BEST Persian Kabob Recipe | No Grill Required | Best Koobideh | Chef Tara Radcliffe

  • Hi Guys!
    Thank you so much for tuning in! I am so excited to share my Persian Kabob recipe with you all! This is a great method of making Persian Kabob (Koobideh) indoors, especially with the upcoming cold season right around the corner.
    This is a great method if you don't have access to an outdoor grill, or you just simply don't feel like grilling! :)
    Here are the ingredients that I used:
    2 lbs Ground Beef
    2 lbs Ground Lamb
    2 Onions
    1 bunch Parsley
    2 tbs Sumac
    1 tbs Turmeric
    2 tbs Liquid Saffron (Optional)
    1 tbs Salt
    1/2 tsp Pepper
    1/2 tsp Baking Soda
    Zest from 1 Lime
    This recipe is good for 4-6 people. If you are cooking for less, just cut the recipe in half.

    Holding peeled onions under running tap water for a few seconds prior to cutting or grating will keep tears from forming in the eye. A tip from my beloved mother. Bless her soul!

      I hope to visit Iran and Iraq in the near future.
      Having lived in Nevada for most of my adult life, I had a variety of ethnic friends and 1 that was born in Iran, Persian + Sicilian and Jewish 😁 - and he is one individual that ya have to understand heritage and really know, to capture the true essence of his Wisdom and Heart, cause the surface truly would fend off individuals that haven't had the flavor experiences of true ethnic diversity lol
      I adore him and I feel the Peoples of the Near East are abundant in the most beautiful Women on the planet and handsome men as well.
      The Ancient Persian energies still flow through many of the modern Persains. Particularly those whom aren't constrained by personal Fundamentalist Ideaologies - very much like where I presently live, in Dixie/Tennessee.
      Fundamentalism is the same, regardless of the choice in Belief - the far right will always be on the far right - anywhere on the globe.
      I merely respect each their choice.
      Any recommendations on accommodations, and/or recommended contacts such as: Advisors/Academics re: Historical Locations.
      Just the idea of it gives me butterflies, I'm so excited!

    We have tried a few of your recipes, and so far they have been great!! My wife and myself watch. I am persian, she is korean, and as a korean she is cooking persian food better than I can. We did y our ghormeh sabzi last week, and I loved it!

    Thank you for taking the time and translate the recipe into measurements 😂. Anyone not familiar, Persian mothers are inherently ninjas in the kitchen. No measurements, all freestyle so you need to take notes and fine tune the exact measurements. No easy task. Appreciate your video. Fesenjoon next?

    I'm Persian and this is pretty different than your traditional kebab but it's nice to see your personal twist on it. The parsley, sumac and lime zest must brighten it up a bit! ☺️

    Wow! Looks delicious! This is an easy way to cook the koobideh. Is the saffron a very important ingredient? Is it ok not to have saffron esp if I can't find it.

      Thank you! It is definitely ok to skip the saffron! The taste is very subtle so it will not make a huge impact on the recipe :) Enjoy!

    You might already be aware of this but the parsley onion mixture is very common in the nearby Arabic speaking countries. They usually don't use spices in their kabobs other than salt and pepper though. Iranians tend to put a lot more in their mixture.

      It’s probably fake saffron from China. Never buy saffron from non persian stores. Make sure it’s from Iran.

    You have a nice complexity of flavors with lamb/beef, saffron, sumac, turmeric and lime zest. The baking soda is used as a secret agent.
    Very clever. The cheese cloth wringing of the onions was a professional touch. Can you make some yogurt sauce? My mouth is watering

    I kind of just started the video but I really have to ask. Are those really medium sized onions? They look huge to me. I need to know because not all recipes have images and I have always assumed medium sized onions being 80-100 grams or so.

    Makes me miss my friend Keyvan (Persian) and Habib's Restaurant back home in Las Vegas, Nevada.
    Love this dish, but being USA American - prefer it in all Beef, LOVE the Roasted Tomatoes over the Rice.
    ...and Herb Salad.
    No so much on Humis though.

    Hi! What is the proportion of meat and fat? Does the meat need fat in it ? I find sometimes it comes out stiff and hard without fat! Thanks!

      It dose need fat for sure , around 25 percent fat is good. I use 1/2 beef and 1/2 lamb for kabab and the lamb meat should have Enough fat. Meat around ribs is good for that. You can also switch beef with turkey breast.

      And i should mention that aside from fat, the amount of onion you add to meat is important too! Not enough onion can make kabab stiff and too much onion will make it a disaster!
