jokes aside, there's some truth in what uncle roger is roasting. normally u don't use olive oil for fried rice/noodle or whatever u re frying. in high heat. spring onion is the last step in fried rice. period. and the tofu is just weird. why add tofu to fried rice? adding water straight from the tap in the middle of frying right is just plain weird and wrong. what was Jamie oliver thinking man.
For some reason I really hate the taste of uncook unions, so I always make sure I cook the hell outta that🤣

@Keren Yu cut up the spring onions and separate the green end from the white end.
White part goes in first because it cooks like onions.
Green part goes in last to stop it from wilting.
Also yeah, the tofu thing is just bizarre. If anything fried tofu would probably be great for fried rice, get it cooked through to give it a little more firmness and texture. But Jamie Oliver wants his dish to be "healthy" which apparently means sacrificing what makes it good.

Why olive oil is a white people oil: Chinese cooking (especially fried rice) usually requires high temperatures which often go beyond olive oil's smoking point. Besides that, olive oil's flavour doesn't lend itself well to most Asian cooking - which makes sense, since it originated in Europe anyway.
Don't take it personally 1st of all its just a joke 2nd Asian usually don't cook with olive oil. They mostly use soyabean oil.

@@LunaMisake Most Asians use a combination of many type of oils and which type of oils is region dependent. Palm oil isn't a traditional oil for Asians, and we definitely don't use it a lot, palm oil (although was first used thousands of years ago originated from Egypt) is used in processed foods and fasts foods and Indonesia took advantage of this fact and created the world's biggest palm oil plantation to the expense of the rain forests. As Bvk Stha soybean oil has been the most traditional throughout east and southeast asia.
Agree, tried Olive Oil once. Did not end well. Fried Rice smells like it has burnt Floor Wax.
jamie had to add water because all his olive oil is burnt away by then. and probably noticed his rice crisping onto the pan. olive oil may be fancy, but you don't use it for everything.

The main reason to ever add water to stir fry is because you want to steam vegetables. I have actually seen pro Chinese chefs do it. But not to fried rice; just meat and vegetable dishes. Should not have been done here.

And underneath this persona he has a respect for cultures and wants to learn new good stuff from other people. He is too hyper that's why he has no patience lol I find him funny now

This tofu doesn't need refrigeration. Very soft. I have used it to make lovely smooch excellent chocolate pudding. That being said, I imagine getting some in your mouth in Jamie's recipe would be a bit like have a mouthful of snot. Not a tofuish type of experience. Just my experiance

as a Filipino who cooks fried rice regularly, i agree with Uncle Roger, Jamie Oliver murdered fried rice too many times literally. MSG can be replaced depending on someone’s preference but the other things he did ŵere out of this world, In the Philippines we only mix tofu when its made as Taho but personally i still prefer it unmixed.
I agree with you. I was cringing while I was watching the original video of uncle Roger. Jamie Oliver completely destroyed what we, Asians, consider fried rice to be. Not only he murdered fried rice, the way he broke tofu into pieces and putting it in fried rice made me cringe badly. The fried rice he made is too wet.

olive oil just burns too quickly. low smoke point. not suitable for high heat cooking. you'll just be wasting it if you use it in most asian dishes.
And the flavor of olive oil weren't compatible with fried rice.
I only tried olive oil when i was like 20.. i watched a lot of western cooking show so i was expecting it to be really good..

This is not by any means the only dish Oliver has ever messed up. UK is the only place he could ever have gotten famous; any other country would have laughed him off TV.
Vegetable oil and rapeseed oil that’s what I tend to use as it doesn’t burn when you cook with it on an extremely high heat.Never use olive oil because it will burn and it doesn’t have the right flavour which is perfect for Asian Wok cooking.

Jamie Oliver really messed up his cooking this time. I mean a professional chef can’t even cook simple fried rice.
There were some speculations (and even a song written about it) that egg fried rice is really hard to get perfect. So it's no surprise that a non-Asian chef messed it all up.

Damn, I like Jamie Oliver and have 4 of his cookbooks! But after watching this, I feel compelled to crumble and bin them, the way he mistreated the tofu. What he did with the friend rice (looked almost burnt, TBH) and the tofu were sacrilegious, at least to us, Asians!

It's actually funny about the sriracha. It was created here in the US in the 80s but growing up my family could only find it was at my Lola's ( grandmother in Tagalog) international store or only in international stores all together for years. But then it suddenly became a craze when I was like 15 years old.

Something about Uncle Roger and his background why Malaysian knew Chinese culture.
Uncle Roger is a character created by Nigel Ng, he is a high educated modern/young Malaysian-Chinese that became comedian in UK. The character Uncle Roger is base on a stereotype of a "not too high educated" old time Malaysian-Chinese old people, not Chinese from any part of China. U can't find any China-Chinese talk like that, they have totally different accent.
Malaysia is a country rich with multi-racial & multi-cultural similar like USA, people there was mostly from other countries like Indonesia, China, India (and many more), these 3 main race's ancestor were all from other countries, they living in that land for over few hundreds years. Only Orang Asli (Native residents) was the original people that already lived in pre-Melaya before everyone else. They were all here in the land when independent day happen, they form Malaysia the country together, and they all preserved their own culture.
It looks like Mr. Jamie Oliver forgot to put the MSG into the egg fried rice concoction, and that is why Uncle Roger is very pissed off. Anyways, good reaction video! Will definitely look forward to the next one!

I Remember ppl using broken up Tofu as an egg substitute.
Knowing that idea makes adding Tofu like that to egg fried rice is just bizzare.
Ramsey did by sauce pan for cooking rice for fried rice but he didn’t stuff it up. He is also aware of rice cooker as he made nasi lemak in Malaysia and came in third.

I'm from,hongkong. how do I cook egg fried rice ? first of all, I used overnight, or leftover rice. I add cooking oil to a wok, break two eggs, into the boiling oil,then some meat ingredients, like cut or minced pork, diced sausages, whatever, sir fry them with the rice, lastly add some chopped opinion into the whole. it done in about five minutes. salt or msg and soy sauce can be added.
it is the dish I can do.
That's how we do it here in the Philippines too.

@@nykv9101 Yes, we cook garlic first thing too, Uncle Roger's recipe is close to Filipino Style Fried Rice (Garlic, Rice, Sausage/Meat/Fish) difference is we really don't add in the egg, we top it or put it as side on same plate. Egg cooked as preferred (sunny side up, fully cooked or scrambled).
I usually put garlic first, then add the egg/leftover shredded chicken/meat/sliced bakso(meatball), then soysauce let it a little bit caramelized, then leftover rice

You can never go wrong with vegetable oil in egg fried rice. Just skip the olive oils and chilli jam, use day-old refrigerated rice, vegetable oil (my family uses cabbage brand oil), eggs, garlic, some soy sauce for the salt, sesame oil for fragrance and spring onion for garnish. Optional: any stir-fried meat of your choice, add in after the garlic and before the rice. I also like to add some oyster sauce to my fried rice, but some people don't like that.
