      My only thing I would point out, is you using plastic tipped tongs while frying. I would recommend using metal tongs myself.

      I recently learned how to make Korean fried chicken without using a fryer and saved a bunch of oil. I just coat the chicken with rice powder and corn starch. Put chicken on an oiled foil tray and coat the chickens with oil spray and cook them in the oven.
      My question is, I wonder if I can get my chimichangaz the same way. Coat them in oil and just pop them into the oven to fry them with less mess and waste.

    I just made these for my wife and myself. But used leftover rotisserie chicken, re fried beans and some spices, cheese and salsa. My wife was duly impressed with this newbe to cooking (only 82 yrs old, so never too late to learn) They turned out great! Thank you for some great tips and recipes.

    The same night I made the enchiladas, I made this for my wifes lunch for the next day. She is the manager there, and her co-workers asked if I would make some for them as well.!! ;) So easy to make, and puts a smile on everyones face. Yes, I made more for her coworkers, they are quite envious of her now.

    I've grown up making these with my mama. Only thing I'd recommend for anyone who has problems with them not holding. If you fill your tortilla closer to one side, you get a much tighter roll. 👍

      Also when you goto roll them if you pinch either side then fold the top over and then pinch all of the edges into the roll as you go steadily tightening as you go. Basically opposite of how she rolled hers. Pinch your edges in first then the tops and bottoms kind of like a joint

    One trick to keep them from opening up while frying is to do an egg wash around the outer edges before folding.

    I made this today same just added mushrooms, pan cooked the chicken and added onions , I'm so in love with this why eat out when I can make this for the family at home, thanks so much for sharing. My family had me go bad and make another batch the same night! So serious. It was as smash hit love that its easy to make ahead and freeze.

    When I was a kid, my Mom used to make fresh tortillas almost every night. Then, they started making those tortillas in a bag from the store and fresh tortillas were over at our house. Damn those store bought tortillas!

    I tried these tonight, my wife and I loved them. I used the store bought tortillas and they didn't look as good as yours. Love your presentation style, so easy to listen to and follow.

    A bit of tips. For a good sealing on the wrapper, use a corn starch diluted with water, then brush it a little on the edge of the wrapping on the final fold. It will make sure the wrap more secure and won''t unravel when you fried it.

    I love the detail you put into your recipes. It’s saved me so many times. My mom worked a lot when I was growing up, so she didn’t cook much, but when she did I never learned because she didn’t have time. Now she’s older and doesn’t like to cook much, so I’m learning and you’ve been a big help.

      Although I can only wish I grew up eating all her delicious and comforting recipes, I 💯% can relate with your attitude of grattitude for someone who keeps pleasant memories of home alive. My Mom was a good cook who passed on without passing down her recipes and now it's a rare blessing to discover a recipe that tastes like one of hers.

      My mom did too, but I learned it from our babysitter and I was in the fourth grade too. Then I grew up and worked and cooked for my three boys and now I'm stay home due to illness and I can't do much and I'm still young in my 50's and I hurt so much. I worked at a young aged a lot with my hands. I'm sad but I try my best to cook.

    Like others here, I made these last night using rotisserie chicken. I didn't have any colby, but did have shredded taco mix cheese. Everything else was just as like your recipe. They came out awesome! Best chimichangas I've ever eaten, and I've eaten a lot of them. I used to dread getting a whole rotisserie because invariably I through away most of the chicken. No mas, I"ll be the chimichanga king of Modesto! Can't wait for bible study this coming Monday night... going to bring them to the group. Love all your videos; lucky family to have such a great cook!

    I'm a professional Chef and have to say, you've got mad skills with the pastry. I was very impressed. I used to live in Spain and eat a lot of these types of bad boys. There's a gazillion different things you can stuff in them tasty looking tortillas. Here's a tip, when using that Chef knife of your, you want to use the lower part of your knife when cutting, slicing etc. It's far more efficient/controllable and considerably safer.

