Hello todays dish is zucchini and squash.It’s a quick and easy side dish that’s ready in 15-20 minutes. Sliced zucchini and squash are coated in salt,pepper,onion, butter and cooked in a cost iron skillet.
Ingredient
Zucchini Squash
Yellow Squash
Salt & Pepper
1/2 of a onion
2 1/2 tsp butter
Garlic powder (optional)
This is one of my favorite dishes! I am growing zucchini and yellow squash in my garden this summer because I love to eat them so much!

I love squash and onions.....my Momma always boiled hers with onions and when they were tender she would drain them and mash with butter, salt and pepper.

Out of curiosity, because I think i missed it, is there a particular temp setting to put the skillet on? I tend to cook everything on medium by default, but wondered if sauté needed to be a "low and slow" or not. 😅

Back in he day when my mom didn't have enough potatoes she would add squash to the fried potatoes to make it go further
My mom would start off frying the potatoes and about the last 15 mins of trying the potatoes that when my mom would add the squash
My mom only dusted the squash with cornmeal no batter it was yummy delicious

I do this dish about the same as you do. I've found that adding a can of fire roasted tomatoes adds extra flavor to the dish. The canned tomatoes are already cooked so that can be done at the end.
