you walk through their doors. So, isn't it better to use them as your warehouse, and look for sales, BOGO's etc., and stock your own shelves? During storm seasons, people DO PANIC and they do binge shop. So, doesn't it make so much more sense, to "common sense shop" in a calm well ordered manner, and have things your family needs, on your grocery store shelf, and you don't have to worry about the warehouse running dry?!? 😊😊

    Hi Leisa, thank you for this vital information and for your encouragement. I have stored my food in several different locations. My pantry food ranges between store bought canned food, home canned food and freeze dried food. Keeping an occasional eye on it is not difficult.

    I have a full basement. Thought it would be great ...at first...then we found out it floods every time it rains hard. Its dark and a constant temp of 55°, but the humidity worries me a bit. I have an old upright freezer down there that I store much of my home canned meats but, everything else is either in totes or on shelves. I don't put any commercially canned goods down there. I have a room upstairs for that but that room tends to get rather warm in the summer since we don't have central air...and I live in hotter than haities NC...lol.

      My basement is as well. I have what's called a crock, it's a hole lined with a black plastic type of liner like what you see around farm animals and it has a sump pump. It's kind of like a black plastic wishing well. The water table rise in Spring and it triggers the sump pump. Sometimes in the spring it will run for 2 straight months. I got that pool paint or waterproof paint in white, and it's textured so you don't slip if it's wet, and just dumped it on the floor and took the roller and spread it around. Best thing ever! But I also keep everything up at least a foot off the cement so that when the power is out and/or the sump pump dies, at least I'll have a chance to take care of things before my basement is a swimming pool. Hope this helps someone.

      @@GnomeInPlaid what a great idea with the pool paint! My floor is so uneven that the water comes in around the edges and the middle stays mostly dry. I usually put a dehumidifier in the middle after it stops coming in then shopvac what I can. I have one of the crocks, but it's just outside the basement door and the float on the sump pump gave out a few years ago so I have to manually plug in the pump to get it to get rid of anything. I'm 66 and don't have any one that's too handy to fix it for me. I keep getting by tho!

      @@ellencanipe4191 On the sump pump, try a little wd40 on the moving parts. And I used to have to use a dehumidifier until I painted the floor. What I save in electricity paid for the pool paint. Good luck and maybe ask at the hardware store or online about the sump pump.

    I like the buckets (like the ones you have behind you in the video) for dry goods. I especially like Gamma lids because they are airtight. I like modular airtight food storage containers for smaller quantities of dry goods. The are all square and stack up so I use up every bit of cabinet space. Everything else goes into canning jars with plastic lids with silicone gaskets. I was gifted about 15 dozen vintage jars from an elderly friend so I have a lot of capacity to expand my storage. This was my first year pressure canning food and I'm still learning what I like and don't like. I am also getting ready to move so not preserving as much, but looking forward to having good food on hand during the transition.

    Leisa. This is such a an important topic. Just like you said, your stored food is actually better than money in the bank. The return on investment is higher than the stock market average ever since 2021. Also, the peace of mind is wonderful. It is very important to make sure your food is stored under the best controls such as temperature, humidity and light just like you said. Thank you for addressing this because many people are new to this. 😊

    I have a spare room rather than a basement with blackout curtains on the windows. But and its a big one, is I lost track of what I have. Once upon a time I was organized and that is my goal now. To separate everything and put like with like. ie; veggies, pasta, fruits etc. This also gives me the opportunity to double check everything stored. Wish me luck!!

    I'm dealing with mice! OMG I have everything in glass or tupperware now. If you have anything in plastic - they will chew through and ruin everything. I'm so frustrated.

      We converted our dining room into a pantry. We put barn doors up. My brother in law came by and slid one of the doors back and was like😳. His statement was “ y’all got on own grocery store” then was looking at what he could get. I kindly told him how he could make his own too and ushered him out of it😅. Best thing we ever did and we have saved so much money by having it. Now I just go to the stores and get foods on sale ( meats) but still have to buy fruits and veggies. Praying the garden and fruit trees produce good this year

    Don’t forget about the cost of jars. If you don’t have a large stash of jars, it’s more cost effective to only pressure can meats. Canned veggies from the market are cheaper than what you can can if you have to buy the jars. If you have pets, pressure can your meats WITHOUT the salt, that way either you or them can eat it when you need it. Just add your salt and seasonings AFTER you open your jars.

