And it really did help him in the end since he had to fight against Tien Ta, who also used two swords. If San-Te hadn't figured out how to beat a two-sword style in training, Tien Ta might have killed him in the end.
When I was younger and I watched this I thought that he was being a dick because of how he handled San Te throughout the movie and because he seemed pretty smug after the first attempt. But now, watching it years later, you can see the visible disappointment on his face when he asked him how many times he tapped him after San Te's second attempt and how excited he is at the possibility of being beaten on the third.
You missed the part where San Te is practicing and cuts and bends some bamboo. It gives him the idea of the weapon he made and he visualises how to defeat his opponent with it.
The first weapon San Ta used might have led him to success if he had kept a far proximity position from the opponent and just made him, his opponent, wear himself out swinging those swords around. Once his opponent got tired, he could move in for the kill. He tried to make the first duel a close proximity match too soon and the knife master took advantage. Notice how as soon as San Ta gets close in the first duel, the knife master makes him pay for it.

I don't know if that's theologically accurate but the movie owns what it's doing. I don't know if actual Shaolin monks do as much stuff with knives in reality.
