- Visiting a night market and searching out new and delicious street foods has to be one of the most fun things to ever do when you visit South East Asia. I love having my friends Brock and Caleb here in Chiang Mai right now, and we are doing our best to search out some round-the-clock wonderful spots for Thai food to share (first together, and then share them in these videos with you!).
It is a noodle-lovers party-time pretty much EVERY night in the downtown areas of Thailand's largest cities... but for me, in Chiang Mai anyways, it does not get any better than this row of brightly lit street carts parked behind this local fire station.
Santitam is well known among tourists, as is the next-door area of the Old City, and yet sandwiched right between these two places is a small yet bustling area of street carts (PILED with street food delights!) where I never see many tourists sitting...
You can hear Li tell a quick story of how we first found this place, but TODAY I am just SO glad that they are still continuing their business. Tonight's visit to Jae Muay was wonderful, and I hope you love the GIANT bowls of noodles we all share here together.

A wonderful mix of meats and seafood, looks amazing. I was thinking of you yesterday; one supply chain issue has been resolved at my local market and they had Khao Soi egg noodles in stock and they had crushed chilies from Bangkok that have the exact texture of the fried Burmese chili from your last vid. Now I just need to figure out how to make fried chili paste instead of hot oil. I also picked up a package of Asian pickled mustard greens. Almost ready to make to home made Khao Soi. Blessing to both of you and your friends.

Hi Everyone 👋🤗 fun video to watch as always and the food looks fantastic! Especially the seafood noodles with so much broth yum! I eat way more fish and seafood than other meats. I was pescatarian for a very long time. Hard pass on the pork blood and bits though. I make pork liver for my pets as a treat and even the smell makes me feel a bit green. I will however absolutely eat pork spine. Most meat is best best near the bones including fish! I had an extremely strange breakfast since my eating schedule has been way off lately. Walked to the shop this morning and past KFC. Since I don't eat chicken I decided to have a trip down memory lane and got myself mash and gravy with extra gravy like I did as a child. Had 6 passion fruit when I got home 🤣. I think I may curdle with the creamy mash and acidic passion fruit but enjoyed it either way. Been eating Avocado the past week and garden tomatoes and little else so was a step up. Have a beautiful blessed day ❤️🙏🤗

Yes the spine does taste like rib meat, it has that same ultra meaty sinewy yet soft texture and really sticks to the bones

What’s the diff between Sen Lai and Kwai tui? My apologies for my spelling.
Al Lim! Great to see you, good question today. These are two different dishes, different recipes, whichever way you want to think about it, but of course if you order specifically you can tell the chef to make your bowl of noodles anyway you want. Going with the ingredients they have of course. “SenYai” is the wide white rice noodle, it’s just that one type, while ‘KuayTiao’ simply means “Noodle” in Thai, so I can’t even really define that one anyways :-) as there are so many different versions.

Our Tay Zhuang singer was famous in Chiangmai radio, his name is khaoniaoข้าวเหนียว (in Tay Zhuang language) . Tay Zhuang people isn’t Chinese, but they were the old culture before Chinese. Chinese’s history from Qin Dynasty about more than two thousand years, Qin(Chinese Chin) burning old books and burying good scholars . If Thai people ask me where are you from, I can say I am Tai Zhuang, they would like me as binungh ( ปี่น้องsibling). Update the CZcams channel we can say long(ลง) in our Tai race language traditional grammar , but not song(ส่ง). For instance ลงมือ ( let start) ลงแรง ( hard work), ส่ง was used in others way.
