I grew into a semi-hunter gathering lifestyle. I'd rather view and watch them, then hunt wild game but I have no choice it's a necessity to me. You learn to respect everything in the wilderness, also keeping in mind that home is 150 miles away no room for error.😁👍 what a fulfilling way to grow up and live.
On my way up to my trails through the woodlands I stop by a mountain lake to fish for lake trout for lunch 😋 after loading my spruce logs cant stop thinking of roasted fish before 80 mile my treks home.
The sound quality of this episode was extra good. You could hear everything so clearly and I was watching it on my phone.

As kid in australia I loved when winter came around and we got rabbit and bacon stew. We only ever had rabbit we had shot ourselves. Spent so much time skinning and butchering as a kid. Thanks for evoking fond memories
Likewise, except field dressing only took a minute or two, then put the warm carcass in a 13"X9" cake pan before looking for more cottontails. A rinse with the hose when we got home then presented mom with a clean carcass so she could do her magic.
Never heard anyone pronounce "Hasenpfeffer" so cool the way you did. It actually sounded nearly perfect. Strange note: "Hase" is hare and "pfeffer" actually means pepper, in this context however describes a stew or ragout made from game. Rabbit on the other hand is "Kaninchen", which is different animal. So technically you made a "Kaninchenpfeffer", not a Hasenpfeffer if you used rabbit and not wild hare. But that's just splitting rabbit hairs. Cook on, Cowboy, you got fans in Germany who take their hats off to thank you for your channel.
Only down here will you hear that pro-noun-ce-a-shun! LOL!

Richard Thornhill ; I know what you mean. It's been about the same for me, 65 - 66 years. My dad used to raise Chickens and Rabbits, they were our main source of protein for quite a while. Mama usually just fried the meat and fixed mashed potatoes with some goood pan drippings gravy and a vegetable.

My husband literally hates liver. That said, however, he will eat (and enjoy) rabbit liver. We raised (Californian) rabbits for about 6 years and he got brave one day and decided to try the liver. He was pleasantly surprised as rabbit liver has an even milder flavor than chicken liver. It makes a terrific liver pate also.
I will refer you to the book Skis Against the Atom. Sounds weird but Norwegian Commandos who mostly live off the land in WWII said that eating the whole animal provided them with the nutrients they needed. The typical steak would not keep them alive. It took the entrails, brain, eyes, and all to do it...
Takes me back to when I was very young. My dad used to fry up rabbit the same way he pan-fried chicken. It was delicious.
Yes Kent we learned a lot from Buggs Bunny cartoons. My Dad grew up during the depression he went out every day to shoot cottontail rabbits, that was their food for dinner each day. A limb spit over the campfire is much lighter than the skillet (cast iron) of the times back then.

love the video. I raise my own meat rabbits here in northern california. Definitely a dying practice and people think im crazy all the time but oh man is it worth it. Raising chickens and rabbits was how my grandfather and his family of 6 survived the depression growing up in hawaii. I'm proud to carry on the traditions of my ancestors and learn skills that are foreign and looked down upon by average city slickers

I’m starting rabbit and chicken farming for the first time this year! City slicker living in a small town now, always wanted to try homestead living.
Loved the video, I grew up eating a lot of small game. My mom would fry that rabbit then take and make a roux and stew it all down and serve over rice. Another version that’s always been my favorite is to sear the seasonings and rabbit in Dutch oven and have clear broth and white wine cover it and cook til tender and yep, serve over rice. It’s all good eating! Thanks so much for the video, I hope a lot of the subscribers will try these. Anyone in or near Rogers Ar, there’s a rabbit processor there and they sell cleaned, ready to cook rabbits there.For those that hunt, all the better.
Hi Kent! Here in Spain we put a good pan fry on the liver and then we grind it in a mortar with garlic and a toast to make an amazing rabbit stew.
But I mostly use rabbit in a tomato sauce, thick bay and wine sauce or simply in a typical sunday paella.

My grandfather here in Austria was breeding rabbits, I grew up on a rabbit diet! Super tender and lean meat. My grandmother baked them in the oven (with stuffing) or fried them in pork lard.

I raise rabbits in the States. It's a real shame that it's fallen out of popularity. I get that they're super cute, but they're such good eating!
@@Heather-xm9ul they are making a huge come back all this year & end of last. Most homesteaders are doing some & can be gotten at many farm/homestead to consumer or farmers market. I spoke with a breader/seller & key was preparing rabbit bites to let customers try & recipe cards to go with purchases. 3 or the homestead podcasters I watch have them. 1 I used to watch made movable hutch/run like chicken tractors for moving across pastures.

