      I always weigh my ingredients. If using cups for measuring the flour, spoon the flour into the cup.

    Hi Stephanie, I love your recipes and can always bake with confidence when following your recipes. 😊. I have a question - How can I make the browny more chewy? Fudge and chewy brownies are my favorite kind of brownies. I can make the brownie fudge but not chewy enough. I tried beating the eggs and sugar for 5 minutes instead of 2 minutes. That didn't help. Please suggest what I can do to make the brownies chewier.

      I find you can adjust the texture by playing with the baking time. And also by whether you store them at room temperature or in the fridge.

      It depends on the recipe. If there are acidic ingredients in the recipe, baking soda is normally added.

    I made with thin stainless steel pot, and wooden spoon. No thermometer, I cooked until it was color of peanut butter. Turned out great . Stir constantly and move pan around a lot .

    Blackberry is my favorite of the seasonal berries. It seems like raspberries would be a good substitute in here, but why? Blackberries are the best.       An easy way is to weigh your eggs. In my recipes one large egg weighs 50 grams out of the shell.

    Hello Stephanie! I just wanted some help as to where I went wrong today. Everything was going fine until I added the cream back to the cream cheese mixture, it just wouldn’t thicken even after leaving in the fridge again, and then after whisking for a while it inevitably split. What can I do differently? Many thanks :)

      Not sure why that would happen. Do you live in the States? If not, it may have something to do with the ingredients. Because beating heavy whipping cream (35 - 40 percent butterfat) into cream cheese should give you a thick mixture. As far as splitting, that can be caused by over beating. Beating in a little more cream should smooth it out.
