    Thank you for sharing this video. I am tempted to learn how to do this. But I wonder if the icing made with raw Canadian eggs will be safe to eat. Here in Canada, they always warn people to avoid eating raw eggs to avoid getting salmonella poisoning.

      Hi, we hear this in the USA too. If eggs are handled safely, they shouldn't be risky. Raw eggs have been used in recipes (Tiramisu, spagetti carbonara, icing...) for centuries. However, if you have any concerns at all, you can use pasteurized egg whites from the grocery store. Or meringue powder and water can also substitute the egg whites. Pick the method which works best for you. I was demonstrating the old traditional recipe, but all substitutes work just as good.
