      @@CBrown-zu6jf I'd argue in most cases of it works for you, it's correct. I tend to stick to level 2-Chef habits but that doesn't stop me from being lazy and hit up a level 1 habit sometimes just to quickly get something done, yknow? It does the trick.

      In Greek & Caribbean cuisine, anything with cream also has nutmeg. It's a savory ingredient, whereas in the States, many traditionally use nutmeg in sweet holiday desserts like pumpkin pie or to mull cider.

    Level 2 and Level 3 are clearly fancier, but this might be the best Level 1 of any Epicurious video I've seen. Usually Level 1s commit some kind of culinary crime, especially in Italian cooking, but Steven did a great job

    Level 1 chef: Yea I usually use store-bought I aint paying 23 bucks for Alfredo
    Level 2 chef: I use fresh pasta and homemade sauce Yummy!

    * Before time I asked by great father God to specifically birth a country named Italy, after that I got in tact with the rular a t the time and and told them about my decent culinary experience and I was given the Italian kingdom from then I traveled the world until I could sucessfully find grains because you know me I like to mill my own flour so then I made a language which I communicated to the people after that I waited months for the perfect grain so I could mill my own flour and not being the cheap person I am I made my own miller and asked a fellow co worker of mine nikola Tesla so he could invest such a product after that I sucseffullly got the most fine flour in the universe, but then I asked my self what about water so I traveled to see Posiden which assited me along the way of my perfect h20 journey and I tatsed every square inch of water so I could taste the best water and bought exactly 2 cups you know just in case I need more, although my journey made me broke I had invested in a stock market which gave me great wealth to then buy my own country. Before this I also asked myself "what about seasoning"? so I went to the Himalayas to specifically get the finest salt and counted every millimeter to the precise amount which I rode my dragon and freed thousands along the way back to my country. But then I had forgotten that I needed something to cook with so I made my own steel pan and boiler from cavemen who first invented fire. Although I had everything I couldn't forget the cheese so I harvested many cattle and even revived a wooly mammoth for what they call "milk". I of course raised thousands perhaps millions until I found ten amino animals. This is were I fermented my milk at the time of the fermentation I fought in Rome competing for clothes money and other things when I finished fighting those pesky gladiators and hopped into my dragon and rode of grabbed my "cheese" and started performing my culinary arts. But my goal was not perfect thy weather was not great so I asked my fellow crewmate, Zeus, to make the precise weather to where I cooked and made my pasta. I used my leftover milk to make the cream and then made butter using thy cream and churned it in a fashion where it turned into "butter". For my garnish, I went back in time to the 3000 BC Babylonians to purloin some truffle. I was like a mad chemist with my culinary ways then I finished It took me 400 years to make but so be it I have accomplished my journey and finished my Fettuccine Alfredo. Some call me crazy but I say I am a hero.*

    Hahaha I feel like all 3 levels bring something really nice to the video. Level 1 is the most relatable for us high school and college students who just throw store bought stuff together. Level 2 isn't a professional, they are there because they have loved food all their lives so watching them is like watching someone who is a master at a hobby. And then the pros are just there to hard flex their batshit crazy recipes

I only ever worked at one place that made Alfredo the right way. The type of place that charged $21 for a plate of plain Alfredo in 1989.

      So what is the difference in cooking skill between the two that makes him a level one and Julie a level two?
      If he'd used a store bought fresh pasta is there any reason to believe that his pasta won't be as good or better than Julie's? Cause that does seem to be the only major difference.

      First there is the technique, he obviously doesn't know what is supposed to be in fettuccini alfredo (i'm all for the ''cooking as you like and changing the recipe'' idea btw). Why does he put brocoli, mushroom, garlic and spinach ? Bringing me to my second point : knowing what spices, what vegetable, what meat goes with each other. The basic garlic/onion + oil des not work with everything. He prepared a basic pasta dish (probably really tasty) but without complexity in texture, in flavor (acidity, fatness, cheeseness). What make a good dish is not only the flavor, it's a combination of a variety of different parameters.

      he was talking about the pasta themselves not the complete reciepe (it's just an egg for 100g of flour). I make fresh pasta once a week, fettucine, ravioli or lasagna, and it take less time too make the fresh pasta and cook them than to use store pasta. It's more work, but cooking should be a nice experience, and it's really better that way.
