    Hi good day Mrs. Stephanie, I just made this blueberry cornbread recipe and it came out excellent, what I did different is to add a handful of walnuts. I am not a baker at all but I wanted cornbread for breakfast and I told myself I can follow your steps; I can gladly say it came out excellent. Thank you very much.

    Made these yesterday and there delicious.I like how the measurement are given in American and then given in British.Have made quite a few things via joyofbaking and nothing disapoints

      American and metric...and thank you for the metric and recipe. FYI There are only three countries that don't use metric: Myanmar (or Burma), Liberia and the United States. Every other country in the world has adopted the metric system as the primary unit of measurement

    Thanks for the easy recipe. I made a few changes : frozen blueberries, replaced half of the milk with Greek yogurt, used 1 tsp baking powder plus 1 tsp baking soda. The result was very good, my family loved the muffins!!

    I made these for a Friendsgiving and they came out perfect! Added some vanilla extract to one batch and some instant coffee grounds to the other. Wish I had watched the video first, would’ve done orange zest for the second batch. Thanks for a solid recipe!

    This recipe is so awesome. The great thing about this recipe is that you can use absolutely any kind of flour in this recipe and it would work. I’ve used whole wheat flour, corn meal of course, gram flour, almond flour, and even ground up lentils. One of my favourite breakfasts for sure. I even skip the sugar most of times and add more salt instead and add vegetables instead of blueberries. This recipe is so versatile!

    These muffins are so yummy. They are so soft. It is the best version of any kind of cornbread I've had. I made them with strawberries instead of blueberries and added just 4 tbsp sugar. Can't wait to have more for breakfast tomorrow.

    While both are made from dried corn, cornmeal has a much coarser texture. Cornstarch (corn flour) is very finely ground.

    I used corn flour and result is so cool, but one more secret I added wholemeal flour half with corn flour mixed together and the texture crush and finely

    Feel like baking this @ 11.15pm since processor is not needed. But I don't have cornmeal.. Thinking to try to replace with corn flour, not sure if ok..

    Excellent recipe. I tried it yesterday. Very easy to make and perfect outcome.
    Is it possible to bake it as a cake. I have seen a similar recipe baked in 8x8 pan. It would be great to see your recipe revamped as a cake. Thank you for your tutorials.

    Yes, you could either leave them out entirely or replace the blueberries with something else.

    @Joy of Baking - Stephanie: I love making muffins but I have an on-going problem - either my muffins don't get that gorgeous "muffin top" or the "muffin top" falls as soon as they come out of the oven!! What am I doing wrong??
    Btw, those/your Blueberry Cornbread Muffins look so very good!! I'll be making those soon so thank you for the recipe! :-)

      To get a muffin top you need to fill the muffin cups quite full. If all of your muffins that you bake deflate, maybe it has something to do with your oven temperature. You could buy a free standing oven thermometer to double check your oven's calibration.

    Very convenient that you say everything in grams too! Only one remark, we use grams for blueberries too, not ml :) but apart from that, keep up the delicious work!

    Hi Stephanie, Look My Mothertongue is not English and i'm really confused about what COrnmeal is. Could you please try to explain it to me?
    Is it some kind of flour or is it something that cooked looks like smashed potatoes? (polenta in spanish)

    sometimes u have 'ml' for herbs in recipe,( eg 250 ml of parsley) , that means u can simply put one cup of parsley,( as 1 cup = 250 ml)

    Okay, because my batter,was thin, they took 25 minutes to bake. Texture came out perfect. Muffin not sweet. Perfect with a cup of coffee or tea for an afternoon pick-me-up.

      Typically jumbo would take around 5 minutes additional baking time. But it depends on your oven,

    Stephanie, I think you would be the person to answer my question: Why is it that home-baked goods never look as good as industrially baked goods? Like, the bread on crusts are thicker, or cakes tend not to be as silky smooth, even in pound cakes? and why are store-bought pound cakes whiter in color inside? Please answer if you know!
