- In this video I show my process of making Boudin. I do not reveal the seasoning I use in the video. look below for the classic recipe. and use my method and you will not be disappointed.

Classic Boudin Recipe
10 lbs pork roast (pork butt roast works)
4 medium onions
5 shallots
2 bell peppers
3 bunches green onion, chopped fine
1 bunch fresh parsley, chopped fine
1 tsp white pepper
2 tbsp salt
1 1/2 tbsp black pepper
5 tbsp cayenne
9 3/4 cup cooked rice
1 package of casing

I learned that if you boil boudin you can't stuff it tight. The rice will grow and burst the casing. Your recipe is the most authentic on CZcams. I'm a technician for a sausage machine company and have seen many boudin kitchens. I have also learned that when you leave Louisiana no one knows what real boudin is. Some people even make it without rice.
I love boudin also. I remember watching my grammas make it when we visited family in Lake Charles. Love my heritage.

I could almost smell that boudin from here in GA. Liked what I saw. Meat cooked in the pot all the way to end. What's next on the menu ? Maybe cabbage rolls stuffed with boudin..peaches on the side and corn bread..

I still remember the smell of the cork lining of our old ice box. It was primitive, but we ate real food, with no soy powder, fructose syrup, gelatin, bleach, GM anything, or preservatives in our fresh cooked food. You can still eat that way…..if you are willing to cook.
I actually followed this recipe to a T. I used the the sausage stuffer attachment in my kitchen aid stand mixer and it came out great! My family is from lake Charles and good boudin is impossible to find where I live now. I tweaked some of the seasoning amounts for my own personal tastes and it came out fantastic. Thank you so much!
I really do like your recipe nothing fancy you keep everything simple and I really love! The fact that you don't put your meat in a grinder you cook that sucker down till it falls apart I like that that's the way I like to cook thank you!
I learned to love cajun boudin when I was at Ft Polk La. and I was dating a sister of a buddy in the Army. My buddy and I would take off the weekend go to folks place along the bayou in south Louisiana. Every weekend they had great cajun food and his mom and sister would send some smoked boudin back with us. "Laissez les bons temps rouler!"

You sir, are the man! Been cooking for over 40 years, all cuisines. Been trying to recreate then awesomeness of Cajun food/recipes while, trying to master Jamician jerk. (I lOVE good, strong flavoring.) Your video at least, but me in the "ballpark" for authentic Cajon/Creole food. A sincere thanks again!

Fantastic! Finally a video that shows what sausage really should be. In Slovakia, this would be called Jaternice, and we use barley instead of rice, sometimes buckwheat or a portion. One thing is to cook the grain or rice in broth from the bones and trimmings of the pig. The fresh onions at the end is a great idea, maybe some oregano or thyme also
Oregano should NEVER EVER be in boudin, NEVER.

Hey Heath--Had to tell you that this NC man finally got the info I needed to make some wonderful boudin. I got alot more flavor by following your technique than anything on youtube !! I so much appreciate the time it took to make the video ! If mine came out that good, I cant imagine how good yours taste !! Love Boudin. I haven't had it since I was in Louisana about 13 years ago. I miss it and I live in Wisconsin. Hard to get it, when you live this far North.

Fun fact: boudin in Louisiana (both white and red) used to never have rice in it in the old days and was like the one in France. Rice showed up when Louisianians of spanish descent that used to make a blood sausage made with pigs blood, pork fat, onions and rice from Spain called morcilla married into French speaking families of French and Acadian French descent in south central Louisiana and those families adopted the rice style into their boudin (in both white and red types). Those rice based boudin types then would later replace the non-rice types in the rest of Louisiana and today it’s very rare to find boudin of white or red type to be made without rice.

Oh man....oh man.....Being from (gasp) up north, boudin was something I could only read about in cooking-type books. Then my wife's gig brought us to Houston, and I realized that I'd be driving I-10 (& 12) thru Louisiana...needless to say I must have stopped at 6-10 places along the way, from large almost touristy places just off the exits, to old block buildings way off the main drag, mostly around Breaux Bridge...and man was I not disappointed. It has become an absolute fave, and your video laid it all out just great. Kudos, looked fabulous.

Been many years since I had it.. the thing I remember the most is that it is different everywhere you go ..one part of Louisiana they have one way the the other side of Louisiana it's a different way.. but it is all good.. fresh or smoked..loved it.

Absolutely FANTASTIC!!! Damn, I love me some Boudin. Even though I'm from the hills of east Tennessee, and have eaten a lot of hog sausage, this stuff , with them rice, ononioynz, Dem livvahs, dem seasoninns, all dat pepper, all dat pig meat.....It just ain't nothin' no darn better than BOUDIN. I love that stuff......especially with about 20% crawfish tail meat down in there too! ( With a little more cayenne, just for flavoring up all that good stuff.)........YUMMMMMMMmmmm
