There's such a sincerity to your videos I deeply appreciate. As a veteran you get used to people saying things like "Thank you for your service" as a reflex. People say things on auto pilot. You really seem to mean every word you say, even the stuff you say all the time, so I always totally trust you and your recipes. People might not believe when I say I learned to make good sushi from a cowboy but I did and now I gotta try some tacos too

when i say it, i mean it, but dont want to stop the person, usually an elderly man with the vet hat, from going about their shopping etc, so, its sincere from those of us that notice and take a moment to thank them. you should appreciate each one that says it to you.
Buffalo wing joints used to make up 5 gallon buckets of 50 wings. That's where the term bucket for 50 wings came from. The buckets had holes drilled in the bottom for drainage and they would stack the buckets. The weight of stacked buckets would press the moisture out of the wings and allow them to get extra crispy when fried.🐔🐔🐔🐔🐔🐔🐔🐔🐔🐔

Then I thought you appreciate that you made a delish Enchilada Salsa/Sauce & I bet you can whip them up mega good with the Mexican "queso" you wisely selected, plus add shredded cabbage or lettuce & etc. Pluuus, IF you like "Mole", just add either fresh peanut butter(or bought) or roast/toast peanuts with almonds, cumin, cinnamon, blend well. Then pour in a lightly oiled pot, add a disc of Mexican chocolate. Simmer on low adding broth IF too thick n to also make sure Chocolate is melted...for @ 30mins. Then add cooked Chicken n simmer covered for @ 20mins. Serve with "soda de arroz"/Spanish rice or white rice. Sprinkle sesame seeds over Mole upon serving & enjoy with Tortillas, either corn or Harina, both are delish. Even Mexican bread like Bolillos, to dip, yum! Buen provecho, enjoy! Absolutely love making Birria tacos. If you make the broth thinner, you can skim the grease off the top when done and use that to fry the tortilla. Makes them nice and crispy. They are better with the charred bits and crispy beef and crispy cheese around the edges!

Yes. Everything you said plus what BL said. Lots of ways to make birria but I prefer it with the thinner broth. As this was more of a stew that ended up looking a bit more like BBQ. Also having the thinner broth on the side to then dunk your taco in is delicious.

Oh, you have my mouth watering. I am 70, would you believe I have never cooked short ribs. In our early years, we had a feedlot and always had beef butchered 4 times a year. We had them grind the short ribs into hamburger. Don't hate me. We love ribs, so I'm buying some short ribs and giving these a shot. The Title of this Video isn't a lie .... These Tacos really changed my life ... First time trying A Quesabirria taco I fell in love with it 😋
One of the most famous birria taco shops is by the border in San Diego. I used to drive a couple hours to get there. I talked to the workers a lot and the only difference that sticks out to me is they cook the beef bones in their sauce to render the fat, it floats to the top of what ends up being the consome and the tortilla gets skimmed across the top of that fat and it fries it to a bit of a crisp so it doesn’t get super soggy, it’s firm and holds its integrity when you dip it in the consome, which was served with cilantro, lime, and chopped onion. Best tacos I’ve had in my life and I’ve had a LOT from a lot of places while in the military. The way you cooked this meat looks awesome. Would’ve loved to try your tacos!

A couple years ago, I found three or 4 packs of forgotten dried peppers in the cupboard. Rather than throw them away, I seeded them, adding back 1/4 ofvthe seeds. Stewed them up then food processed them. Put them in a jar with some ferment starter and a fermentation lock and let the ferment for 6 weeks. This made a fantastic very hot sauce. 1 tbl would spice a pot of chili. I'd add more after, but that was plenty for my wife. Worked great as a topper for chips and cheese.

Great video Kent, according to birria etymology, the original birria uses lamb or billy goat, and the most foundational recipe is baked in a clay oven using dense wood. It would be interesting to share recipes someday.

I used to work on a ranch in south-west Texas when I was young and there was this old Mexican lady who did all the cooking. Her chili, which I had her teach me is very similar. Of course you don’t let it simmer for quite as long to keep the meat a bit more intact. It has the same ingredients but in addition there’s some dark chocolate and chicken broth and also the meat includes oxtail, which give amazing flavor. And if these tacos taste anywhere near as good I’m going to have to try making them!
After watching this today, I ordered at our favorite Mexican restaurant tonight. I could not believe how good they are!
I grew up in south Texas and was surrounded by authentic Mexican food. We have a large Mexican American population at out church. Occasionally the ladies get up a fundraiser of tacos. The line goes around the block! Getting to watch those superb traditional cooks I saw them dipping the tortillas in sauce and and then being fried. I now do it this way. My parents are from Deming New Mexico. My mom use to make this, she would spend the entire day making four tortillas and serve it with beans and rice on the side. Let me tell you. That was some good eating. Just remembering and kind of brought a tear to my eye.

Mexican food is just so… ridiculously good. My favorite Mexican dish has got to be Carnitas Michoacán. Absolutely insane flavor, together with the refried bean, pico, rice, guacamole.. unbelievable.
Because I’m in Scotland in the cold and wet I had to make this on the hob last week. Let me tell you my other half was a very happy guy with this awesome dish. We’re still thinking about in fact.

Kent out here in California we get charged$17 per 2 taco Birria plate with a tiny cup of consume soup ta dip it in. Its good but you walk away hoppin and u steer ur truck with the one arm ya got left but its worth it!
