1 1/2 lbs top round beef cutlets
4 Roma tomatoes
1 small onion
1 jalapeno
3 to 4 cloves of fresh garlic
2 medium Russet potatoes
1 tsp ground cumin seeds
1/2 tsp cracked black pepper
1 Tbsp beef bouillon powder
1/4 tsp dried crushed Mexican oregano
fresh cilantro (optional)
salt to taste

I grew up in Hawaii eating primarily Asian food. I moved to Texas right before the pandemic and fell in love with a Mexican girl. She has since introduced me to real Mexican food and I ask her constantly how I’ve made it 33 years without fully experiencing this cuisine. These types of stews have changed my life - and I want beans, rice, and tortillas with every meal now. I’ve been ruined in the most glorious way possible and I wouldn’t change a thing.

I grew up on this food. We used chicken and sometimes hot dogs too. So good. My mom would sometimes throw in some corn or green beans.

This looks a lot like what my late grandmother used to make when I was very little. She called it chile con carne. Served with corn tortillas & beans, that would be dinner. Any leftovers might be served for breakfast with more corn tortillas and a fried egg. BTW, my daughter has that cilantro soap gene. Poor kid!

Ooooo... my neighbor growing up in East Los Angeles used to make a lot of different guiso dishes. I loved staying for dinner after playing with my friends, her children. I've always wished I knew how to make some. Unfortunately, she passed away before I ever had the chance to ask her to teach me how to make some.

When I married, my husband wouldn't eat Mexican food and that was about all I knew how to cook. Took me a while, but he taught me to cook other stuff and I taught him to eat my stuff.
