- This Butterscotch Pie recipe comes from Taste of Home magazine. I had never even tried butterscotch pie before, much less made it, but when I came across this recipe I knew I had to try it. I ADORE BUTTERSCOTCH! You can't find it anymore. I used to love to get Butterscotch Milkshakes from Baskin Robins but then they did away with the butterscotch syrup. Butterscotch used to be available all over the place but then the confectionary powers that be ruined it by ditching butterscotch for "salted caramel", which, let's face it, is just a poor excuse for butterscotch.

They make rings for different size pie to keep the edges from burning. I have thought about buying some over the years but never have, probably a good sign I don`t really need them. I make my own pie crust because I think they taste better. I have never made a Butterscotch Pie, the only pies I make are sweet potato, apple, cherry, and egg custard. I don`t make many of them anymore because I can`t eat sweets and there isn`t anyone to eat them except on special occasions. Please don`t be concerned about what you perceive people will think. Anyone watching your channel is down to earth, meat and potatoes, food for the soul, people, no picky snobs here. I love your channel, and your real life, take it as it is, style of cooking, and the fact we are almost neighbors, living in the same State just makes it special. You're so kind! You know, I have had one of those pie rings before, but I think it was the wrong size for pretty much every pie I made so I threw it out! Now if I do need to protect the edges of my pie, I just put some aluminum foil around the edge. That's how I learned to do it when I was growing up. I certainly understand you not making pies if you need to watch your sugar and you sure don't want to have a bunch of sweets around if no one is going to be eating them. I make butterscotch pies often. I never cook on the stove. Put all ingredients for the pudding part except the vanilla in your microwave oven. Stir every few minutes till thick. I do all my puddings that way. Also I roll out my packaged pie crusts a bit to fit my pie dishes better. My daughter is having a birthday meal for me today. I am taking candied sweet potatoes, deviled eggs and pumpkin pie. I am 88 years old.

Your butterscotch pie looked delicious, and I bet it tasted delicious too. Unfortunately, I won't be making the pie as I am now by myself, and I don't want to eat the entire pie. Also I am trying to lose a few kilograms after putting on a little weight over the winter months. it would be nice to have a piece of pie though. Instead of putting the meringue on top could you have whipped cream as I think that would be nice?

I totally understand about wanting to watch what you eat and I agree it doesn't make sense to have a whole pie sitting around for you to eat by yourself! I think your suggestion about whipped cream on top would be just fine! I know a lot of folks do that with chocolate pie -- instead of meringue they use whipped cream. One fellow in the comments suggested whipped cream with dark chocolate shavings. That sounds good! God bless you, sweet friend!

I'm 58 and I've never heard that about metal pie pans and metal knives 🤔
I suppose if you have the junky tins that premade pies come in, it would be easy to puncture the bottom.
Here's a novel common sense idea, don't stab it and don't get overly rambunctious cutting into it!

Oh I use Monk fruit instead of sugar, it's a little pricey, I have diabetes so to enjoy some good stuff at special times I have to adjust ingredients.

I'm laughing, I fold these same store bought pie crust and roll it to inner edge of pan, then I use a fork to crimp it on edge of pie pan. I never been a baker, my daughter is but shes in NC. I'm only one that eats butterscotch, so I'll be eating this on my own, add 5lbs to my butt, lol!!! I do same thing serving....filling is best thing...I make ugly pies unless I buy frozen!
Haha that's exactly what I do with my pie crusts - the old crimp-it-with-a-fork trick! But the instructions said to "flute the edge" so... well... I tried. 🤣 Anyway, it made no difference to the taste of this pie. It was pure gold even with it's less-than-perfect crust! What's with the young folks today not liking butterscotch? I've now found out my brother and sister-in-law aren't butterscotch fans, and my son said he'd rather that I just make an Atlantic Beach Pie, which I'd never typically make for Thanksgiving, but I may make him one tonight just since he asked. It may be just my mom and I eating this pie over the next couple of days. It's so good though!
