Serves 5-6 persons
Greek Bougatsa - Creamy custard pie with pastry is an amazing traditional Greek dessert, perfect for breakfast or for any time of the day, as a delicious snack or as a filling dessert. It is made with creamy custard wrapped in golden crispy pastry. After being baked, it is cut into serving pieces, garnished with icing sugar and cinnamon and served hot. Simply amazing! Originally founded in the Macedonian city of Serres, it is loved in all of Northern Greece where you can also find other varieties of Bougatsa with filling made of cheese or minced meat. The creamy custard variety is suitable for lacto-ovo vegetarians.
Ingredients:
220 gr. / 8 oz thick country Pastry (Politiko or altern. 250 gr. / 9 oz phyllo or puff pastry)
100 gr. / 3.5 oz / 0.6 cup fine Semolina
750 ml. or 3 cups fresh Milk
150 gr. / 5.5 oz / 0.7 cup Sugar
2 Eggs
25 gr. / 1 oz / 4 tbsp. Icing Sugar
1 tsp. Ground Cinnamon
70 gr. / 2.5 oz Butter
8 gr. or 2 tsp. Vanilla Sugar (essence)
A pie/round dish of 25 cm/ 10 in
Mπουγάτσα (γλυκιά)
Σερβίρει 5-6 άτομα
Η Μπουγάτσα είναι ένα παραδοσιακό ελληνικό γλυκό, ιδανικό για πρωινό ή για οποιαδήποτε στιγμή της ημέρας, σαν νόστιμο σνακ ή επιδόρπιο. Είναι φτιαγμένο με κρεμώδη γέμιση τυλιγμένη σε χρυσή τραγανή ζύμη. Μετά το ψήσιμο, κόβεται σε κομμάτια, γαρνίρεται με ζάχαρη άχνη και κανέλα και σερβίρεται πάντα ζεστή. Απλά καταπληκτική! Αρχικά φτιάχτηκε στη μακεδονική πόλη των Σερρών, αγαπήθηκε σε όλη τη Βόρεια Ελλάδα όπου μπορείτε να βρείτε και άλλες ποικιλίες Μπουγάτσας όπως αλμυρές με γέμιση από τυρί ή κιμά. Η γλυκιά Μπουγάτσα που παρουσιάζω εδώ είναι κατάλληλη για χορτοφάγους!
Υλικά:
220 γρ. / 8 oz χοντρό φύλλο (πολίτικο ή εναλλακτικά 250 γρ. / 9 oz φύλλο κρούστας ή χωριάτικο φύλλο)
100 γρ. / 3,5 oz / 0,6 φλ. Σιμιγδάλι ψιλό
750 ml. ή 3 φλ. φρέσκο Γάλα
150 γρ. / 5,5 oz / 0,7 φλ. Ζάχαρη
2 Αυγά
25 γρ. / 1 oz / 4 κ.σ. Ζάχαρη άχνη
1 κ.γ. Κανέλα
70 γρ. / 2,5 oz Βούτυρο
8 γρ. ή 2 κ.γ. ΄Αρωμα Βανίλιας

The best bougatsa I ever tasted was in Ioannina, NW Greece. Many-many years ago, but I remember the taste as if it was yesterday. They made the phyllo in house, and they called it "crema" there, instead of bougatsa.

What I found interesting is that a song played as cover in this video is old serbian song played on greek instruments. This is a song called "Vranjanka" ( Vranje is a city in south Serbia, and Vranjanka is a name for a woman who is from that city). It is very old traditional serbian song....should find it in the original by singer Stanisa Stosic.

@@GreekCookingMadeEasy it is one of my family all time favorites. As a woman in the song is called Yellena (we write as Jelena) or you would say Helena, my sister was nemed after it. Would recognize that mellody played on kukulele even :)

What is the difference between this and galadoboureko? is it just no syrup on this one? this does look absolutely delicious ... as your food always does
Chris P Not a big difference in the custard. Galaktoboureko needs more eggs, butter and milk because the custard is thicker! And of course the syrup. Thank you very much for the nice comment 🖒!

The phyllo used for bougatsa is also more elastic when handmade.
If I make it in advance, lets say the evening before, then I can just warm it up before eating in the morning? would you suggest oven or micro?
Yes you definitely can do that! Store it in the fridge (without adding the icing sugar and cinnamon). In the morning, warm it up in the oven, most preferably!!

Is that just one pastry layer on the bottom?
Yes, if you use the thick phyllo like I did. You can also see it on my video. I just add in between some overhanging phyllo sheets. However, in case you decide to use the thin phyllo pastry you should divide the sheets in half. Use half at the bottom and half at the top of the custard.

Είναι καλή η ερώτηση. Εκτός του σιροπιού βεβαίως, η διαφορά είναι μικρή και είναι μόνο στη γέμιση/κρέμα. Της μπουγάτσας είναι πιο συμπαγής και πυκνή, του γαλακτομπούρεκου πιο αφράτη, με περισσότερα αυγά. Δείτε τη διαφορά στα υλικά γέμισης πιο κάτω:
Γαλακτομπούρεκο υλικά γέμισης:
1 lt. ή 4 φλιτζάνια φρέσκο γάλα
40 γρ. / 1,4 oz βούτυρο ή μαργαρίνη
5 αυγά σε θερμοκρασία δωματίου.
150 γρ. / 5,5 oz / περίπου 1 φλιτζάνι σιμιγδάλι ψιλό
400 γρ. / 14 oz / 1,8 φλιτζάνια ζάχαρη
15 γρ. ή 1 κουταλιά της σούπας σκόνη βανίλιας
Μπουγάτσα υλικά κρέμας:
750 ml. ή 3 φλιτζάνια φρέσκο γάλα
70 γρ. / 2,5 oz Βούτυρο
2 αυγα
100 γρ. / 3,5 oz / 0,6 φλ. Σιμιγδάλι ψιλό

nai, dokoimaseto ke tha deis.... h diafora einai pos otan koboume tin bougatsa theloume to migma na bgeni ligaki, k an prosthetoume auga to migma mazebete (it's get it more stiff)... :-)