Back before my rabbit beagle retired to a tasting beagle, I always had plenty of wild rabbits and I raised rabbits for meat too. Always had to make it into a little more familiar so everyone would eat it. Rabbits substitute well in lots of recipes. The work well in fajitas, white chili, dumplings, stir fry, curries, as well as fried and stewed.

Gosh, I can remember my Daddy and three brothers going rabbit hunting and Momma would fry up the rabbits and smother them in gravy. Good eating. My husband loves rabbit as well. Making me hungry Mr. Kent!

Kent, your rendition of Hasenpfeffer makes me think of my Grammy. My granddad and I would bring her some rabbits, and she would make a dish similar to this for us. She would have browned it in bacon grease, and served it to us over some mashed potatoes. As always you make a tasty looking recipe for us, and I'm alway happy to see your puppies get a taste. Cowboy, you done did my German Grammaw proud with this here recipe. My daddy or Granddaddy and I would bring home a rabbit or six and she would get to making some hasenpfeffer. She would also fry up a bunny or two if the Good Lord felt fit to provide us with such things. Thank you so much for sharing this with us and for bringing us all together once again. Hunted them hard as a boy and I agree...wish I could get some at a reasonable price already butchered.
When I was fourteen my dad got me my first shotgun. A 12 gauge semi-auto with a shortened stock and a shortened barrel with an adjustable choke. I was barely able to carry the beast but I was as happy as a clam. When pheasant hunting I became a bit of a specialist in bagging rabbits. My parents didn't eat rabbit but my Old World grandparents did and were they ever happy when I brought my latest bunny victims to their house.

I love this. Texas has a surprising amount of German descendants and Mexico had an Austrian Emperor. They killed Maximilian but his Vienna lager gave us XX. I hope to enjoy Kent's cooking one day.
Mr Rollins, i lived with my grand parents in southwest Missouri. On sunday morning,and i mean every sunday morning my grammy would make fried rabbit and fried squirrl fried taters and onions smotherd in gravy! along with buttermilk biscuits! and a boatload of eggs over easy. Thats fine eating right there!

When I was a kid we used to buy our rabbit from our mailman. My mother who grew up on a farm would fry the rabbit like chicken for Sunday. The rabbit tasted like chicken, enjoyed it. The mailman raised the rabbits. YUM.
It's been so many years since I had rabbit or frog legs. I grew up on such delicious food. Homemade food and garden /fruit trees.
I'm 64 and haven't had any rabbit since I was a kid,,, sure brings back some fond memories! Thanks for sharing :):)

Very interesting, but rabbit isn't kosher. The recipe could work for venison very well also.
A rabbit stew is really nice and rather hardy i know a few people dont like eating rabbit but there is a huge difference from your pet bunny Mr fluffy to a wild lean rabbit who a lot of the time are classed as pests
Big rabbits are awesome! Much more meat than bone, and because what we feed them, they tend to be less gamey. I think it tastes turkey-ish

I fried rabbit for my family in the earlier days and would make rabbit gravy with mashed potatoes and the kids loved it! We made it a point to go hunting for rabbits and we enjoyed a good fry!

First time I had rabbit I was living in Colorado..
I bought at a kingsoopers grocery store.
I marinated in buttermilk with a little cognac that I reduced to a syrup with some of your spices.
I slow smoked them in a cast iron skillet in the Q until they were browned and fork tender...makin' me drool just thinking about it!
Now that does sound like some good eating

I like to cook my rabbit down in the pressure cooker, pull the meat off the bone, then make a soup with whatever else you want in it. I usually just add onion, carrots, celery, and whatever seasonings I feel like. I've also added black beans, rice, and taco seasoning and it was good
I only know of one person who cooked rabbit when I was kid, my Aunt Quida, and to me it looked like a weird fried chicken. I don't remember what it tasted like since that was over 45 years ago, but I remember there weren't any leftovers after dinner, supper, or whatever time of day it was when she cooked it. 🐇
As for the organ meat, I don't touch it, I've never been that hungry. I've tried liver once and hated it. I don't care how good it is for you, it's not going to prevent the inevitable, so I'll eat what's tasty instead. 😋

Hazenpeper is a traditional Dutch and German stew. The dish is prepared by marinating hare legs in red wine. Then this hare meat is stewed in a casserole, together with bacon, onion, garlic and possibly carrot and tomato puree.

