What I Eat in a Day | 10 Years on a Plant Based Diet

  • Hello everyone! This is an updated what I eat in a day on a plant based diet! I talk about important vitamins/ supplements for a vegan diet and show you easy recipes for breakfast/ lunch/ dinner! I have been on a whole foods plant based mostly SOS free/ nutritarian diet for 10 years. I eat low sodium, little or no oil, little or no refined sugar. I eat lots of nuts and seeds, greens, veggies, and plant based sources of protein like tempeh, beans and seeds and bean pastas. I don't really track calories/ macros.
    Just a reminder/ disclaimer this is just one example of one random day!

    recipe for the cashew mung bean fettuccine:
    8 oz bean pasta
    Sauce:
    3/4 cup cashews
    1/4 cup hemp seeds
    juice of 1/2 lemon
    1 tsp liquid aminos
    2 cloves garlic
    2 tbsp nutritional yeast
    sprinkle of smoked paprika
    enough water to blend to a sauce I think around 1 1/2 or 2 cups
    For the crusted tempeh:
    marinde:
    1 cup veggie broth
    1/2 lemon juiced
    splash of apple cider vinegar
    sprinkle of smoked paprika
    1 tsp liquid aminos
    2 clove garlic
    1 package tempeh
    Crust/ breading ingredients:
    1/4 cup almond flour
    2 tbsp nooch
    1/4 cup sesame seeds
    1 tsp Italian seasoning
    1 tsp mrs dash or other salt free seasoning
    1/4 tsp vegan chickenless seasoning salt. (or regular salt)
    mix together the ingredients for the marinade in a container with a lid or a bag. cut the tempeh into strips and place it into the marinade for 20 minutes or more.
    mix together the crust ingredients in a bowl. Press the tempeh into the crust to coat it. place on a baking dish lined with parrchment paper and bake for 15 minutes at 350.
    while that's baking blend up the cashew / hemp sauce and boil the pasta noodles. when the noodles are done drain them then mix them with the sauce and top with the breaded crusted tempeh. top with more sauce to serve.

      thank you so much that's so nice to hear! the mushroom powder is a blend of dried reishi lions mane chaga and other mushrooms that I bought from this store called grocery outlet!

    Cronometer says TJ’s pumpkin seeds are 9gr of protein…but for a 1/4 Cup. I dunno…that seems like a lot for a serving, yes? But even 1/2 that amt (2T), they are still a good protein source. Poor Colin! Broken Tibia…ooof. BTW…love your flowers/tulips.

    I would not put my spoon in the salade and then in seeds I want to keep good for longer or clean my hands of above the ground maybe I do not love cleaning sooo much but doesn't that go moldy??

    I have a question - i have a multivitamin but even if I eat a plant-based diet and I may not get enough B12, zinc... I do eat lots of vitamin C and other vitamins. Isn't bad to get too much of some vitamins? Because the multivitamin gives you a 100% dose for the day.

      yes it can be bad to get too much, if your multivitamin already has b12 zinc and iodine then you don't need an additional supplement. that's why I like to buy unfortified nutritional yeast/ milks so I don't get too much b12 and other vitamins since I take a multi vitamin already

    So sorry to hear about your boyfriend's injury. No injury in our household but I feel like you do that it's prep, cook, wash, dry... Repeat... Repeat. I also make large batches so I have some freeze ahead meals but it still feels like it's just endless food prep. That said I wouldn't change it, but while it's happening it feels tedious, right?

    I've tried tempeh once and found it very dense and dry...how do you prevent this or is this just the texture of tempeh?

      I think it’s just the texture but marinating it helps! Or try it in a more saucy recipe so it can absorb some of the liquid
