- this is from Marcella hazans cookbook the essentials of classic Italian cooking I got it as a gift from my uncle about 20 years ago and this dish is always by go to because its so simple quick and delicious
ps i did call them noodles once but I do know better and am just bad with words.
Ingredients.
1 pound pasta
Salt
1/3c extra virgin olive oil
2 tsp garlic
Chili pepper to taste
2 tablespoons parsley - Jak na to + styl
Tip: boil the pasta in a much lower quantity of water so that the concentration of starch of the pasta water is higher and the water-oil emulsion becomes thicker and way richer
Thank you will try that up later....
Did this recently with Mac and cheese when I didn’t have milk. I mixed chicken broth, veggie better than bouillon, and way less water. So much flavor and so creamy.
@@somerandomguy9156 you can also try to do not cook the pasta till the end, but remove it from the water and put in the pan 4/5 mins before and add a bit more pasta water in the pan while it finishes to cook.
The result will be a creamier sauce.
I love it !!
W tip
I love practical tips like this, thanks man.
This is an authentic Italian dish, you made it correct and I've had it the last 2 weeks with lunch!
This is an authentic pedantic comment, you made our lives richer for it.
@@minigiant8998 Feel better now, sad troll? Go darken someone else's thread. You and your pathetic insults are not wanted nor needed here. But I'm sure you're used to that.
I never salt the water. It’s a useless waste. Add salt to the noodles when they’re ready. Makes tastewise absolutely no difference.
@@kulturfreund6631The salting the water has nothing to do wirh taste

..........and may I add, a very inexpensive dish to make that is so satisfying
he is like me..."there is no need to grab a plate...why to do extra dishes" and start eating in the pan 🍳 itself 😂😂😂
It caught me off guard cause my mom used to say that all of the time ❤
After a couple of people being really upset that I called the pasta a noodle once in this short video. I would like to inform you pasta is a noodle😮. The dictionary states a noodle is “a strip, ring, or tube of pasta or a similar dough, typically made with egg and usually eaten with a sauce or in a soup.”
And while it’s common to call noodles from Italian origin pasta they are in fact noodles. So for the ignorant people typing in all caps. You’re wrong and I hope you have a wonderful day.
It's weird really.
I'm a totally foody. And thought my DNA has part Italian in it, as I Loooooved everything Pasta.
(Still do, but I have to have a GF diet for my health, so things have shifted. Let's say, I am part Asian now, or Mexican 🤔 well, where ever one eats a lot of rice😂lol)
But my homeland is Germany and there we call any pasta noodles 🤷🏼♀️
It wasn't until l lived overseas that l stared calling Italian noodles pasta.
But sometimes l catch myself in moments that l say noodles instead of pasta.
I mean noodles are describing rather asian type dishes (Where I'm living currently.)
And it is handy to have a differentiation.
But in the end it is all the same fricken thing😂
Some people have too much time, if they are angry about that😂
2) Actually I didn't remember you saying "noodles" I've had to watch your video again.....
Looks like l have to much time as well 😳🤦🏼♀️
😂lol
@@sandramj1812 lol yeah my dad and family is from Germany I grew up calling everything noodles also.
hahah! I can't believe you had to even post this...people are crazy...This looks epic...great idea...thank you for sharing.
😊😅
It's addictive actually... Make it often goes with anything actually
very true
Actually yh
Actually...
hell yeah. i make it then throw some prawns or chorizo in.
Thats true actually
I make this too often, but i always add some lemon juice with the parsley at the end.
When I studied in Italy my class was lamenting to our professor that there weren’t enough late-night “drunchie” (drunk munchie) food options. He said “you know nothing” then made us write down this recipe.

The pasta water is a must!! Been making over 50 yrs
pasta water is absolutely the must !
Why the water?
@@danielmartens156 because it contains the starch of the pasta, and combined with your sauce in the pan just before adding the pasta (al dente) gives a "creamy" effect ! you have to mix it during a few minutes, look at any video, you will see that they add a small amount with a ladle into the pan just before adding the pasta into the pan... in Italian "la spadellata" !
@@tarantellalarouge7632 Thanks very much 😁
Pasta water is important, not because of the insignificant amount of starch it has, but it helps create a sauce by bringing the ingredients together.
Comfort food at its best! ✨️✨️✨️✨️✨️✨️✨️✨️✨️✨️
Garlic and chile flakes is everything, I add lemon zest and 🍋 juice! It's a game changer, having citrus trees is a blessing!
Yummmmmmm! 🍋🍋
For sure!
Same here, I make this all the time with lemon juice and grate some fresh parmesan over top. Those flavors all compliment each other so well.
Lemon takes it to the extra level, I lick my plate clean like a shameless barbarian cos it's just so delicious
I made this exact recipe with Fussili instead of spaghetti. One of the most delicious dishes of all time. Period!
I also love to add some anchovies* (those in olive oil) or Colatura di alici (anchovies' colatura) if I feel fancy 🤤
*If you add them in the oil together With the garlic and chilly, they Will melt leaving the MOST flavorfull oil ever.
On Sundays after a big Italian dinner. at 1:00, at about 6 or 7:00 my mother would cook 2lbs of pasta with garlic n oil just as yurs ! We would eat it just like that with graded Romano cheese on top. Omg, what great memories of my childhood! 😇 Thank u ❤️

Finally, some cheese.
This was a staple on Friday nights during Lent growing up. Nonna made it all the time.

Finally a video where it doesn’t give Italians a heart attack
Except for the fact he called them noodles!

Fun fact: this is actor Al pacino’s favorite food. My grandpa watches a lot of his film when he was young
An older Italian gentleman told me this exact recipe years ago and I've been making it every since. I never wrote down the ingredients, but instead gave it a name I could remember: OG Triple P (olive oil, garlic, pepper, pasta, parsley) 😅😅
That name is genius I like it haha
This name is fantastic 😂😂🤌
@@titaa56 it was kind of a play on him being an OG as well 🤌🏼🤌🏼
You need a squeeze of lemon with the parsley. Elevates it and adds bright tartness to the rich pasta.
I was going to mention the lemon 👍
This is my nonnas comforting food she makes for us. We love it.
One of my favorites. Classic, simple & SO delicious! 😋

I like it with lemon 🍋
Not sure why this is soooo good but it always hits the spot. Always..
The garlic
I am Italian and we call it Spaghetti Aglio, Olio e Peperoncino. We eat it often as a midnight meal between friends or family. Usually during the weekend, maybe after a celebration or the club or just meeting with our loved one, we just prepare to end the fun an hour before going to bed. it helps with insomnia 😊
I’m also Italian and love aglio e Olio. We crack black pepper and salt it then sprinkle Pecorino cheese on top. Yummo
