浸雞水如果加入小小冰糖,半顆八角,十顆花椒,2片甘草,一片香葉。個人覺得比較好。用小小香料可以去咗一D雪味及一D唔好嘅味道。

鸡切得太好看了,酒楼水准!下次播一下切鸡和摆盘的步骤,让大家学习学习吧。🤩
切雞其實好簡單。雞胸向天,先去雞頸及屁屁,在雞膊頭關節起出兩隻雞翼,之後從俾位切下雞盆骨關節起出兩隻雞髀。
之後雞尾向天,從中間切開雞胸同雞背,(從雞肚垂直切斷肋骨),從雞背垂直破開脊骨後斬件,之後雞胸亦垂直破開後斬件,
在碟上排成4行,之後處理雞髀,關節位切開下髀,上髀切三件,排在4行雞件左下及右下則(上層)。之後處理雞翼,從關節位設成三件,排在4行雞左上及右上則。(上層)
最後切雞頸及雞頭,放在4行雞的前邊。(雞頸排在下層,雞頭放在上面)。