    PS the tortilla recipe is broadly similar to a Chinese dough. They use boiling water and then use two chopsticks, one in each hand, stirring the mix anti-clockwise. Bizarrely, it works really well. Saves burning your fingers and enhances your dough!

    These look really good! I make something similar. I use egg roll wrappers and use a mixture of ground sausage, sauteed mushrooms, finely chopped ginger,and shredded mozzarella. I cook/melt the mixture before wrapping and frying. I call them italian egg rolls. Wonderful to dip in sweet and sour or bbq sauce.

    I made some this morning with leftover ham stir fried with a little garlic, onion , minced green olives and a little parmesan Romano the colby jack cheese and some scrambled eggs . Topped with sour cream and salsa.
    They were outstanding!

    Fantastic! I love that you are making the recipes available to such a wide audience. This is the true Texmex that I grew up with. Most people don't know that, even in Texas, these exact flavors and techniques aren't found much further north than Austin. Also, your videos have gotten so good compared to when you started! It's fun to see your subscriber count grow.

      I live in Dallas and there are some great authentic Mexican food and Tex-Mex places here but I've noticed it's much different variety the closer you get to the border which I love!

    Omg you have the best videos to explain recipes. You go over every step and give all sorts of possible options we can do throughout the entire recipe, giving us more options to make it does for us. I love that, not that yours aren't amazing as it is but for me I suck at cooking.     Hi, I eliminated the frying in oil with placing them on an air fryer and it does a great job on making them crunchy without using oil. I like how you explain all and love trying what you make. God bless you and your loved ones from an 82 year old in Texas.

    I worked a restaurant in Alabama after they fried them they put a slice of cheese melt it in the oven then a little enchilada sauce on top. So yummy.

    I love these! I make them a lot too. I just tie them when wrapping, with string used to close pastels and when your done frying, just cut them off. Helps with getting no oil inside 🙂

    As I make these rolls I just dip a finger in water and rub the last seam to seal them better.
    *let them sit for a few before frying if you use too much water to seal, water and oil don’t mix and you will get spit on!
    Those look so delish! I know what’s for dinner tonight, I’ll be using left over shredded pot roast😉 Thanks for taking us along, it was fun✌🏼

    we love chimichangas here. There is one that sells here 39 pesos per piece.. thanks for sharing, now i learned how to cook it. I will try this..my grandchildren love thos too.

    I love chimis! I usually just season cut up chicken with either taco or Tex-mex seasoning (homemade not the package kind), put the chicken on tortillas with salsa on top, fold it up, pan fry all sides, top with enchilada sauce (again homemade, much better than the canned stuff) and cheese then put under the broiler until the cheese is melted and bubbly. Definitely going to try them this way. Looks delish!

    Regarding the "best" oil, canola oil is pretty good to use because of its high smoke point, same goes for peanut oil, the important part is tu use oils with a high content of saturated/monounsaturated fats because they're the most stable at high heat, people vouch for coconut oil but i dont really like the after taste that much. You could also use lard, ghee or clarified butter. Bottom line, as long as you dont burn it or take it to smoke point you'd be safe :)

      Nice comment and true. I personally reach for canola, grapeseed or safflower oil due to high smoke points.

    I messed up the recipe you posted for the tortillas (and left a comment, but I will try again at a later date) , so I bought tortillas and prepared this. I have to say, this was a HIT! I've made quite a bit of dishes that I found so that we're not cooking and eating the same foods, and many don't make "the list" (you know, the list of foods that everyone begs you to make because they have a craving for it). This was IMMEDIATELY put on the list. Thank you for sharing this

I didn't add any side dish & glad I didn't because the chimichanga alone was filling & satisfying.. You made this recipe a hit in my home..     i love the way you test the oil, i have always struggled with knowing when the oil is hot enough but not too hot, can't afford and oil thermometer, a wooden chopstick is a great idea

    I love that you use stainless steel to fry! I do too but I’m from New Mexico and my Mother and Grandmother think I’m committing a sin by not using Cast iron! These look so good I think I’m gonna make them this weekend.
