Cooking DEER HEART The EASY Way

  • Don't over complicate deer heart. Heart is one of the best pieces of meat on wild game animals and fairly simple to cook. In this video, I show you how to clean the heart, season and cook it via a cast iron pan.
    We also utilize chanterelle mushrooms from our mushroom foraging/cooking video on the ‪@CliffGray‬ channel. (Coming next week. Subscribe for when it comes out.)

    I just started eating the deer hearts a couple years back and amazed how good they taste. In fact, we make fajitas out of the meat and I have to fight for my fair share from my 9 year old daughter who cannot wait to hunt her own deer next year.

    Looks yummy. I've not eaten much heart, but people tell me I've got a lot of heart. Don't eat me.

    My 12 year old son took his first whitetail yesterday, and the heart and tenderloin are for supper tonight

    I usually don't field dress elk or deer, but did a recent elk due to the high temps. I kept the heart to give it a try and was pleasantly surprised. The texture was a lot like liver, which I hate, but the taste was very good. I won't dig one out, but will keep it if I do field dress one out of necessity.

      I cut it thin, due to the texture 👍
      If you are gutlessing elk, you can always pop through the cartridge on top of a couple ribs, then stomp them in.Pretty easy… pull ribs back, grab heart 👍👍👍

    Sadly we can't really do this in the UK (Shoot Deer). However, we do have contact who can. Interesting to see how you deal with the heart. Thanks.

    Looks great. Can you serve the trimmings to a dog? Any risk of illness to a hunting dog?

    How do you feel about freezing organs for cooking at a later date? Does the congealed blood inside the heart cause any problems when you freeze/thaw it whole?

      I try to eat heart fresh. If I can’t for some reason, I’ll slice it into one big flat piece and clean it before freezing.
      Liver I almost always freeze, just get the blood off of it and out of it beforehand. 👍👍👍

      I agree with his statement oftentimes I'll cook the meat and Cann it I don't use refrigerator or freezer. I also do salt sugar and honey curing

    Awesome! There is nothing like heart tacos done in cast iron. I like mine with Morels I forage in the spring. I also collect and restore old cast iron as a hobby, so I do mine in 100+ year old pans and it’s amazing. Do you guys get Morels out there?

      I personally haven’t gotten into morels in the CO mountains. I’m sure they would be awesome with heart! 👍

      @@CliffGray oh they are! I find tons here in Utah. They’re my favorite mushroom. I also find some Oysters when I’m out but the Morels by far are the best. For the blacks, check NE facing slopes along creeks in conifer burns, around 5-7k elevation, usually they’re within 100-200 yards of the creek. Dandelions, Glacier Lilies, Oregon Grape, and other mushrooms are great indicators. Out here we find them usually from April into June. For the blondes, 4-6k elevation along creeks with mature and dying cottonwoods, with the same indicator species listed above. I know they occur in Colorado so you’re apt to find some!