I worked with a girl who raised rabbits for eating.. she brought in a pot of “chicken” stew, but I knew right-off- the-bat what it was 😅 my grandma pulled that trick on me when I was a kid.. it does NOT taste like chicken 😅😅

One of my first jobs as a cook was at Bojangles Cajun Chicken. I fried all the chicken and ever'thing was double dipped and the recipe required some cayenne pepper in the dry mix. Double dippin' is the way to go. I bet the Kent Rollins original seasoning would have done wonders.

My grandpa was an avid rabbit hunter. He learned how as a kid during the Depression. He had a nail on one of the posts of the carport where he would stick his rabbits to skin them. He would always leave one rabbit foot attached to the body. He had been doing that since he was a kid to let people know it was a rabbit and not a cat he was preparing. Like in case he wanted to trade a rabbit for something.

One of my fondest memories is when my grandmother came and stayed with my siblings and I while my parents were away.
During this time she brought down a cooler full of rabbit my grandfather had aquired hunting. She made fried rabbit for us and it was delicious! Great video!
I love the video and the recipes. Rabbits probably one of my favorite things I stuff it full of onions and turnips and tie it up and then cover it with onions and put it's inside of a baking bag and bake it it's really good.

As a kid in the late sixties, I used to hunt cotton tails at my grandpa's in Arizona. I didn't cook it though. My grandma did it for me. It tasted like chicken to me. Thanks for showing us how to prepare a rabbit properly.

We get lots of rabbit here in England Kent. I've tried a few recipes and the meat is still dry. I never knew about the brining thing. This Hasenpfeffer recipe has just been printed off as it looks so nice. And who doesn't like cooking with wine eh? Sometimes I even put in the food!
Don't overcook; rabbit is lean and not forgiving if you cook it past its target, internal temperature. Invest in a good instant-read thermometer and use a method like Kent showed: hot sear followed by very slow, gentle cooking, making sure you don't cook it past much beyond 160 F.
Hasenpfeffer!!!! reminds me of one of my favorite episodes of Loony Toons!!!

And now I can finally better understand the jokes in Looney Toons that Bugs makes. I've been meaning to look up what Hasenpfeffer was but of course not being able to spell it sort of put it off and I forgot. Until the kids would watch the episodes again lol
As always great video and it leaves me hungry. Husband and I are planning on learning to hunt whenever we move because it's a good skill to know even though we'll be raising animals and growing a garden, those things come in time so until then it'll be hunting and foraging for us.

Learn your firearm well, spend plenty of time on the range shooting targets, and Take a hunter safety course. Know and practice firearm safety till it is habit!! I've been a hunter from the time I was 6 years old and got my first rifle (.22 caliber) when I was 8. I was about 11 or 12 before I was allowed to hunt without my dad. In about 3 weeks I will be 74.
I use the rendering . Heart etc... to make country gravy to go over biscuits.

My Grandfather nearly made 102 years, and he's been gone twenty years or so. Too young for WW1, too old for WW2, he did Nasho, and found himself making parachutes in 1939. My Dad showed up in 1936. After the war Pop, his surviving brothers (a few died on the Burma Railway) Dad and his big brother used to go camping and murder the bunnies at several places outside of Melbourne. Pop was notorious for refusing to waste .22cal (his rifle was chambered for short, long, and LR) ammo on rabbits when Dad or Uncle Don could neck the thing with their Crackerjack air rifles. One time they came home late with a lot a rabbits tied to the rear bumper, already turning green. She stewed the lot and made them eat it all. She was a tough old Cornish woman, married to an Irishman. She died when I as two, and he loved her until the day he died.

I grew up eating fried cottontails but nothing from the innards. We always checked the liver for spots and only hunted them after several days of frost so the weak/sick ones had a chance to die off and feed the coyotes.

Wow, I haven’t had rabbit in years! Back in Puerto Rico, we were friends with a family that bred rabbits for meat. I had them as nuggets and they were so good, I didn’t even want to dip them in the sauce they gave us.

I like rabbit, especially fried...tastes like chicken (almost). However, it's tough. Glad you talked about tenderizing. I've heard freezing it also helps tenderize it (?).

Don't forget to check for the stray piece of steel shot if you're wild harvesting. :) Daddy always had a rabbit or two in the crockpot every Easter - probably the reason our easter baskets were bare. ;)
My son insists that we leave one piece of shot in whatever small wild game we are eating to prove that we didn't buy it in a store. When eating large game he's satisfied with just a picture to prove we shot it.
We never had that shot problem. I only hunted them with a .22 caliber rifle. I was taught to aim at the eye. I got my first .22 when I was 8 years old in 1956 and it was the only .22 I had till it was stolen 38 years later when my home was broken into.
