That is why I have my own grinder, stuffers, boning knives, 10 inch breaking knife, meat lugs, 25lb mixer, 50 mixer, buy casings and vacuum sealer. I grind my own burgers, sausage, and cut my own steaks. For my own burgers I buy usda choice brisket and chuck rolls. I buy usda prime for smoking brisket, Rib sub primal, striploin, and tenderloin. Pork belly pork shoulder, pork loin trimmings, and pork rib trimmings makes great pork sausages.
