- Stuffed chicken with burgul served with salad
This meal is the most cooked meal for my family
It’s family favorite ❤️🔥
Recipe:
1 whole chicken
1/2 cup burgul
1 medium onion
1 medium tomato
3 tablespoons olive oil
1 tablespoon Aleppo pepper
1 tablespoon allspice
1 tablespoon smoked paprika
1 tablespoon black pepper
Salt to your taste.
For the burgul:
2 cups burgul
1 medium onion
1 medium tomato
3-4 minced garlic
2 tablespoons tomato paste
2 tablespoons gee
1 tablespoon allspice
1 tablespoons Aleppo pepper
1/2 teaspoon black pepper
2-3 bay leaves
Pinch of cinnamon
Salt to your taste
4 cups water.
For the salad
1 cup purslane
2 cups cucumbers
1 cup onions
1/2 cup tomato
3 tablespoons fresh mint
2 tablespoon pine nuts
1/2 tablespoon Aleppo pepper
Lemon juice from 1 lemon
2-3 tablespoons olive oil
Salt to your liking
Endive ( for scooping the salad )
( adjust the seasoning to your liking )
For the chicken topping:
2 tablespoons butter
1/2 cup cashews
1/2 cup pistachios
1/2 cup almonds
1-2 cup pine nuts
1/2 cup chopped Italian parsley
Directions:
1-clean and dry the whole chicken, cut the back bone completely.
2- prepare the stuffing, in a food processor add onion, tomatoes, blend unit smooth, then in a bowl, add burgul, blended tomatoe and onion, allspice, Aleppo pepper, black pepper, salt, mix and set aside.
3-now season and rub the chicken with olive oil, smoked paprika, Aleppo pepper, allspice, black pepper, salt.
4-Now it’s time to stuff the chicken, prepare a needle and string to sew the chicken once you stuff it , open the chicken and add the burgul mixture on the inside part and start sewing the chicken.
5-cut slices of onions, bring a baking tray, place onion slices on the baking tray then place the stuffed chicken on top of the onions for flavoring the chicken, cover the chicken with a parchment paper and a heavy plate to stop the chicken from opening during baking.
6-bake the chicken for 1 hour at 350 f. , Then after 1 hour take the chicken out of the oven , take off the heavy plate and the parchment paper , flip the chicken , place the chicken back in the oven and baked for 1 more hour on 375 f.
7-Now prepare the burgul, bring a nonstick skillet, add gee, diced tomatoes , chopped onions , minced garlic and saute for few minutes , add the burgul , tomato paste , allspices , Aleppo pepper , black pepper , dash of cinnamon , salt, bay leaves, water, mix, cover and cook for 20 minutes on medium-low heat.
8- bring a saucepan , add 2 tablespoons butter, cashews , pistachios , almonds , pine nuts and sauté for 3-4 minutes and set aside.
9- prepare the salad , chop all the vegetables, in a bowl add all the chopped vegetables and the seasoning mix and taste to adjust the seasonings , serve with endive for scooping the salad .
10- serving suggestion, place burgul on a large serving plate then place the baked chicken sprinkle sautéed nuts and chopped Italian parsley , enjoy with the salad on the side and Mediterranean yoghurt drink .
If you choose to smoke the chicken use heat safe bowl , light a small charcoal place it in the heat safe bowl with 1 tablespoon gee, cover the chicken with a lid and let it smoke for 3-4 minutes .
