King Prawns with chilli, lime and garlic marinade cooked in a vegetable basket with a Weber Master

  • This must be one of the easiest and quickest seafood dishes ever. Top BBQ chef Richard Holden demonstrates on the Weber MasterTouch charcoal BBQ. Make sure the king prawns are the freshest. Combine the juice from 1 lime with a couple of grated garlic cloves and a finely chopped medium strength chilli. Place it into a freezer bag, add a kilo of prawns and massage the prawns until they are all evenly covered with the marinade.
    Heat the BBQ to a medium/high heat with the large Weber vegetable basket over the direct heat; also pre-heat the vegetable basket. Tip the marinated prawns into the vegetable basket and spread out. Do this as quick as possible as the longer the lid is left open the cooler the BBQ gets. Put down the lid and leave for a minute, minute and a half. Turn the prawns over, they should have started to go pink. Give them another minute or so on the other side then check to see if they have gone completely pink. Make sure you don’t over-cook otherwise they will end up rubbery; take them off as soon as they are pink.
    Serve with a bowl of good quality mayonnaise. This makes an excellent little dish for your guests to pick at while they are waiting for the main event.
