SARON CRENSHAW (Guitar & Vocals) SaRon Crenshaw is an extremely talented guitarist who travels the country playing Jazz and Rhythm and Blues. In the 70's and 80's he made his living playing bass for several bands in New Jersey, New York and South Carolina. He has shared stages with talented recording artists such as Lee fields, Roy Roberts, Denise lasalle, Bobby Rush, Jessie James, Tyrone Davis, and Chuck Roberson. He performs intensely at the Blues venues and festivals in the east coast for the past decade and has a large following in the Tri-state area.

GEORGE PAPAGEORGE (Piano) George Papageorge is a blues, jazz, funk and rock organist, keyboard player based in New York City. First acitve in the early 1990s, Papageorge toured, recorded, and co-wrote music for soul singer Mighty Sam McClain and soul-jazz guitar legend Melvin Sparks, among many others. Always delivering energetic performances both on stage and on over 25 recordings, Papageorge has supported the most soulful and driven artists as a sideman.

Shanghai Jazz was opened in summer of 1995 by David Niu and Martha Chang. While studying in a doctorate program, Martha did extensive research on 1920’s Shanghai. During that tumultuous period globally, Shanghai was a destination for those looking to escape the depression in America, the rise of fascism in Eastern Europe, the penal colonies in Australia, among many other difficult situations around the world at that time. With myriad different cultures flooding into the city, the cuisines evolved, a dark and violent vein sprouted, and an incredible music scene developed and jazz was the genre that kept folks swinging in the clubs!
With this as inspiration, Shanghai Jazz was born. David and Martha drove this unique concept for 22 years and counting, as one of the “Top 100 Jazz Clubs in the World” (Downbeat Magazine).
In the summer of 2017, Shanghai Jazz was passed on to Thomas Donohoe with a 29 year career in hospitality, 18 of those years he was a chef, leading award winning kitchens from New Jersey to Montana, Florida, and New York City. He trained with some of the best chefs in the world including Thomas Keller, at the French Laundry in Yountville, CA, Jonathan Waxman at Barbuto in NYC, and Bill Pete at Café des Artistes, also in NYC. Throughout his career, Tom has been focused on and committed to providing exquisite dining experiences to all his guests.
Now, Tom and Shanghai Jazz’s team of culinary and hospitality professionals carry on the tradition, driven by a collective passion to bring good people together with world-class live music, great food, and gracious hospitality to create an exceptionally fun dining experience.

1969 was the year this song came out and I remember it well. It was always on the radio. I much prefer the original Tony Joe White "Polk Salad Annie" than the Elvis version. Being a native Louisianian, I love this song, it's like our state anthem !!!

Tony White’s song has been a favorite of mine. I saw him play at the 1969 Texas International Music Festival, It just him and a drummer. Today I wondered who else might have covered this song. Well, this was a real treat. It’s a more bluesy version but just as good. ❤

This is very good - love it. As a guitar player myself who is still trying to make my band tighter...this a great example of a band that knows what they are doing. The drums and bass are "carrying the song along..the the piano joins in and makes it sound great and then all the guitar player has to do is lay back and throw in a few fun tasty fills....as it was once said - " and thats the way you do it"

A poke is a bag of some kind. When we'd head south, and go to a store, they always asked you what kind of poke you wanted. My dad was from Tennessee and he would plant different kinds of greens, mustard, turnip, ect. In the back yard. When the greens got high, he'd go out and pick them for the dinner pot, after that he'd mow the back yard. He got himself "a mess of greens and put them in a paper poke". Hence, poke-salad.

No. It's called poke salad because it's pokeweed. And it's not really salad, either. It's sallet, which refers to cooked greens. You can't eat pokeweed raw. You have to cook it.
Stephan, I like my explanation better, it's more romantic. And yes, my mom would take the "mixed" greens from the poke and boil them down with bacon renderings and/or fat just like mustard greens. But I think my favourite was when Grandma would go down to the stream, pick a mess of watercress, look it, wash and dry it. Then cook bacon and pour the hot grease over it. She called it "killed lettuce". I love the way that different parts of the southern states leave a different heritage. I know my own people were Irish, Scottish, German, Dutch, and English and the tales differ by which side of the family you visited I hope this knowledge and the tales have been passed down are never lost.

I saw Tony Joe White when he was opening and doing some dates with Waylon in the early 80's. Long live the King of Swamp Rock. See Tony Joe White in 2014 on the David Lettermen show with the late night band and The Foo Fighters performing "Polk Salad"... and I saw Elvis perform this song several times in Chicago in the 70's.
