I always thought the subtext of these videos was that Donal is a teenager who is amazingly good at cooking for his age. Now I realize he's a normal adult who is old enough to get married. I FEEL SO OLD. *weeping*

Wow! Serious debate on the bolognese! This I should have pointed out is MY version of the authentic spaghetti bolognese- it's a tomato based meat sauce and it's bloomin' delicious! Be nice to each other my friends! :) 💃🏼

+Donal Skehan People take recipes too literally, which is TOTALLY counter intuitive to being a chef. Even the Bolognese recipe we have today is an iteration of some recipe that was probably as barebones as "meat and tomatoes" when it was first invented. So, if you want to get technical, none of you are doing it right either, based on the premise that no one really knows the true origin of the Bolognese. I am Italian as well, and I've seen many an "Italian" naysayer totally screw up the traditional recipe themselves. For my tastes, I use three parts beef, veal and pork. Celery, Onion, and carrot. Tomato paste, and red wine. I throw in a sprig of rosemary and a bay leaf for flavor, and salt and pepper to taste. Personally, I find that a more subdued sauce really highlights the heartiness of the bolognese, so over-abundance of ingredients is a bad move and robs the sauce of its potential. And if you have a problem with my recipe, or Donal's, then you're totally missing the point. A good bolognese doesn't adhere to a specific recipe, it adheres to a mentality, of making good food with few ingredients.

Sure can make "bolognese sound" as one prefer even with differents meats ... but the sauce in the video looks pretty strange mass that steady on the spaghetti :-P
Donal, Sofie i must point out that whatever version of the bolognese you made , I genuinely enjoyed each and every bites of this vid.

Super nostalgic for this kitchen already and Bolognese. Wowza!!
my SB recipe:
In a large saucepan: olive oil, sweat 1 diced onion, brown the mince, italian herbs, pinch of cinnamon, 1 heaped tbls tomato puré, 1 tin of tomatoes, 1 tin whole button mushrooms (for extra moist mushrooms that explode when you bite them), 1 celery chopped 1cm. Simmer for 1-2 hours or until the it's the consistency you like. Easy peasy. I like to add a few bits of basil finely chopped on top for presentation.

If you wonder why Italians get angry when they see this kind of videos on CZcams pretending to show how to do the authentic Italian cucine is because our cucine is a really big part of our culture and we are really proud of it. So seeing someone messing up a Italian receipt is kind of annoying

Nice sauce Donal. My first Bolognese was years ago out of Marcella Hazan’s book. By doing that one I went ahead and did what I liked as a meat sauce. Believe me hers was delicious, I just wanted something somewhat more expedient. Yours fits the bill for sure.

I have a hint to make cutting onions less unpleasant. Halve your onions and soak them a few minutes in a bowl of water then dry them off before cutting. You'll have fewer tears.

There's a Japanese version of spaghetti called Napolitan that has ketchup as a base, and Hong Kong spaghetti also has ketchup in it.

I'm italian and I can assure this is real spaghetti bolognese. As in any recipe you can make some small changes but since that recipe has mincemeat, bacon/pancetta, red wine, tomatoes and onions it is spaghetti alla bolognese.
This Bolognese is everything but authentic...

I replace the red wine with beef stock in my sauce. Actually I replace water with stock in most recipes (accordingly of course 😉). Adds a boost of flavor!
This sauce is anything but authentic italian! In Italy they don´t put mushrooms, oregano, that much tomatoes and garlic into the Ragu alla Bolognese, usually.

I'm from Sweden and all I put into my bolognese is minced beef, chopped tomatoes, tomato purée, onion, garlic, basil, a pinch of sugar and of course salt & pepper. My mum usually adds crème fraiche, but I'm not a fan of that version🙈
