The shepherds pie is very cool and relatively new dish believe it or not. It comes from the fusion of the British meat pies and the introduction of tomatoes and potatoes to Ireland from Mexico. Another gift that South America gave the world is the chili pepper. This happened around the 1500s. I think it’s a very natural and elegant fusion and really comforting in winter time.
I grew up on this too as my Grandpa was Irish.
This just became my go-to Shepherd's Pie recipe, looks scrumptious!

mmmm spring onions in the mash sounds yum! Mom used to put mashed potatoes on the bottom & top, guess she had less meat to deal with. never used carrots, but with lamb instead of beef, I guess that would taste good. Thanks, I'll try your recipe - watching you always makes me hungry!

We grew up having this in my family also but it was a favourite of ours, no spring onions though. My all time favourite mash is simply mashed potatoes with a ton of cream cheese spread mashed through it.

i made this last night! i used beef instead of lamb and i chucked in a diced red pepper as well - i also didn't have tomato puree or worcestershire sauce on hand, so i just put in a bit of ketchup and hoped for the best. it came out so well! i've actually never had shephard's pie before and i was shocked at how easy it was to make something so delicious. i will definitely be holding onto this recipe (and possibly making it again very soon). thanks so much!

It does look good. I've not made Shepherd's Pie with lamb. AND I do like Champ, so this is a win.
A useful tip I discovered is to use a potato ricer if I was creamy potatoes with no lumps at all.
For Patty's day, I like corned beef and cabbage. It's a special treat I make once a year.

I made this delish recipe and added two rashers of diced bacon to the minced lamb and roughly 3/4 cup of Parmesan to the mash potato and sprinkled a little more on top and it was so hearty and morish...first attempt at shepherd's pie too, so thank you for the inspo!

my mother sometimes mashes up turnip with her potatoes and it's so good on shepherds pies!
Lamb mince is my favourite mince for spagbol or lasagne, its not as strong as beef but stronger than chicken or pork and the oilyness gives a really nice mouth feel.
Donal, those spring onions seem to make the difference in your recipe. I will have a try. Definitely!
As a Welshman I would try it with leek instead of spring onions if I made it. Looks awesome though, nothing like a Shepherd's/Cottage pie when it's bucketing it down outside.
As an Irishman I would totally agree with you. Scallions are a poor substitute for leeks or cabbage for that matter. But then the Welsh and the Irish always get along.
Now a family favourite. I add some of that well known “browns, seasons and thickens all in one go” mixed with water to the mince. Also we need more potato to get proportions right.

Yummy. I love shepherds pie, i use vegie mince as i am vegetarian but i will totally make this with the addition of the thyme and stock usually i just sweat off carrots and onion then add the mince and sauces i bet this will make it even more tasty.

I live in Canada, but I come from an amazing clan of McCarthy's on my mother's side......we love to celebrate St. Patricks Day every year with good food, and maybe a drink or two :)
yay a simplified version of Shepards pie. I plan on making your lamb stew recipe again this year for st.patricks day but I will definitely make this once our local farmers market opens up. we have a fantastic lamb farmer that comes. :)

Yummmm. 😋. The potatoes are like Colcannon, I put chopped cooked cabbage in them and/or kale along with the spring onions. ILL try your way first though, lol then next time I'll add Colcannon on top. Hope your having easy time finding place to live here in Calif. 😊. and you and Sofie getting used to things . Love your channel!

i make my shepherd's pie a bit different. i use mashed sweet potatoes (i can't have regular potatoes). it is different, but super yummy!
I've made a shepherd's pie with turkey before and it tasted just as good. I cut red meat out of my diet in 2009 and my heart health is the better for it with all the seafood I eat as a result of that decision.
anything really with mince and mashed potatoes is comfort food, no matter where you're from

I'm getting in the mood this year with corned beef and cabbage. I love the salty brine flavor of corned beef. The pickling spices are great. I don't know if we make it anywhere near how the Irish make it. We Americanize everything it seems like. How do you make it?

Just made this with 50% pork and 50% beef (no lamb at the store) and it turned out amazing. Although I did tweak it and added a mix of cheddar and mozarella cheese to the mash =)

You could make this with colcannon, which is mashed potato with cabbage and spring onion. I've tried colcannon in O'Neill's, an Irish-themed pub in the UK and it was lovely.

I don't know if they dothat in ireland too, but if you make mashed potatoes, put a little bit of nutmeg in there, it makes such a difference
I've never had a good shepherds pie here in America. I think they use ground beef. I love lamb and I'm pretty sure that's the difference maker. Definitely something I need to try making at home

A lot of groceries don't stock lamb on the regular. My gran used to make lamb for Sunday dinner and would chop up the leftovers for shepherds pie on Monday. Looks delicious Donal!
