My Mom, who is in Heaven going on 25 years ago, absolutely loved for me to make this cake. We called it Italian Coconut Cake, and it was truly delicious. I had forgotten all about that cake. I will say that I didn’t have it in my heart to make that for quite awhile after my Mom passed.
Thanks for jogging my memory about this cake. Shoot, I think I’ll make that this Christmas in memory of my dear Mom.

I agree on using a white cake mix. I actually don’t like a yellow cake mix except for in my rum cake, I use enough rum that it doesn’t have to compete with the cake mix. I’ve got to make this cake but I prefer a layer cake over a sheet cake. I will definitely be making this for my daughter in law. She loves them. Thank you Tammy and Chris. I agree with you Ladysmith, about the yellow cake mix for rum cakes. I make rum cakes for Christmas. I use the yellow cake mix including French vanilla pudding along with the rum. It's really delicious, I make mine in a bundt pan.
@@sharonroberts397 I make mine in a bundt cake pan too. I think they look pretty. I’m thinking of making one for one of my Thanksgiving desserts. I use 1/2 cup of rum in my cake and another 1/2 in the glaze. They’re so good. I’ve made them with Jack Daniels too. I prefer the rum. Have a blessed day.

That cake looks scrumptious! Yes box cake mixes have gotten so chincy it's aggravating. From experimenting a bit, I have found that if you add about 1/3 cup of self rising flour, whatever flavoring your boxed mix is, if it's flavored, 1 TB of oil or butter, 1 Tb of sugar and 2 Tbs of whatever liquid your box mix calls for, mixed all together with the boxed mix and ingredients called for, you get a cake that is a normal sized cake like when ALL boxed cake mixes were 18.25 ounces and made a decent sized cake.

Awesome!!! The first cake I ever made was my grandmother's three-layered Italian Cream Cake. I was 16. It actually turned out well! It was a lot of work (at least for a teenager lol) so I never made one again. I really need t,o do one soon!

Throw a little rum in the icing for an adult only cake! Yum! But make also a kid version with rum extract. Christmas is coming soon and I am so making this cake!❤❤❤❤❤😊
Buy yellow cake mix and french vanilla instant pudding. Follow the instructions on the back of the cake mix and make yourself a rum cake. I make Bacardi rum cake every Christmas put it in a bundt pan and bake. Make the glaze using rum... Google Bacardi rum cake and it'll give you the recipe... I also use chopped pecans on the bottom of the bundt pan, then when you inverted over you've got the pecans on top! It's out of this world delicious!
I have not been able to find a whole buttermilk in my area. 😮
You can make your own just add one tablespoon of lemon juice, or 1 tbsp of white vinegar to whole milk or 2% milk, Stir It Up and let it sit for 5 or 10 minutes and you've got your own buttermilk

I have been making my Italian cream cake from scratch for years, I hate separating the eggs, this is so much easier I’m definitely going to give it a try! Question; what type of cake mixer is that? I love the way it opens from the top. I have a KitchenAid, but it can be difficult to maneuver, and it is so heavy.

I can't find buttermilk in my local supermarket.
Hello. You can make your own buttermilk much more cheaply and won't have to worry about finding it in the stores if you make it. My recipes come out fine. Take 1 cup whole or 2% milk and add 1 Tbsp. lemon juice or white vinegar. Mix well, set aside for 5-10 minutes. So, 1 c milk to 1 T vinegar or lemon juice. Scale up or down. You are good to go! :)

I was just wondering why your printed recipe says to be on medium low for one and a half minutes and you said 10 minutes on your video, I hope this turns out I couldn’t find the icing recipe had to watch the video and write it down it says I have to look in your book for that recipe, just kind of disappointed!
