- Italian cream cake- 2 cups of all-purpose flour, one teaspoon of baking soda ,1/2 teaspoon of baking powder, 1 cup of butter softened ,1 1/2 cup of sugar ,half a cup of brown sugar ,two teaspoons of vanilla extract, 1/2 teaspoon of almond extract ,6 large eggs ,one cup of buttermilk, 2 cup sweetened coconut 1/2 cup pecan pieces ,1/2 cup of walnuts ,equal to one cup of any kind of nuts your choice.
cream cheese frosting- 2 8oz cream cheese ,one cup of unsalted butter ,4 cups of powdered sugar ,1/2 teaspoon of pure almond extract ,two teaspoons of pure vanilla extract, one cup of coconut toasted and 1/2 cup of pecans.
bake on 350 for 30 minutes.

I have tried several different recipes for this cake. Some are more involved, some have shortcuts. I’ve never seen one with brown sugar but that sounds just like the thing for ME! Yum!!

Watching your videos I’d say you are chef in a top restaurant where presidents have dined! I had a friend who was a former top chef like that and he opened his own restaurant in my city.

Good afternoon Chef Charles, I have a question, could I substitute cake flour for the all purpose flour in this recipe? Will the lower protein content of the cake flour result in the walnuts and pecans settling in the bottom of the cake layers. I really like cakes made with cake flour, they are lighter and have a more tender crumb. Thank you for taking my question.
Yes you can substitute your flour and for your nuts roll them and flour before adding them to your batter in that will prevent them from floating to the bottom

Yes the recipe is very moist the longer you let it sit the moisture it gets.two or days.
