How to Make the Clarified Negroni

    Today on Booze On The Rocks I show you how to make the Clarified Negroni. It's Negroni week and I decided to make a clarified Negroni. Milk clarification is simple and easy. The bitterness from the Campari is lessened and the vermouth and gin bring everything together. The milk curds clear everything nicely and removes the excess tannins.

    CLARIFIED NEGRONI
    1.5 oz/45 ml Gin
    1.5 oz/45 ml Sweet Vermouth
    1.5 oz/45 ml Campari
    1 oz/30 ml Milk 2%
    Method
    1. Add first three ingredients to mixing glass.
    2. Stir with ice for 30 seconds.
    2. Pour milk into separate glass.
    3. Slowly pour Alcohol into milk in a circular motion.
    4. Filter contents through a coffee filter.
    5. After first 25% empty glass back into original mixture and filter entire contents.

    This is a Negroni Variation. It takes a bit longer to make, but its worth the wait. Round subtle flavor and it looks great!!! Whats your favorite Variation?

      Try it. It takes awhile to get used to the bitterness, but once you do, it WILL be one your favs!!!!

    I just saw it was Negroni Week. I had no idea. I made mine way too soon. lol 1hour of Vermouth, hmm? lol Good looking drink, but I can't wait an hour. Cheers my friend.

      You got that right an hour of vermouth. this is really good. If you make a big batch then when you come back you will have multiple drinks. :)

    I haven't experimented with milk clarification, but it really looks fun! Considering the Negroni week, let's see if we got some drinks ideas in common. Really enjoyed the video. Wish to have the similar confidence in front of the camera. :@) Cheers!

    Looks like a great drink I just wish I didn't take so long to make. I wonder if using a cheese cloth would speed up the process.

      Its really good. you could try the cheese cloth you might have to strain it a couple of times.

    Why not clarify before you ice it? Do you need the dilution before clarifying? Very weird.

      You don't have to dilute it first. You can clarify it first than dilute it. I chose to do it this way so that you could see the difference between the full Negroni and the clarified one.

    Something tells me I won’t be able to do the #62ndCocktailChallenge with this bad boy. However the Negroni is one of my Top 3 sippers. Would regular whole milk work? 🥃

    I find clarifying takes the edge of a negroni and makes a much better drink (Campari is too bitter for me)

    Nice bro! Why do You not use lemon ir grapefruit juice?

      That is a good question. I did not need the acidity from the citrus as the combined alcohol has a high enough acidity level to make the milk solids separate. As long as your high enough acidity, when you add it to the milk it drops the PH level and begins to seperate.

    Dauym man! Although your upper left corner mentions 45ml of golden rum (oops :D), you really pimped up your game here, great job! Gotta admit, as soon as I get my hands on some Campari (ordered already)...this is on my list. I've never done clarified drinks before so it will be a mystery for myself!

      That you for letting me know. I wish I could fix that now. Oh well.. The clarifying process something I wanted to try just for fun and it does something interesting to the cocktails that I have tried so far. I think you will like it.

    If someone is allergic to dairy, would this be okay to consume?

      That is a good question. If you are are allergic to dairy I would not drink this version as there is milk casine in it. But if you use a different method, like agar clarification, then it would be okay.

    Can lactose-intolerant people drink milk washed cocktails? Oh and so lemon is not required, am I right? Cause you didn't use it

      There is no lemon required. However when it comes to lactose intolerance the sugars that a person is intolerant off are still there. You could however use Agar or Gelatin. I have not tried either of those yet. And I will make a point of doing it. Thank you for the question.

      In This case no. The acidity is high enough as this is straight alcohol. But you could use some if you would like.
