Gordon went out, learned about the dish, took care to understand what makes it work, both culturally and mechanically, and went the extra mile to make it authentic and good. Id honestly believe he could talk at length about the differences between egg fried rice traditions of multiple asian countries. And what makes them special.
Jamie heard "egg fried rice," looked up the wikipedia cliffnotes, then said, "yeah. Im smart, i know how to make rice with spicy shit in it," and proceeded to remove any of the cultural heart of the dish, add in tofu for the sake of still having something recognizibly "asian," and then fucked up the basics anyway. I doubt he knows anything other than "its that asian egg rice."
Gordon has let his fame and skill humble him. Jamie let his fame and skill make him arrogant.

not even just the cultural heart, some of the steps just dont make any sense for someone who knows how to cook. like you just dont start by destroying green onion with any dish. you dont generally add water when frying something, much less rice. you dont add tofu to a dish you want to be mostly dry. etc etc
Gordon utilizes his fame and money in order to travel around the world and to learn even more about cooking. That’s why he’s so good brah
He’s always striving to improve and learn
Gordon learned about culture before making the dish. That's great.

I decide to stop watching Jamie's cooking. Professional chef made this low level mistake.I don't know how many other dishes he did wrong. At least Gorden knows how to cook rice and learn other culture's cooking.

Jaimie had a video on marinated bbq chicken or smth once and the producers mistyped 10 grams of salt as 100 grams. I dont think it's been corrected, all the comments are just angry people whose chicken turned out way too salty to be edible

For basmathi rice you drain it....correct
in some parts of India, we mainly eat parboiled rice so we have to drain it but we have different tools and specific process to do that definitely not a colander. and for biriyani, the rice has to be drained (I'm not sure if drained the right word), well there's a specific process to cook the rice.

He add water to the rice to reduce the heat to avoid the rice getting burned. Why? because his olive oil has burned out. Look at his saucepan before he add water, the pan has dried out while it still in high heat. Olive oil only suitable for low-heat dishes, while fried rice always use high heat. He can be bothered to use Olive oil in all over places while there's variety of vegetable oil that can be used perfectly on fried rice.

that only applies to extra virgin olive oil, but if you process the olive paste to get the rest of the oil, or use a blended olive oil it can take a higher heat

I thought Uncle Roger was just exaggerating till I saw myself how Jamie did this cooking. Bloody hell ... put water to the hot frying pan? Does he know that fried rice needs super hot medium (e.g. hot wok) so that every grain gets the fire? This ex Naked (blonde) Chef thinks mushy wet egg fried rice is delicious .. Yuck yuck. If I were at his restaurant being served egg fried rice like this, I might flip the table upside down, because I know any street in Southeast Asia serves much better fried rice at much better price!
Chef de Partie here. Jamie got a french fine dinning chef training. As a cook who also works in a French * restaurant I can tell you why he does basic mistakes. In 4 years training in that restaurant I made rice about 7 times, and when I did it was for staff food only. Yes I made about 10 different versions of a hollondaise sauce on a regular bases and even do werid things like blood duck BUT a lot of chefs with the classic French training get arrogant and fuck around with others cultures food and make a spin of a spin of a spin. Jamie Oliver is sadly only the tip of the iceberg when it comes to this. Love outta Germany. Peace

He's not actually a trained chef, learned on the job at the family pub and got famous on TV. He can cook a bit of course but not trained.

some chinese chefs do add a touch of water near the end to soften the rice before serving BUT big but here not from a tap, room temp and usually about half a ladle for a decent sized wok of fried rice. The Wok is already at a high temp so it quickly flashes to steam. Not something I would advise unless you are using a wok on high temp.
No, they dont. The thing with fried rice is thay the rice will instantly become sticky and lumped up when you add any liquid into it and then you'll need to take extra mile to evenly stir to dry up and break the lump. Be it soy sauce or sweet condensed one or in this case the jam and the damn cold tap water.
@@MrCliverandy Yes we do. There are so many varieties of fried rice, including those with soy sauce only. The key is temperature. You don’t pour liquids into the rice, only from the side of the wok. You want the liquids to evaporate quickly leaving the color and the fragrance only.
Some are using seasoned soup instead of water. It makes much more sense to use seasoned soup.

You two are so cute! I love your reaction. I’m Taiwanese and I really shocked by the way he cooked the thing he called “fried rice”. It’s ok for him to cook rice like this , but he can’t say the dish is fried rice. There is no fried rice like this in Asia. BTW, some Taiwanese CZcamsrs had tried this receipt, and it’s end up disgusting ...for sure lol. Soggy, slimy due to the water from tofu....

All jokes aside, you don’t need a rice cooker, just use the legendary finger rule to cook rice. Your rice will turn out just fine.
@Kay C. I am merely saying that to get the right rice texture, the most important thing is to get the rice:water ratio right regardless of the cooking tools. For many non-asians out there who don’t necessarily own a rice cooker, the finger rule is a better indicator to get that ideal ratio instead of the cup-measurement. I hope I get my message across.

Heres the steps to cooking rice. my grandma teach me. shes japanese.
1) pour lets say 4 cups rice
2) pour in water to clean the rice 4 times until the water is clear, if its not clear the rice is still dirty.
3) pour in water to the first knuckle near your finger nail, then wipe the bottom of the pan cause the rice cooker will burn the rice or the rice wont cook.
4) press start/cook rice on rice cooker and wait for it to cook.
wow... that's either the rice your granny use is of low quality or she is a clean freak(after 3 washes the natural rice fragrance and taste will be gone). cleaning is only 1-2 washes and steps 3-4 is exclusive to rice cooker no.3 step is actually not to cause grounding and electrocution.

Draining means.... when the rice is half/three quarter cooked, drain the rice water and then simmer on low heat for sometime and the rice is then done. Some people think they drain so the rice is less sticky but all the rice taste and goodness is removed. Best to cook with the right amount of water so there's no additional water.

And the first time I heard him saying "Thats so white!" or "You are Coconut: You are outside brown, but inside white!" or "so stuuupid, just like white people stupid!" I looked in the same way you did like " Whaaaa did just said? :D IS he allowed to say so ? HO HHO HO !!! " and then I looked like "omg, this poor guy is going to get so much into trouble". However, why not doing the same white people do? The general cooking rule about the same temperature water: There are some exceptions.
In Spain, when cooking beans with tocino, you give two to three times a bit of cold water, to cut the boiling. If you don´t do that, the hot water comes between skin of the bean and the bean.
The bean is not soft enough yet to absorb the hot water and the skin may come off. This doesn´t happen with young beans.
