- What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama "Chef". Recipe below!
Recipe: www.bingingwithbabish.com/rec...
RECIPE
Ingredients
1/2 head garlic, separated and peeled
1 bunch parsley, rinsed
1/2 cup good quality olive oil
1 tsp red pepper flakes
1/2 lb dry linguine
1/2 lemon
Method
Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.
Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.
Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

@@IDK-yx2lr no one gives a fuck about Italians so shut the fuck up.
I’m italian and in Italy this is a pretty common dish. We make it when we are tired, don’t have time to cook something more “complicated”, or when we are with the boys at midnight and we get hungry. I assure you that it’s easy and delicious.
P.S. add salt when the water reaches the boiling point, or you could ruin your pot! Heat spreads easier through solids, so the salt grains at the bottom of the pot heat up fast and in the months the bottom of the pot could be damaged!!
I'm not Italian myself, but wake me up at 3am and complain that you're hungry... that's what I'm going to make
I never considered that with the salt, but I always just try to taste the saltiness of the water at the start to make sure I get it right so I probably dissolve it in good enough.

I found out the hard way that burnt garlic gives an awful taste to your dish.
Max Wicked Yup because it makes it really bitter- make sure you have the oil on low heat with the garlic to avoid it 👍
hehe look up black garlic tare
One of my best food memories involves burnt garlic. The taste is very nostalgic for me, personally. Sometimes the taste of a fond memory is sweeter than anything. Only a little failure, which resulted in greater knowledge, could have made that moment possible.
@@theshmoo560 that's actually a deep and poignant way to experience failure, only a wise soul can appreciate it as such.
just happened to me
College student with zero cooking experience here. Made this today and it turned out very decent! Learn from my mistakes though
- You really have to spend time on thinly slicing the garlic. Even on my closest cuts were still quite thick with a vegetable knife. Scarlett would fall asleep by the time I finished properly doing 6 cloves
- Even when you think you've diced the parsley well enough, do it again 1-2 more times.
- I used too much pepper flakes so it ended up having more of a bite. Thankfully I like spicy food so it didn't bother me, but it might bother you so be careful.
- didn't prep nearly enough pasta. Which is a mistake I seem to make literally every time I make pasta.
Thanks so much for these videos. Even though I can't afford to make a lot of them, this was cheap, easy & delicious!
If you're not too scared to use a mandolin it's awesome to speed up the slicing and getting uniform slices of garlic.
Awesomeness Hippopotamus just smash the garlic with the side of the knife and slice that its more or a mince but its better than having big chunks of garlic
put the garlic under the side of the blade, smash down the side of the blade, and it'll be much easier to peel.
With that method, 6 clove will take less than 2 minute.
The mandolin would be better than smashing it. The thin slices will give more flavor to the oil because they take longer to brown. If you mince the garlic, it will brown a little prematurely. The fact that they're larger than minced garlic shouldn't be a concern though, once browned the flavor is much more mellow.
You can more or less use your thumb and index finger as a meassure of servings for pasta. By making the "all right" symbol (holding your fingers together to form a loop) thats for like 4-5 persons i believe, middle of the thumb is for 2 roughly, at the base is somewhat single serving. At least for me.
"Hey baby I hear the blues are callin', tossed salads and scrambled eggs..."
That little snippet in the beginning really sets the mood for your little show. Babish, I gotta say, you got me hooked. Subscribed.

PsychoGenetiX1 ah, me too.
Ria Dudung I'm pretty sure he can't play it anymore for copyright reasons.
After the 4th time trying to make this dish, i can finally make it without it being too oily and burnt garlic.
Also for anyone making this and it tastes bland, one of the comments in the comment section said his/her italian grandpa suggested having a little fish sauce in there.
IT WORKS! Immediately bring up that taste in the dish! You guys can also cut back on the salt for the fish sauce if you think it's too salty.
This is the video that started my love of cooking. Such a simple recipe that turned out so delicious it made me unafraid of the kitchen. Over the course of the last 3 years I've branched out into all sorts of wild experimentation in the kitchen and I owe it all to you my friend. I'll continue my pursuits and thank you for giving me a lifelong passion to enjoy and share with others.
This is so nice! Congrats on finding a new passion!
She's gonna have incredible garlic breath.
As long as you both eat it, you're okay!
If you make it proper, you won't. The herbs and oil should be complemented by the garlic. The garlic shouldn't overpower the pasta and herbs
Not really, because most of the garlic flavor is in the oil as a result of the slices being fried in the oil.
Would it stop you? Wouldn’t hold me back!

Cream on Chrome by Ratatat
I just remembered this. 4 years ago I started my cooking career and I have never looked back. Thank you Andrew you have changed my life.
My all time favorite Babish video. The simplicity and appreciation of the food is so apparent in this video
The beginning with the garlics in the plastic box was brilliant. There are so many useless kitchen hacks out there that just don't work.
Just put the garlic in a pot, cover with a plate. The trick is for the garlic to beat hard against a hard surface. Plastic is too soft for it to do that. I haven't peeled garlic manually in years, it's a waste of time and effort. No wonder Babish has to pour himself a stiff one.
I know it kinda defeats the purpose of a quick 'hack' but if your doing a lot of garlic 'top and tail' them and then do it, it works really well.
I just use an empty mayo. jar. Works great. I keep one around just for that.
Another option is just to press down on the garlic with your knife.
The main reason you want to avoid pressing down here is because when you crush the garlic you lose those slices intended for this design. You need a harder and smaller container for the shaking trick but it works at least half the time in my experience.
just a tip when cooking the garlic make sure the heat is low or medium not high as the garlic will burn creating a bitterness. But Babish you've done it again great video.
Technically you're supposed to start off the oil, pepper flakes, and garlic while room temperature, so they both slowly come up to temp together. It's supposed to make a more flavorful and aromatic oil.
Yep I just tried making it right now on too high a heat and burnt my garlic and pepper flake which completely ruins the dish. I will try again tomorrow.
That’s not how it works cooking it will take the bitterness out
@@Yapper7781 That's wrong.
@@kyleb704 Same happened to me just now. Had to throw it all out, was way too bitter
The scene from the movie Chef is so subtle yet obvious! The way he gives "it" (the plate! lol) to her is quite telling!!!
I can’t believe I JUST TODAY watched the episode on Netflix where you were given “the carving fork”. What an honor!
So I have a story with making this that isn't a "I didn't like it, but I left out an ingredient" situation. All the ingredients were in place, but there was a toddler in the mix.
I'd made it for my cousin and her husband since they're vegetarian, and I knew it was perfect for them. But with all the mix of flavors popping around, I was concerned their one year old wouldn't be a fan. Now, my cousin and her husband loved it, and for a bit, the kiddo seemed to enjoy what his mom was sharing.
And then, the moment my cousin turned her head, he snatched a handful off her plate and ran away with it, stuffing it in his mouth.
It was my proudest cooking moment, honestly.
Holy shit that's so adorable.

*For anyone that struggles with peeling garlic,* Lightly crush it with the flat of your knife, then start peeling *from the root.* If you try to peel it from the other side, the skin will split and you end up trying to pull dozens of tiny bits of skin off of the clove, where as if you peel from the root, the skin will usually come off in 2-3 large pieces.
Nah, just place them in the microwave for like three seconds. The skins pop right off.
