    Rainbow Sprinkles
    2 cups powdered sugar, divided
    1 egg white + 2.5 tsp cold water
    1 1/2 tbsp light corn syrup
    3/4 tsp vanilla extract (see notes)
    Gel food colouring in any colour

    2 cups powdered sugar, divided

    1 1/2 tbsp light corn syrup
    3/4 tsp vanilla extract (see notes)

    Instructions:
    Rainbow Sprinkles
    To a large mixing bowl, run 1 1/2 cups of the powdered sugar through a sieve. Add the corn syrup, egg white, 2 1/2 tsp cold water and vanilla extract. Use an electric hand mixer to beat until smooth. If you’re making the egg free version leave the egg white out and use 2 1/2 tbsp of cold water instead.
    Add the remaining powdered sugar (sifted). Use a spatula to mix until smooth but thick.
    Split the mixture into as many small mixing bowls as you like depending on how, many colours you’re making. Add the desired amount of food gel colourings. I reckon starting off with just one drop and then mix before adding more. You can go darker but not lighter! Add to a piping bag, snip a small bit off the end. Pipe into a baking tray lined with baking paper. Allow to set overnight before using a knife or bench scraper to cut down to sprinkle sized strips!

    Sprinkles can be stored in an airtight container for up to a month. If you’re using egg whites, up to a week in the fridge.

      I don’t think so? it’s close to royal icing which goes on non-refrigerated cookies :)

    Hello, Great recipe! Would it be possible to use pasteurized egg whites and egg white powder in place of raw egg whites?

      I think so! But I haven't tested the recipe out with them so I can't say for sure!

      I am going to try using meringue powder instead of eggs. I will use the w/o egg white recipe but I will add in 2 ts of meringue powder to help the Jimmies harden up more and they will still be able to be stored at room temp. ( Meringue powder is what you use to make royal icing harden instead of egg whites ). I have been a cake decorator for over 10 years, I just have not had any reason to make my own jimmies until now. So love his recipe and will add meringue powder to help these get harder.

      I am going to make the recipe w/o egg whites and add in 2 ts of meringue powder. I have been a cake decorator for over 10 years so I think that would be enough to make the Jimmies stronger yet countertop safe.

      The corn syrup gives the Jimmies a shine as well as the elasticity that is needed to pipe and harden them. All recipes I have seen call for it. When they are made in the factory, they use A crisco to help stabilize as well as coat them with wax. So by using the corn syrup you will not need waxxy products to get the same effect.
