Whiskey Peach Smash A Summer Staple If There Ever Was One!

- I really haven't covered that many Dale Degroff cocktails on this channel and really it's scandalous. I should do more of them. Thing is, that although I don't share very much by way of cocktail aesthetics with Mr. DeGroff, he is without a doubt the father of the cocktail renaissance. Maybe not single handedly but it's no mistake that many of the young bartenders finding their way in the 90's and early aughts seeked out, took inspiration from or were directly mentored by Mr. DeGroff. He was the smart smart guy that figured out that maybe he should take a page from bartenders of the past and serve his drinks with fresh ingredients, shirking the overly produced, overly sweet mixers of the time. I'm lookin' at you Rose's!
The Whiskey Peach Smash was created by DeGroff in the late 1980's and is a cousin of the Mint Julep, so this drink is refreshing but it is not sweet, it's actually pretty dry. The only sweetness you're getting is from the peach so make sure you use a ripe one. That said if you wanted to add a teaspoon of simple syrup to give it a little sweetness, I don't think anyone would think any less of you. Been having this over a big rock of clear ice instead of pebbled/crushed ice and it always hits the spot on hot days. Was subbing in Triple Sec for Curacao and it was still fantastic, much prefer it with the curacao though.

Love this one as you can change the peach for another stone fruit (plums, nectarine, apricot etc) for a great cocktail. 😋

Delicious cocktail!! Just downed my second one in less than an hour. Only thing is when I made mine it was almost syrupy coming out of the shaker. It was a little difficult to double strain. Think it comes from too much muddling? Fantastic drink though!
I happened to have a perfectly ripe peach and made this just now. Surprised by how much more mint than peach. very nice, used WT101 and Cointreau.
and then I had lemon-peach ice, perfect to pour some WT101 to freshen the drink. don't want to waste the crushed ice I made
How much lemon juice would you estimate for 4 lemon wedges? It gets a little crowded in the glass when I want to make it a double. Then is was more lemony than you probably would want. Thanks you are the best bar channel.

According to Leandro the more appropriate sub is Grand Marnier, though I've found I have to reduce any sweetener when using it.

Little FYI-Lemmy owned a cheap apartment on sunset strip, he would never give it up because of its close proximity to the Rainbow. In his final days, the owner of the Rainbow took his favorite poker machine and set it up in his bedroom, he was an icon there.

Can you use cointreau if you do not have dry curacau?
Yes you can but you May need to add a little simple syrup for balance maybe like a teaspoon or so

Grand Marnier is much closer to curaçao so yeah it’s a better sub for sure

What is the difference between bonded bourban and normal bourbon? I see Old Grand-Dad is 100 proof, is there any other difference?

It has to be 100 proof, 4 years old, from one growing season and from a single distillery aaaand is aged under government supervision

Would you be willing to try my cocktail "Sour Faced Monk". It utilizes some not so common ingredients.
1.25 oz Bénédictine
0.75 oz Chartreuse (pref. Green)
1 oz. Lemon Juice
0.5 oz. Orgeat Syrup
2 dashes Peychaud's Bitters
1 Egg White
Shake with ice until frothy
Serve in coupe
Lemon twist garnish

I'm gonna sound condescending here, but LA people don't know what heat is. SoCal weather is so easy year round. The high temperatures in LA all this week are below 80 and even here in Kansas City, which is not a hot city imo, it's been above 90 every day in June. -.-
