    My grandpa was from Louisiana and he always watched this show. I remember grandpa being a slight “hater” too. As he watched Justin whip up his Cajun dishes, he could be heard saying to himself “I bet that don’t taste like nothing!” Then he would wave his hand 😩😩😩😩. Grandpa is gone now, but I watch Mr. Justin every now and again to bring a little piece of him back.

    without this guy there would be no Emeril, or Wolfgang, or Bobby Flay. I loved this show and Yan Can Cook.

    What he said towards the end about gumbo is true for all soups and stews. You cook it today, but don't serve it today. You put it in the fridge overnight, then take it out tomorrow, heat it up slowly until it's bubbling, and then serve it. Everything will have a chance to marinate in the seasonings overnight, and will taste loads better.

    Him pouring salt into his hand, saying it's a tablespoon, and then pouring it into the tablespoon just to prove that it was indeed one full tablespoon has got to be the finest magic trick I have ever witnessed.

    Lord, I can remember watching him on PBS on the weekend as a little kid and loving it sooo much! "I GuaronTee!" This was decades before the food network. Him and Julia were the damn best!

    The most amazing thing about this is how unbelievably dark his roux is without burning it. The guy certainly knows what the hell he’d doing.

    OMG !! How wonderful someone brought back up his cooking episodes. My late grandmother used to watch his shows religiously. Not for the cooking. Just to hear him talk. She used to tell me if you ever want to know how my family and I spoke before we went to school all you have to do is listen to Justin (Wilson). My older family member's were born and raised near Red River, LA. So, they would have been very familiar with people speaking this way.

    I was born in 1997 so this is probably before my time but I love watching Justin. He’s like the bob ross of cooking.

    I miss this show! I think I got introduced to it because one Saturday, all of the Saturday morning cartoons had gone off and we didn’t have cable. Lol

    The Louisiana accent and culture remind me so much of the Caribbean, specifically Trinidad where I am from. The French influence that we both have in our cultures binds us <3

    I went to LSU in the early 70's, and I used to watch his show, just to hear him talk. He was a great chef; but also had a touch of comedy. Definitely a big fan of Justin. I guarontee ! I'm hungry just watching this episode !

    Such a legend! So heartfelt and passionate about cooking, and a great storyteller and humorist. They don’t make them like this anymore.

    One of my favorite's Before "Food Network" and all their crazy shows.. "RIP" Justin Wilson, life was so much easier when you were around....
