      I have worked at a number of restaurants and I can confirm, the ones that have high ratings are almost this bad. Especially the part where they talked about the dishwashers not washing their hands, 90 percent of dishwashers at any non medically based food service establishment in the entire 50 states of the united states wash dishes like that. Fact not fiction.

    I was a food safety manager and scored a 98 on that test...I made major changes based on everything I learned. I caught employees making salads with unwashed vegetables. Trying to cut raw fruit on a cutting board they just used for raw meat ect...people who work with food need to take food safety seriously. These employees had worked in restaurants for years and didn't know those basic safety precautions...this is why I seldom eat out anymore.

      Culinary school starts with sanitation classes. You don’t touch food, if you don’t pass. As far as vegetables, most is prewashed and labeled as such. It’s not hard to teach safe cooking practices. I realized I needed a bilingual cook and lucked out finding one.

      ​@@Nuttyirishman85that's a poor excuse for not washing vegetables. The only thing that is generally cleaned is mixed lettuces, baby arugulas, spinach. Everything else needs to be washed especially bc of e. Coli. As a CIA graduate, with 20+ yrs of experience, working in fine dining for more than half of my career. The issue comes down to low pay and education. Cooks who don't think they are compensated fairly don't care. The most successful restaurants I've worked for had a bonus structure for the kitchen. It creates ownership and positive attitudes. Again as a chef, it's in my best interest to keep costs down , profits high. It's what helps me get the salary I demand. But for other cooks it's very hard to motivate them, especially if they are really just laborers.

      I got sick TWICE eating at the same restaurant before, months apart. It was a Shari's in Washington (it's like an IHOP if you're not familiar with the place). Had severe severe food poisoning one of the two times from eating the country fried steak. Was bed ridden for 72 hours, LITERALLY in and out of consciousness. Also, just recently I bought coleslaw and chicken from Albertsons on Rainbow. The slaw was rotten pungent. Sour and funky, literally rotten. I left a review on Google, go read about it. I am still contemplating if I should contact the Health Department over it.
      My point is. ALL food establishments are NASTY and gross. If you really dig. I don't think it's fair at all that the local news is targeting this pho restaurant. Unless you're dining at a Michelin Starred restaurant, where stricted policies are enforced, all other moms and pops local joints are gonna have issues brother. TRUST me. Yes these violations are serious. However if you aren't willing to forgive some of it as a patron, then just don't ever go out to eat anywhere.

      I agree with you, though most restaurants that have A grades are almost this bad. I worked at one that had almost as many violations as this place, yet they had an A up on the wall. The part about the dishwashers, that is the case for 90 percent of all non medically related food service establishments in the US. The only exceptions incandescents think of are school cafeterias and hospital cafeterias, but that is because the focus of the business is not to sell as much as quickly as possible, and so the health and well being of the people consuming their products is more important. The restaurants that have a high grade are the ones where the health inspector gave advanced notice. The ones with the low grades are the ones where the health inspector came by surprise.

      To be fair this news station is going about raising awareness to dirty resturants in the wrong way. What they are doing now is obviously made to get a reaction. This is a disgusting practice on the part of the news. Instead they could simply report on cases of bad inspections and ask for an interview. I'm sure most if these restaurants would be egar to do this seeing as most of them end up going to back to an A grade. It's also disgusting that the news crew states the restaurants updated reports after they show more than 3 segments. They should state the updated reports at they same time they state the bad reports. It's clear by this comment section that everyone missed that part of the video, this is an incredibly important fact that should not be left until the end

    I’ve worked in food service. You can literally get a guide to all of this when you get your ServSafe certification. Despite what that guy wants you to believe (2:55), there are no mystery rules. They are pretty straight forward. So let’s summarize some of the basics:
    Keep foods that can contaminate other foods separate and below - so raw meat goes below vegetables.
    Keep food out of the dishwashing area and only store and prep food in designated food safe areas.
    Keep food labeled with expiration (raw food) and “good until” dates (for prepared food). (There are guidelines for how long things are good for so, this also isn’t even something you have to figure out on your own.)
    Everyone washes their hands all of the time.
    Use thermometers - despite what you believe, you cannot confirm that food is cooked thoroughly by looking at it or smelling it or touching it.
    Food spoilage can happen without food looking, smelled, or tasting bad - so someone can get sick even if you don’t think it looks spoiled. So you follow the guidelines mentioned above.
    I haven’t worked in food service in almost 20 years but I literally follow these rules in my home as well. I cannot imagine what these food safety violators do in their own homes. 🤢

      My first job was in a restaurant as a dishwasher and prep cook. The place had it's fair share of problems, but they never violated these standards. Most of this stuff is just common sense. You really have to not care about your customers to screw it up.

