OMG Akis, this was such a hit....my cousins came to visit (BTW, their mom who's an amazing Greek bakery/cook has spoiled them all their lives) and I made this for them, AND WELL they loved it!!!! I didn't have time to take a picture to share with you. Everyone dove in! And it was a hit on my very first attempt. Thank you always for your entertaining and informative way of teaching and sharing your recipes.

@@MyronKapetanakis I didnt know that! First time I've seen him was when he presented a (great!) Recipe over at Jamie Oliver's channel a few years ago. :) Alas, having an own little slot on TV is quite impressive imo.

If you look more carefully you will see that in reality he just corrected something at the phyllo. He really did not touch the whole phyllo...
i had the same thought but then I figured he's telling the "novice cookers / viewers" to not touch it, but wasn't telling himself -- the pro feta-cheese baker -- not to touch it. One never knows with Akis' cutesy accent. 😂

I've been in marketing and branding for over 30 years and I love what you've done with your Brand. That of course is second to how much I love your recipes and moreover, how much my Mom loves them. Mind you she is a 77 year old woman that has successfully cooked just about every meal in the Greek Cuisine and considers you "A Greek God of the Kitchen" (go ahead, you can use that, lol). So I just want to say "BRAVO", not just for your Branding accomplishments, but for making my Mom an even better cook than she already was. Hope you come to New York some day and do a live show, I would love to take her to come see you.

I like the technique of the scrunched up layers of phyllo. Could be used in other recipes.
I do the scrunched up layers in my spanikopita and baklava, too. It’s one of the secrets of making it super crispy. :)

Awesome! When I was in Bulgaria I had "banitsa" which was very similar to this pie. A little less creamy maybe, but still very delicious. I will definitely try to make your Greek version.
Bulgarian banitsas vary depending on who makes them :)

I am so envious of his bilingual status. Wish my Greek were as good as his English!! He is charming too! So cute that in Greek they don't have the sounds "ch" so "cheese is "tseez" or "" like "judge" so it becomes dzudz. Adorable!!!!
When my friends come over, about half the time I make tiropita. But I use the frozen one from the store which is good, but nowhere near tiropita from the bakeries in Greece. Since your recipe is very simple, and fast, I will definitely make a real tiropita next time :)

one of my favourite starters, but we have small ones
My dad and I just made this and I must have done the béchamel sauce wrong because it was too runny (and I hadn't even used all the milk). I thickened it up a little bit with some more flour and it seemed okay (even though my dad said that it wasn't going to work). I added the 2 cheeses, spices, and egg yolks and it seemed perfect. Baked it for 60 minutes and it was lovely and golden brown on top! Cut into it and it was soup on the inside. Boo hoo. I will try again but have to go get more ingredients first. But you should smell the wonderful aroma in the house!!!
usually make my own xoriatiko filo...but am going to give this method a try....as soon as l get back from buying the ingredients at AB ....Pangrati Athens...

The Greek food look like Egyption Food . We have same this Pie In Egypt with Minced meat, tomatoes, green peppers, Kalamata olives and mozzarella cheese but Without béchamel
This looks magnificent. I want to recreate a cheese bougatsa I had in Thessaloniki several years ago and is still vivid in my mind. Comparing this with the bougatsa and aside from sweet vs savory, is this the same concept for making the bougatsa? The one I had was not the common vainilla cream filling. It was more like a super delicious creamy sweet, cheesy filling.

Hi Akis. Can i ask why you add nutmeg in the tyropita? Is this what they use in the delicious tyropites you get from the bakeries in greece? And do they use home made phyllo or store bought? Love your recipes. Just was curious.

First of all thank you for all delicious recepies that you showed to us, I really enjoy them!
As for this 'fetta cheese pie' the amount of filling and bechamel for my tase was terribly to much: 1 Liter of milk+500g fetta cheese+150 gruyere cheese+flour+butter+eggs... I would really reduce it in half of this amount or even more.
If possible I would like to know your opinion? Thanks! 👍
