Shit, I"m white and had a heart attack the first time watching Uncle Roger's reaction to this video. BUT I'm also a chef (an actual chef, not a Jamie Oliver) so there's that.
Uncle Roger will always say Use Rice Cooker! Rice Cooker is the best way to make rice!
So part of the reason you don't and SHOULDN'T use olive oil is cuz olive oil doesn't do well at high temps and will break down faster than a neutral oil. Since olive oil has a lower smoke point, when you heat olive oil to that point, all the beneficial compounds and healthy fats in the oil will start to degrade, and form potentially health-harming compounds and at that point it's just not safe to eat/use anymore. Also, olive oil has its own flavour and its not suitable for fried rice or any kind of asian dish really. Neutral oils are always better for asian foods.

Coconut oil is okay. But you want kinda smokey oil for fried rice like vegetable oil or peanut oil. Olive Oil is too gentle & soft for high heat fried rice in a wok.
Go get a wok and let the wok do the talk.

For Tofu in fried rice. Some places do but most common is chicken and steak in my opinion
I have never see tofu in egg fried rice. Or any fried rice for that matter. Tofu has too much moisture, it would make the fried rice soggy!

But egg fried rice come from asian culture, so America cant influence the truth about a food they dont own. plus both of them arent even from America nor live in America so what are u on about, like where you get the America part from
You need to understand Chinese restaurants in America doesn't qualify as authentic Asian restaurant. Most recipes are to suit American taste.
