Perfect Persian Kabob (Koobideh) - Cooking with Yousef

  • Hi, this is Yousef. I love to cook, and I've always wanted to share my passion for cooking with other people, so here goes!
    Today, we do a perfect Kabob Koobideh, which is an iconic Persian dish.

    1.5lbs ground beef . 85-15 (lean) or 75-25 to taste
    .5 lbs ground lamb
    2 yellow onions ground
    1 tsp salt
    1 tsp pepper
    1/8 tsp garlic powder
    1 tsp sumak
    1. grind onion and drain all onion water
    2. combine beef and lamb and onion in a bowl
    3. add salt and pepper and garlic powder
    4. add sumac into the mix
    5. mix throughly
    6. wet your hand in warm water and grab meat and place on skewer

      How long do you mix it for? I heard that if you don't mix it long enough, it will also not stick to the skewer. Lastly how long do you drain the water out of the onion?

      ​@@sadjaz a few minutes of mixing is enough as long as all the parts are sticking together nicely when you make it into a ball...for the onion, just push down the onion with the back of your hand a few times to get any remaining water out of it, you don't have to wait. I just set it aside in a drainer until I'm ready to mix it in.

      @@sadjaz I just made it this week, and I mixed it for a few minutes, however I did double the ingredients since we wanted leftovers. The onion didn't drain as well as I would have liked, and I may leave it out over night next time. If i worked the meat well on the skewer is stuck pretty well. But it did break apart on a few. However they were all delicious!!!! Thanks for the recipe.

    Hello from Russia! Thank you for video. We in Russia adding 150 gramms chiken breast for 1kg to beef. It makes your grounded beef more steaky like a glue. And chiken prevents beef from shrinking, this is why it never falling from squwers.

    My husband of 28 years taught me to make delicious Persian food. Lost him to a heart attack in 2012. I enjoyed watching your video. I always made them in the oven under the broiler. Thank you for tips, going to try it on grill.

    Aloha Yousef, Greetings from Maui, Hawai'i. My husband is Persian from Iran and we both loved watching your show. His dad had a Persian restaurant in Hollywood, CA from 1974-1978 named Dinah's and he misses Persian food. Unfortunately there aren't any Persian restaurants here on Maui. Thank you for doing your show. We loved it and will be watching for you.

    It looks delicious. I enjoy it here in LA where we have Persian restaurants. Basmati rice cooked and steamed is truly remarkable. Very pleasant and helpful video. I no longer cook the meal now that I can buy it in the mall. Very, very delicious food.

    Thank you for sharing your story. Very impressive at 12 years old to learn how to cook for your dad. These days, children don’t know how to put their dirty dishes in the dishwasher. I love Persian foods and beef or chicken kabob koobideh are my most favorite. I love many different dishes from your country, i love the hard rice with my kabob. Thank you for sharing your love of cooking. Your kabob looks so yummy. Others show you have to chill the meat before and fussing about meat falling off. Yours looks so good without any fuss

    Love that kind of kebab with authentic rice. My friends in Teheran are cooking the rice a bit different. They put bread underneeth the rice when steeming and put a towel between the ot and the cover. The rice connects to the bread and becomes crispy and superdelicious! Also like that you mention the frech onions to eat with. I love these great Iranian food!

    Great work Yousef. I also add zardchoobeh (Turmeric) to my kabab, it gives it a better taste and color. But I will have to try your sumac in there as well. Nice touch! Thanks for sharing!