      Most people's kitchens would never pass a food safety inspection. The only reason any of this is a problem is because, in a restaurant, instead of there being a very small chance of one or two people getting food poisoning, you have a very small chance of a whole lot of people getting food poisoning.

      You learn this in culinary class in highschool or middle school. Hell second years like me where responsible for cooking the food for banquets and dinner party's held at the school. No not a private school. Just a highschool with history longer then most Universities. A public highschool that looks like one you would see only in movies or story books. A fucking Victorian Cathedral looking highschool. I heard on its next birthday they are going to have made unto a private school. As to raise teachers pay, and well keep the building nice.

    Inexcusable. I worked in restaurants for years. Sometimes some of these infractions occur. But others, like the duck carcasses hanging above the floor on the edge of a sink, should never happen. And, all these unsanitary infractions taken as a whole: You are gambling with your health just walking into that place, let alone eating anything prepared there. And that BS about the C-grade sign falling off the wall, please!
    What is shocking is that the township allowed the business to continue doing business.

    I've worked in a kitchen that was super strict about hygiene and enforced rules, then I worked in kitchen where they were lenient and didn't follow basic food prep rules. It's not a reflection of them being "good" people but it is a reflection of their responsibility (or lack thereof).
    I get it doesn't seem like a big deal (not everyone gets sick) but 30+ violations is purely irresponsibly. Food-born illnesses are a real possibility and I would hate for someone with a weak immune system have to pay the consequences.

    One thing I can say after working at a restaurant: no matter how clean the place is, there will always be a breeding population of flies. Most commonly fruit flies. Those things multiply like no tomorrow.
    The rest of those violations were inexcusable.

      english isn’t easy, my parents are viet and struggle with english despite being in america for years. vietnamese people try their best to answer questions but once they start hearing vocabulary that doesn’t make sense, they know they’ll say something that makes them look worse. so they just give up on trying. she even looked around for help with her english before saying she doesn’t speak it well.

      To be fair this news station is going about raising awareness to dirty resturants in the wrong way. What they are doing now is obviously made to get a reaction. This is a disgusting practice on the part of the news. Instead they could simply report on cases of bad inspections and ask for an interview. I'm sure most if these restaurants would be egar to do this seeing as most of them end up going to back to an A grade. It's also disgusting that the news crew states the restaurants updated reports after they show more than 3 segments. They should state the updated reports at they same time they state the bad reports. It's clear by this comment section that everyone missed that part of the video, this is an incredibly important fact that should not be left until the end

    The lady customer complaining needs to realize that thorough sanitation is very much necessary in running a restaurant in the 🏜 desert. Too many roaches and if the restaurants don't get inspected, scorpions and spiders could very well be the next big problem. Use your brain young lady.

    The funny part of all this is that 5 star restaurants just pay off the inspector to keep that A rating.
    I remember working sanitation for a chicken plant that prepared, seasoned and cut the chicken for wendys OTB and many other popular restaurants.
    Sometimes due to time constraints we couldn't clean a machine thoroughly and USDA would look the other way.
    Sometimes it was a bribe sometimes the USDA person didn't give two shits that day and passed shit that shouldn't be passed..
    Thing is folks are just to gullible.
    Go work for the people providing your food and see if you still want to eat at any restaurant even the 5 stars one

    I have worked on different restaurants let me tell you it happens in all stores , and also some restaurants may have an A grade because some health department workers don’t actually grade the whole restaurant like it suppose to be. In fast food restaurants they usually know when health department is coming so they “ fix “ the issues !!

    The rat problem is a tough one. The place I worked at in Nashville, had an infestation that resulted in many hours of extermination and remodeling. Sewer Construction,immediately outside the building drove the rats into the building. We had a full time construction worker extensively working long hours with eventual success. I owe this to our great ownership who spent the money to keep our restaurant safe.

    This is most restaurants… We like to imagine that what we eat is made in a clean perfect environment. As someone who has worked in the restaurant industry, trust me just thank your immune system. Even the inspectors give restaurants way too many chances to fix things and even warn them they are coming so they can fake their cleanliness and compliance.