    We heat with wood,. We have a wood cookstove and gas stove in our kitchen. So we stay warm and can cook and bake. We do have the electric going out a lot, so solar generators and gas generators work for us. We use the wood cook stove the most and in the summer, we use the gas stove. We also have an electric stove in the garage just in case..lol Thank you great video.

      15:37 Get a mighty max. Havent had a mouse in 2 years, and i am deep in the woods. Had LOTS OF MICE when we moved in, in the trucks, in the cars, in the house, in the walls, in the basement, in the cupboards...it was😊 awful. Had 2 this year, in fall. Thats it.

    I don't can meats. I buy the Keystone beef chunks, and freeze my chicken and a little pork. My jars are all ready to go if I lose electric. Then I must can up my chicken. I have a propane stove that works if the power goes out. I LOVE the Keystone meats, and their best buy dates are like 2027. Beef is my concern, as the prices are heading towards unaffordable.       I caught ground beef on sale about 2 weeks ago (I had a digital coupon for buy 2 and get 1 free and I had 2 of those ( mine and the hubbies). I was able to grab 6 of the 5lb logs of the 80/20 . The meat was on sale for $14.95. I spent $60 (.2 were free) on 30 lbs of meat. I food saved it in 1lb bags. Cost per pound ended up being $2.00 per pound. I also have canned some beef, ugly chicken, pork butt, soup and veggies, and breads and rolls in the freezer. I’m stocking my 2 kids freezer and pantry ( essential items and a recipe book on how to utilize what I give them too) as a graduation gift ( one with a masters and the other BA in education). They both move out in May. I just want them to be prepared and safe

    I have never thought any canned meat is dry. I actually think the opposite is true. Sure, your'e not going to get a juicy steak, but what steak, even at its best is as tender as a good beef stew?

    Able to invest in a pressure canner! Yay! However, I rent and my electric stove has 1 large and 3 small burners.( coil type) The large one iffy, so investing in an electric pressure canner. 🤞🏻 I’ve looked into stoves and only options are glass top. I’m told they are not usable for pressure canning. 😞

    💫💫LEISA: I began my weight loss thingy the same time as you - >100lbs later I have found that I have rooms of food and mylar/ buckets - I now live alone and just don't really eat.     We tried the ground beef thing. It was fine. We ate all of it in sloppy joes, chili, spaghetti sauce etc. It’s definitely softer. We prefer the chunks, but glad we tried the ground beef. Maybe I’ll do it again someday especially with the price of beef these days! 😮‍💨🫨Uff-dah!

      Ember camp oven for baking, butane hot plate to replace stove, and charcoal grill (used to rely on my propane grill but propane has gotten crazy stupid expensive)… I got a charcoal grill that can also be used as a smoker for $80 and charcoal to run it is relatively cheap. Research how campers cook as a great resource for ideas!

      If you are raw packing there will probably be plenty of fat in the meat. Mine always has plenty of juices and a layer of fat.

      I can't see how dry beans and regular rice is good for grid down storage as the cooking times for them is a problem when we need to conserve fuel ,whether it be charcoal propane ,,sterno,whatever.l will have some but to me minute rice or par boiled is a better choice,and lm about to can beans that we can quickly heat up.l don't have a gas stove and will totally depend on other methods of cooking if the grid goes down.

      We have had two long wet winters in a row here in California and the ants took over. Normally we get a few in a big storm and then they are gone, but they moved in and last week I finally bought poison bait traps. I don't normally kill or use pesticides, let Ma Nature figure it out, blah blah. But eventually the cats are barfing up their food because the ants moved in there too, and my seed starting heat trays become ant egg incubators (MOUNTAINS of ant eggs every night.) I feel ya!

      Baking soda apparently kills them. Mix equal parts of sugar and baking soda, . They are attracted to sugar, but they can't digest baking soda. Same as with roaches and mice/rats.
