    Instant potatoes make great thickener. Do it often.

    Ingredients/Steps
    1. Season with salt, pepper, garlic, onion, thyme
    2. Saute chops ~ 4 minutes/side
    3. Saute cup of onion and chopped mushrooms until soft and cooked
    4. Add thyme, garlic, onion, pepper, salt
    5. Cup of broth
    6. Cup of coconut milk, I used heavy cream
    7. Add pork chops on top
    8. Pressure cook for 12 minutes, I did 17 minutes because I had 12 thin chops
    9. Cook off sauce to thicken - used Xantham gum

    Made this tonight as my first IP meal - turned out perfect and I don't typically like pork chops but these were really tender and not dry at all. The gravy was delicious! I used tapioca starch to thicken - about 1/4 c.

    I made this last night and had the leftovers tonight - both to rave reviews. My husband told me he hated pork chops, but has now learned it's because he's only ever had dried out/overcooked ones.
    I used bone-in chops that were about half the thickness of yours, cooked for 5 min then 5 min NR. Perfect!

    So, I had another meal planned for tonight, but life got in the way, and I ended up not having time to do what I wanted to. Enter Creamy Mushroom Porkchops: at 5:45 I started with frozen extra thick 1.5" chops, 3 russett potatoes and a half a bag of fresh green beans. by 7pm I had tender garlic green beans, mashed potatoes with mushroom gravy and THE MOST tender, juicy, succulently delicious pork chops I have ever had in my life..... let alone MADE myself Wow. Thank you So Much for the recipe!

    I made this last night for our supper, loved it. I would suggest having this with egg noodles as the sauce it makes is rather plentiful and turned out more plentiful than we had porch chops! Having that sauce over top of the egg noodles would have been really a bit more of "heaven" to add to the equation. Thank you! I'm writing this recipe out and keeping it for my files.
    I happened to have a can of coconut milk on hand, something rare in my kitchen, so used it. I have never actually cooked with it before. I had it to make coconut cupcakes I never got around to making and have lost the recipe, in fact. This was perfect to finally have a use for it. I really do feel that enhanced the flavors. I'd call it "company good", in fact. Not all recipes are company good.

    Just browned pork chop steaks, now ready to pressure cook for 15 mins. Only thing I didn't have was thyme. I've put a pan of potatoes and carrots sat on a trivet above the chops and now have my fingers crossed that it all cooks together. I've never used coconut milk in any of my cooking but since having my pressure cooker I've seen quite a few recipes using it. I'm 62 and I've spent thousands of hours cooking for my family and I had really lost 'my mojo' for cooking but since getting my pressure cooker I'm using it virtually ever night, I love it. Thanks Nilli, watching your tutorials I have learnt so much.

Although I don't use coconut milk and the googooman thickener you used I am Thankful for your video as it has inspired me to use my regular ingredients including a cornstarch slurry for a thickener to make this very savory dish!!!     Super GR8 video and recipe!! I plan to try it out in my Instant Pot with traditional ingredients, I can't go the coconut and guauagieaue or whatever powder!!     4:10 I love the ethnic markets! Avoiding Walmart today or the major chain grocery stores I stopped into a local Mexican market and spent $5.02 plus a couple dollars of items at home to make a huge pot odds black eyed pea soup

    By the way, I love that you are starting with bacon fat. I grew up watching the cooks in my family saving it to use later, and now I have my mason jars in the fridge doing the same! :)

      +Becca I also watched my mom and grandma save bacon fat and meat drippings to cook with. It turns out it's more healthy than the artificial fats (shortening and margarine) and boy does it taste better too!

      I am Southern Born and Southern Bred and bacon grease has always been a part of my diet. David Venable the QVC show host (from Charlotte, NC) said "on air" the other day that he considers bacon grease as an "essential oil"! Yep, my sentiments exactly!!!

    You can sub the pork chops for chicken thighs (or breast) in this exact recipe. I have cooked this meal in my pressure cooker for over 40 years. It's a family favorite! Thanks

    I won't find a Asian market in Westport NY area. I like that brand of coconut milk too which I could find when I lived in Eastern Washington. Finding ingredients familiar with using is challenging now that I'm living on the East coast in a rural area. Thanks for sharing your concoction, I'm sure it was delicious!

    I made this tonight. I used half and half, which curdled. I thought it was totally ruined! However, it was absolutely delicious! But heavy cream does not curdle, so use it instead.

      I add that stuff after everythings cooked and vented then I put on Saute and add it later so it won't curdle.

    I have an instapot. Just got it and I like it.
    Question... Can I use thicker liquids/sauces? Or do they need to be "watery"
    ie: Could I put stew meat in and smother it in BBQ sauce from a jar?
    Pork chops in cream of mushroom soup?
    Could I put raw rice, water and other ingredients all in at once and cook? Or is it best to cook each ingredient and then combine?

    Yummy!! I cook just like you do! Garlic and onion powders pepper, some recipes smoked paprika. I also have always winged it with most things I cook. I love cookbooks and have lots but I rarely follow a recipe. I just get alot of ideas. Except baking....I mostly follow recipes for that. Thanks for sharing!!

      Yes, if the pieces of chicken or beef are the same size as the park chops then the cook time should remain the same. So glad you liked it! 😁

    I use the thin sliced pork chops. Would you still cook for 12 mins? Also, with the runny sauce can you add rice in the beginning and cook with the pork chops?

    Another way you could try this is with cream of mushroom soup for the liquid.

    I just made this and I used half and half about a 1/2 cup I wasn't making as much. I also used 1 cup chicken broth. However I found it was not smooth on the sauce it was kind of like the half and half curdled. Did you know why?

    Great video, just a question please on pot in pot. -
    If I followed your recipe could I put chops and all ingredients in the IP with my required gravy and then put additional water in a separate cup, in the middle of the pot JUST for pressurizing I cooked mince and the liquid took me ages to reduce which took me longer than cooking it in a saucepan on the stove. Any suggestions would be appreciated. (Novice in the use of I.P and can't wait to get familiar with it).

      No, unfortunately the liquid needed for pressurizing needs to be in the bottom of the pot/liner in order to work. I will mention though that meat releases a lot of natural juices so you don't have to add much liquid in order to have enough to build up pressure. Usually half a cup of liquid is enough. Hope that helps!

    Look's good, the only thing I have to do is purrea the gravy because my husband won't eat the onions or mushrooms, so I have the liquid thing that make's everything look like gravy, and I will still have the flavor. this is really a keeper, thank's Nicky

    we do something similar but use a can of cream of mushroom soup and ad enough ketchup to turn the soup pinkish serve with cheese minute rice..

      Hi Meg. I'd either just leave them out or look for a different pork chop recipe since mushrooms are a main ingredient. :)
