To be fair, the mg star fortresses were designed for mopping up stubborn garrisons that have very little or no anti-air firepower left so their deployment in TLJ is more or less misused, moreover, they were quite old by the time of TLJ and most of them were modified for non-combat purpose (cargo, fire-engine, deep-space exploration...etc)

The Cloud Car looks to be inspired from the F-82 Twin Mustang. That was basically fusing two P-51 Mustangs together. Unlike the Cloud Car, the two pilots of the Twin Mustang could either fly or operate the weapons alternatively. The reason for fusing the two fighters was to increase range, which it did. It actually could fly from New York to Hawaii.
One improvement to the Cloud Car is to allow both occupants the ability to pilot and control the weapons. A much more practical solution is simply cut the Cloud Car in half and make each fuselage its own vehicle.

Just a heads up, the delta 7 DID have shields. It was the eta 2 that didnt have shields. Also, the jedi didnt consider either ship a bad combat vessel or unsafe. In fact they jedi mainly used them because their force skills allowed the fighters to be piloted while minimizing its shortcomings.
Also, the falcon's failing hyperdrive was a "write-in" and used to give the ship character. It never had structural issues. It was modified to do exactly what Han wanted it to be: able to either out run anything bigger than it OR outgun anything smaller.
About the bwing. The cockpit spinning feature was able to be locked in place by the pilot, negating the issue of spinning... The REAL issue with the b-wing was that it was costly to maintain...THATS IT.

I honestly think the MG-100 Star Fortress gets a bad rap for no reason. What happened in the space battle in episode 8 was a fluke. A TIE fighter just happened to crash inside the ship just when it opened the bag doors which caused all the bombs, strong enough to blow up a dreadnaught, to blow up simultaneously. Then there was a domino effect of debris hitting the other ships nearby. The ship itself packs quite the punch and has multiple gunner positions to protect it. It’s the pilots fault for flying so close together, the ship really isn’t that bad

First impression of the SF-17 in theatre was the completly impractical idea of gravity-dependent ordinance for use in limited or zero-gee environments. I know the excuse for this abomination is 'magnetic guidance' to put bombs on target but there's no chance magnetic-based targetting would get those bombs out of the racks in the first place. All in all, while I can't help appreciating the appealing visuals and flair of The Last Jedi's ships/vehicles, it still epitomises the expression, 'style over substance.'
